Matcha-Lime Overnight Oatmeal with Strawberries
I’ve recently realized that matcha tastes better in overnight recipes. I don’t know what it is about sitting in the fridge for a few hours, but it does wonders to the unusual flavor of matcha. It subdues the bitterness and leaves you with a sweet oatmeal with a pleasant matcha flavor.

Muddy Buddies Oatmeal
Or Puppy Chow Oatmeal. Or Monkey Munch Oatmeal. My family called it puppy chow, but I think it’s more widely known as muddy buddies, so that’s what I’ll name it.
Whatever you know it as, it’s the same thing: a “Chex”-type cereal coated in peanut butter and melted chocolate, and then tossed in powdered sugar. How did I turn this into “healthy” oatmeal? I didn’t. I tried, and it didn’t work. This is one of those go-for-it-or-pick-a-different-recipe kind of posts.
Don’t you dare skip the powdered sugar.
Salted Rosemary Brownie Batter Oatmeal
A few months ago for my birthday, my BFF Kate gave me a box of chocolates from the vegan company Lagusta’s Luscious. One of the flavors was rosemary sea salt caramel, and considering my love of all things rosemary, this was absolutely my favorite of the bunch. Since then, I knew I had to make this flavor combo an oatmeal recipe.

Raspberry Cheesecake Brownie Baked Oatmeal
I’ve been waiting months to make this. I would have done it sooner–I even bought the cream cheese!–but I was waiting for raspberries to be more affordable. Even at Trader Joe’s, they’ve been around $5, and I was not willing to fork over the money for that.
But we must really be in reach of summer because raspberries are finally under the $4 mark!
Have you ever had a brownie swirled with cream cheese and raspberries? I have. Have you ever had a vegan one? I have. Let’s be honest: there is something totally satisfying about a plain, simple brownie (especially if it’s dense and fudgy, and not cakey, but that’s a personal preference ). But Raspberry Cheesecake Brownies are one of the few that I find even more satisfying than an original.
Good news: this baked oatmeal perfectly captures that.

Cinnamon Raisin Oatmeal with Maple Roasted Sweet Potato and Pear
Remember that vegan passover potluck I was telling you about? And remember that food repurpose recipe I promised you? It’s all coming together now.
Apparently, there’s this traditional Seder dish called Tzimmes. Not going to lie, it’s pretty freaking delicious. One of the potluck attendees made a variation of it from the Veganomicon cookbook that used sweet potatoes, pears, pecans, and raisins (pictured below). Savory Citrus Arugula Steel-Cut Oatmeal
While I mostly eat my sweet oatmeals, I find my savory concoctions so rewarding on a creative level. When I make savory oatmeal recipes, I practiced some of my less-used cooking skills and ingredients and am always shocked at the results. My Herbed Pumpkin & Leek Oatmeal had me dreaming about it for the rest of the day, and the Lemon Asparagus Ris-Oat-to leftovers recharged me every day for a week.

This recipe was inspired by a recipe I made for a vegan Seder potluck. My vegan Jewish friend wanted to host an event for his other vegan and/or Jewish pals, and I was honored to be one of them. After doing much research for what is kosher for Passover, I made this quinoa salad*.

Hello! Shoutout to Lauren for giving me another opportunity to post on her wonderful blog. I’m always so excited to try out her new recipes, and it’s fun to be able to share one of my personal creations with all of you.
I started drinking coffee a couple of years ago to mask the flavor of my required nutrition supplements due to my health issues (you can read more about that here). Now, I enjoy a cup of warm, black coffee every morning as a way to start my day off right.
My love of black coffee is reflective of my taste for bitter flavors. Thus, I also have an obsession with dark chocolate. I add Hershey’s Dark Cocoa to my oatmeal almost every day, which I love as a healthy “indulgence.” (more…)

First of all, let me thank Lauren. Two years ago I had an oat packet in the pantry and I didn’t know how to use it. In Italy most of the people think that oats are to be eaten as they are, but I found them as flavourful as paper. ?

Matcha Yogurt Overnight Zoats
In my never-ending quest to acquire a taste for matcha, I came up with this recipe. By pairing the green powder with some sweet and creamy nondairy yogurt, I managed to replicate the qualities of a matcha tea latte.
My other goal with this recipe was to make a larger portion size. Yes, friends, I have heard you: my overnight recipes tend to be small portions. While I stuck with the 1/4 cup oats (which is one serving when using quick cook steel-cut oats, as I did), I bulked up the recipe using both yogurt and zucchini. In the past, I have never used a full serving of yogurt in an overnight recipe, but this time I did. This gave better flavor and creaminess with the matcha powder, eliminated the need to add additional liquid, and created a more filling portion of overnight oats.
