Tahini Swirl Brownie Baked Oatmeal
I probably shouldn’t be posting brownie recipes immediately after opening up a contest for brownie recipes. ? I couldn’t resist.
Is anyone else kind of obsessed with tahini? I can’t seem to get enough of it lately. I use it to make salad dressings, in smoothies, on oatmeal. All the tahini, all the time.

Rosemary Chocolate Chip Oatmeal
Last week, I gave you my Rosemary Chocolate Chip Baked Oatmeal, inspired by one of my new favorite cookies. This should show you just how much I love it (or, perhaps, how quickly I finish a bag of chocolate chips and how quickly rosemary turns into sad, dried-up needles).
Maybe a bit of both. 🙂
I guess this is kind of like the “cookie dough” version of the baked recipe. However, I didn’t use “cookie” in the title for either because 1) I hate long titles, and 2) not that many people hear “rosemary chocolate chip” and immediately think, “COOKIES!!!” Maybe someday.

Rosemary Chocolate Chip Baked Oatmeal
HOLD YOUR JUDGMENT. Hear me out.
Before you scrunch up your nose, you should know that I did not come up with this concept. It’s already a thing. Just ask Pinterest. In other words, many people have already given this baby the stamp of approval, so you have no reason not to try it.
Here’s how I discovered it. My favorite coffee shop, which I have visited over 140 times because espresso is a fundamental human need, recently began selling salted rosemary chocolate chip cookies. There are several aspects of this that grabbed my attention:
- Salted cookies are fabulous.
- Chocolate is wonderful.
- Rosemary is my Herb of the Moment.
- Mmm, cookies.
Gingerbread Persimmon Oatmeal + Product Review: BetterOats
Lately, I have been on the constant prowl for recipes that would work well with persimmon. My philosophy is this: persimmon has a muted but pleasant flavor, and pairs best with bold flavors. That is why I used this delightful fruit atop my Chai-Spiced Pumpkin Oatmeal; it contributed a calm sweetness to an otherwise “loud” oatmeal base.
Next up? Gingerbread.
I have made gingerbread oatmeal a variety of ways: with banana, with sweet potato, and with pumpkin. Truthfully, they all work beautifully, and it all depends on what “background flavor” you want in your life (i.e. just pick your favorite). Alternatively, you could use grated zucchini or yellow squash for a nutritional filler that adds no flavor. (more…)

Turtle Cheesecake Baked Oatmeal
Welp, if this isn’t a dessert oatmeal, I don’t know what is.
I told you I was going to make several variations on my Cheesecake Baked Oatmeal, did I not? Here is the first of many. I’m not sure why I decided to start with the fanciest, but I have to start somewhere, n’est-ce pas? I would argue, however, that turtle cheesecake is one of the more popular variations on the popular dessert.

Maple Chestnut Oatmeal
Truthfully, this recipe began as Chestnut Praline Oatmeal. I was going to use my beloved vegan caramel-flavored agave syrup. But then I looked up what praline actually was, and I backed down from that quest.
Since I like the flavor of maple syrup better, I decided to go in a different direction (but still inspired by chestnut praline). In other words, if you swap caramel sauce for the maple syrup, you will essentially have a cheater version of chestnut praline. But I recommend the maple version. 🙂 (more…)
Cowboy Cookie Baked Oatmeal
I get unreasonably excited every time I put out a new cookie oatmeal. This is one I have wanted to make for quite a while. Actually, I first wanted to make a monster cookie baked oatmeal, but that would require the use of M&Ms, and then I would have to splurge on vegan M&Ms, and I just wasn’t ready to spend my money on that. Just as I feel about vegan marshmallows. Maybe someday.
As much as I imagined myself making this, I wasn’t 100 percent sure what actually goes into a cowboy cookie. Truthfully, I’m not sure if I’ve ever even had one. All I knew is that there were nuts and chocolate involved.

Eggnog Oatmeal with Apple-Cranberry-Chestnut Compote
This is actually two recipes in one. The Eggnog Oatmeal could be eaten alone or topped with anything, and the Apple-Cranberry-Chestnut Compote could be added to any oatmeal you want! I just chose to pair them together.
Although I have made an oatmeal with eggnog before (in overnight form), I wanted to try it again in a new way. In particular, I wanted to try it with zucchini. 🙂
You could use any eggnog for this, storebought or homemade. I used SoDelicious coconut eggnog (this is not a sponsored post). I like to use coconut-based eggnog because coconut is the richest of the plant-based milks. I can’t imagine drinking eggnog made from rice milk or almond milk since eggnog is supposed to be thick and rich and creamy. But to be fair, I have never even tried rice- or almond-based eggnogs. Maybe they’re amazing. I don’t know and I probably never will. 🙂 (more…)
Cardamom Vanilla Zucchini Oatmeal
This may look and sound like a simple recipe, and preparation-wise, it is. However, taste-wise . . . it is anything but.
For anyone who loves cardamom, this recipe offers something incredibly satisfying: warm porridge with unadulterated cardamom flavor. Considering the power of cardamom, this recipe, despite the neutrality of vanilla and zucchini, is anything but boring.
When I was making it, I originally conceived it as a simple base. To some extent, it is: you really can put a variety of toppings on this. For example, in these pictures I topped it with dried cranberries, walnut pieces, and chocolate nut butter. ? Although this welcomes many different toppings, it still holds up beautifully on its own.

Cheesecake Baked Oatmeal
I gave up on this recipe ages ago. As I mentioned in my Berry Cream Cheese Baked Oatmeal, I have been trying to master a cheesecake oatmeal since 2013! Now that I like the taste of Tofutti, and I’ve discovered the trick of adding zucchini, I figured it was time to try it again.
I think one thing hindering my progress was that my mom makes amazing cheesecake. Even though I haven’t had it since my vegetarian days, I still recall the creamy, tangy, sweet, rich flavor of those perfect cakes. Mommy, I miss your cheesecake!!! (more…)
