French Toast Overnight Oatmeal

There are some recipes that take me forever to get right. Then, there are others that turn out exactly as I had imagined on the first try (like my Carrot Cake Oatmeal and Peanut Butter Cookie Baked Oatmeal).

Add this one to the list!

Admittedly, I spent a while mentally concocting this one, but after I bought some pitted dates, it all came together. This is the first time I’ve used dates in a recipe (let alone oatmeal), and I must say, I’m impressed! Letting it soak with the oatmeal overnight softened it up and let the oatmeal absorb the sweetness. It was the perfect amount of sweetness, especially when I added a touch of maple syrup on top.

Orange Dreamsicle Overnight Oatmeal

When I was younger, my family and I could eat through a gallon of ice cream within a few days. My dad and I would eat bowl after bowl in one sitting. The favorite in our household was plain old vanilla (usually topped with chocolate syrup). However, sometimes my mom got “fancy” and bought us Orange Blossom.

If you don’t know what that is, it’s vanilla ice cream swirled with orange sherbet. Mmmmm. It’s the ice cream version of orange “dreamsicle,” which I believe is one of the world’s best flavors. 🙂

Yogurt Oatmeal

Stupid easy: that’s how I would describe this recipe. Essentially, you take the basic cooking instructions on the oatmeal carton. Then, you add your yogurt of choice. That’s it. If you want to get fancy, you add some other stuff. Whatever stuff you want.

Now, let me be clear: yogurt in oatmeal is not everyone’s cup of tea. In fact, the first time I tried it, I hated it. I used a very basic strawberry (dairy) yogurt, and the tartness of the yogurt really turned me off in the oatmeal. However, I know it’s a genuinely popular concept (even my mom does it!), so I tried it again, except with nondairy yogurt.

Strawberry Shortcake Oatmeal

My kitchen tends to be a veganized zone (as long as you don’t count my brother’s groceries! The cheddar slices and turkey are his, I promise!), so it’s not surprising that the majority of my oatmeal recipes follow suit. In general, they use nondairy milks and no eggs, and I only use honey from time to time, usually as an optional topping (like in my favorite grapefruit oatmeal). In other words, if they are not vegan, they can easily be made vegan.

Strawberry Shortcake Oatmeal

Except this one. And I apologize for that. (UPDATE: Psst….here’s a vegan version!)

This recipe is unique in that the bulk of the flavor is happening above the oatmeal, instead of within it. Obviously, many fellow oatmeal lovers have been doing this for ages, but it was my first time. 🙂

I created a rather neutral-flavored oatmeal, which I found enjoyable to balance out the tartness of the strawberries and yogurt. However, if you try this out, you may find it necessary to add more honey to the oatmeal itself, or even to stir in some of the yogurt so the flavor is more balanced throughout the bowl. It’s your breakfast–do what you want! 😉
