Brownie Baked Oatmeal with Matcha Cashew Frosting
Another brownie recipe, Lauren? Really?
On second thought, I doubt you guys mind. š
Half a year ago, I finally bought some matcha powder online. Truthfully, Iām not the worldās biggest fan of matcha. I think it needs a lot of sweetener to taste good, and as you know, my digestive system canāt handle sweets. However, after spending all that money on it, and then seeing it camp out in the back of my cupboard for months, I felt guilty. I needed to make another recipe with it, or it was going to keep haunting me.
But what would I make?!
Tres Leches Baked Oatmeal Parfait (with Cashew-Yogurt Cream)
Consider this more an homage to the real deal. Actual tres leches cake involves a ton of dairy ingredients that is elusive to us humble vegans. I know there are recipes for vegan sweetened condensed milk out there, but my motto is always simplicity. Considering I already had to soak cashews for this recipe, Iām not about to make a sweetened condensed plant-basedĀ milk as well. I HAVE MY LIMITS. š
I considered making this just a regular baked oatmeal with the cashew-yogurt cream on top, but I decided it would be more fun to make it as a parfait. Thatās an excuse for more cream and stuff. š (moreā¦)

Cannoli Baked Oatmeal (with Cashew-Yogurt Cream)
Let me introduce my latest love: cashew-yogurt cream.
Why? Because yogurt has a very distinct taste. Itās excellent if you want yogurt. Itās not excellent if you just want something creamy. And when weāre talking about nondairy yogurt, that can be triple true.
And cashew cream is never what I want it to be. I can never get it creamy enough, or sweet enough, or simply without that ~raw cashew~ aftertaste.
Cue the cashew-yogurt hybrid.
Considering how long I pondered over this recipe, I was stunned at how well this turned out. Of course, it is not the beautiful deep-fried, thin, crispy pastry tube, which is half the appeal of the beloved cannoli. There is no way that baked oatmeal will ever replicate crispy, deep-fried pastry. But itās irrelevant . . . because this is delicious. (moreā¦)

Baklava Oatmeal 2.0
Hey. I have a confession. Sometimes I make oatmeal. And it tastes good. But itās not perfection.
Such was the case with my Baklava Oatmeal two years ago (good grief, where has time gone?). It was delicious. Simply stunning. But it also tasted like banana. And I knew that it shouldnāt. But I didnāt know what else to do. So I posted it. After all, itĀ wasĀ delicious.
The same was true with my original Salted Brownie Baked Oatmeal. It was good, but it tasted like banana. And it shouldnāt. No brownie should taste like banana. But eventually, I figured things out, and remade it, sans banana.
So here is my new and improved Baklava Oatmeal, for now I know the power of the zucchini. (moreā¦)
Scotcheroo Oatmeal
TOMORROW is my 2-year vegan anniversary (aka my vegan-versary!). To celebrate, I made this beautiful baby that Iāve been trying/failing/trying/failing/trying/failing for quite some time now. But here it is, the most successful version.
Not sure what Scotcheroos are? No worriesāyouāre not alone. I myself had much confusion regarding this title, but now I can confidently give you the low-down.
Growing up, I was familiar with two similar bars: Rice Krispy bars and Special K bars. I had never heard of a Scotcheroo. However, I eventually learned that what I was calling a āSpecial Kā bar was actually a Scotcheroo. To be a Special K bar, it has to be made with Special K cereal . . . duh. (moreā¦)
Tahini Cookie Baked Oatmeal
So tahini has been a learning experience for me. My first taste was one of . . . bewilderment. I was taken aback by its bitterness and wasnāt quite sure what to do with it. I think I made some great recipes with the mocha poached pear and raspberries and chocolate and the apple and honey. But I still wasnāt sure how I felt about tahini in general.
This baked oatmeal gave me a new appreciation for tahini. Inspired by this recipe for tahini cookies, I made a baked oatmeal similar to my Peanut Butter Cookie Baked Oatmeal, but with tahini. Would you believe that I liked it just as much? (moreā¦)
Cookies and Cream Overnight Oats [Guest Post]
TOA: Special shout out to Kelsey! She suggested making a cookies and cream overnight oatmeal, and I said her idea sounded brilliant and she should try it out herself. Being fantastic, she went to work right away and delivered this perfect recipe. I canāt wait to try it in my kitchen!

My name is Kelsey; Iām a math grad student at the University of Virginia and a major oatmeal fanatic. Before we get to the recipe, let me just say that I am so excited to be writing this guest post. Iām a big fan of the blog, so rest assured there was some major fangirling going on when Lauren brought up the possibility of writing this post.
My story is very similar to hers (digestive issues, transition to veganism, cutting out almost all added sugar, etc.), so Iāve always really related to the content on the blog. Oatmeal is one of my main creative outlets as far as food is concerned so I really love experimenting with new ingredients and flavor combos.
The newest flavor oatmeal in my life is Cookies and Cream. It plays off of Laurenās faux-reo PB2 recipe, which is basically oreo cookie butter, and employs overnight oats, my new go-to afternoon snack. (moreā¦)
Basil Chocolate Zucchini Oatmeal
Say whaaaat?
Yeah. Basil + chocolate. I went there.
Okay, sure. This isnāt for everyone. But IĀ love basil. I have a passionate love for all fresh herbs, but basil is easily my favorite. Itās been proven by the food blog community that basil pairs perfectly with sweet fruits, so why not chocolate?

Mojito Overnight Oatmeal
Once upon a time, in my blogās infancy, I made Strawberry Mojito Oatmeal. Not many are brave enough to try it. After all, it includes a little banana, yet I try to convince you itās undetectable beneath the lime and mint flavor. I stand by that claim, but this time I took a different approach.
First of all, this is an overnight recipe, so you enjoy it cold, like you would an actual mojito. Second of all, I went with grated zucchini instead of banana . . . because you guys LOVE zucchini in your oatmeal. Yes, I hear you. You love your #zoats.

London Fog Oatmeal
What is a London Fog, you ask? Hold on, Iāll get to that.
Back in college, I had the worldās best barista. Well, I had two excellent baristas, but Iām going to talk about one in particular. Her name was Noelle. We were bothĀ majoring in the humanities, so we saw each other around campus andĀ even took aĀ creative writing courseĀ together (and she was obviously brilliantĀ at it). She was one of the coolest people I knew. You know those girls whoĀ walk around confidently with their own unique fashion sense and donāt give a crap about the trends anyone else is following? But manage to pull it offĀ without looking ridiculous? That was Noelle.
