Chai Oatcakes for One

Let me preface by acknowledging that “chai” is Indian for “tea” (or something like that). So when we Americans order a chai tea, we are ordering a “tea tea.” And when we post recipes for “chai oatcakes,” we are simply saying “tea oatcakes.” What we Americans consider “chai” is officially named “Masala chai.”

AKA don’t bother telling me that the name of these oatcakes are nonsensical. I’m just speaking American. [insert American flag and peace sign emojis here]

Okay, now for the more important info: these oatcakes are wonderful. It is incredible how well zucchini fluffs up oatcakes. Look at the top one in the picture! So thick and fluffy!

I’m usually pretty so-so about my chai recipes, but this one is my favorite. The punch of the chai spices were perfect for these oatcakes, and a drizzle of maple syrup on top was all it needed to taste like a million dollars. (What a stupid simile. I bet a million dollars taste pretty dirty and bland.)

Yellow Cake Baked Oatmeal with Chocolate PB2 Frosting

Did you know that they only real difference between yellow cake and a regular “white” cake is just the use of egg yolks? My mom is a cake decorator (in addition to her full-time job as my best friend an accountant), so I’ve seen her make many a white cake. I remember her telling me once that the recipe used only egg whites because the yolk would turn the cake yellow…so I guess it makes sense that a yellow cake uses the whole egg.

Thus, when I decided I wanted to make this recipe, it left me puzzled. How would I recreate it without eggs (not vegan) or food coloring (too many chemicals)? And how could I make it without it tasting like bananas?

Tiramisu Oatcakes for One

You know my oatcakes always feature some sort of fruit or veggie, whether it’s mashed banana, pureed peaches, apple butter, or pureed beets.Can you guess the produce packed into this one?

It’s zucchini! Now, I have experimented with using zucchini in the past, but it has often failed to serve the purpose I needed it for. I usually want it to be a “tasteless filler” in an otherwise “nutrition-less” recipe (see: any cookie recipe). However, it never worked as nicely as I would have liked. Just recently, I used it to make a brilliant recipe (you will just have to wait until I “nail it” to see what it is!), but I could taste the zucchini. As low in flavor as it is, it does leave some sort of flavor, particularly when paired with cinnamon, as it was in that recipe. (more…)


Cranberry Brownie Baked Oatmeal

I need to go back to all my chocolate baked oatmeals and redo them. I need to fix them knowing what I know now. I must improve them…ASAP…because I now know the secret to a banana-less, applesauce-less baked oatmeal.

It’s avocado. AVOCADO! Duh! Why didn’t I think of that earlier? Avocado is used all the time as a replacement for butter and eggs in vegan baking. Ugh! I could have saved myself from so many unnecessary banana flavors.

This trick worked like a charm for this recipe. I was too lazy to drag out my food processor, so I just mashed the heck out of this avocado and mixed it by hand with the other ingredients. Before adding the oats and cranberries, I tasted the chocolate-avocado mixture…and it’s like PUDDING. It reminded me of the dairy-free pudding I often make when I have avocado to use up…but without the banana!

Chocolate Zucchini Baked Oatmeal

It’s been quite a long time since I’ve shared a recipe for baked oatmeal. I devoted most of July to stove-top recipes and had little ambition for heating up the oven.

I made an exception for this recipe. I came in possession of a zucchini from the farmers’ market in my hometown before I left for New York, and I knew I had to attempt this recipe. I don’t buy zucchinis often, so it was now or never.

Morning Glory Oatmeal

You guys, the worst thing ever happened. I came up with this amazing idea for a baked oatmeal, only to discover that somebody else beat me to it by a matter of days. Days!! Bummer. I literally said to my mother, “I have this idea for oatmeal using zucchini, carrots, and apple,” and two hours later, I stumbled on Oatgasm’s post on Foodgawker. I was distraught!

On the other hand, I was able to use Oatgasm’s recipe to help create my own version, especially when it came to the spices. I’ve never personally experienced a Morning Glory Muffin, so I appreciated the assistance. However, I did do some tweaking to meet my preferences (like how I never have applesauce on hand). And, since Oatgasm mastered the baked version, I decided to bring you the stove-top version. Want it baked? Go to her. Want it on the stove? I gotcha covered.
