Peach Pie Oatmeal Smoothie
I used to slurp down tons of smoothies. At the beginning of my junior year of college, I used to whip up some relatively extravagant breakfasts (by college student standards, anyway).* Sometimes that included oatmeal, but not always. (It wasn’t until January or February of that year that oatmeal became a daily ritual.) Often, I would make smoothies. These were usually banana-based (because that’s what I could afford), but I occasionally splurged on mangoes, peaches, or pineapple.
*If you’re interested, here’s a post from my old blog where I documented all my breakfasts for the week.
I never really added oatmeal to my smoothies, though. I thought of that concept a little over a year ago when I made my Green Monster Oatmeal Smoothie, which was actually just a cheap trick to add variety to my blog (at least I’m honest). I was like, “Hey, I’ll put oats in a smoothie, so I can have something other than porridge recipes on my blog! Har-har!”
But here I am, adding another smoothie recipe to my blog. This time, however, it’s not just a cheap trick. The idea for this recipe came about the other day when I was attempting a new pancake recipe. As I licked the batter, the flavors and creaminess delighted me. It tasted exactly like a peach pie! I realized then that oats in a smoothie add more than just fiber and bulk; they add flavor, too! A smoothie without oats just tastes like peaches. A smoothie with oats tastes earthy and sweet, like someone took a slice of peach pie (crust and all) and blended it up.

Strawberry Basil Oatmeal
When I think about fresh herbs, I reflect on just how far my food journey has taken me. Until a couple years ago, I had never really experienced fresh herbs before. “Flavor” to me used to mean dumping sugar on top of my Frosted Flakes.* The idea of using fresh dill to season potatoes or a sprig of thyme to add zest to a homemade soup was absolutely foreign to me. I think the first time I experienced fresh herbs (that I can actually recall) was the summer that my mom grew chives out on our backyard deck, just a few years ago.
* In my mother’s defense, I did this behind her back; she did not approve. 🙂
Fast forward a couple years… I find using fresh herbs to be terribly inconvenient, but I still make the effort now and then. I despise how recipes always call for a minuscule amount, but stores sell them in rather large packages. Not helpful! Thus, I typically only buy them if it’s either an important recipe or it’s something that requires a hefty amount of herbs!

Tiramisu Oatmeal
[Update: I feel the need to nudge you in the direction of my newer overnight version of this recipe. It’s simpler and tastier. Give it a try!]
I once told you that peach cobbler is my favorite dessert. Another time, I told you it was pumpkin pie. Well, both of those statements are only partly true. Actually, it’s a three-way tie…with tiramisu.
In fact, when my birthday rolled around, what did I chose for my “birthday cake?” Yep. Tiramisu. From Vivaldi Cafe in Greenwich Village. There was live jazz. 🙂

Strawberries and Cream Overnight Oatmeal
I hope the surge of overnight oat recipes is appreciated. I’ve been shaking them up quite frequently this month! I believe they are perfect for this time of year; many mornings in New Jersey are hot and muggy, and steaming oatmeal doesn’t always appeal to me then. In those times, I really crave a refreshing, cool, creamy oatmeal.
You can really tinker with this recipe. Add chocolate chips, use dried strawberries, slice in a banana, etc. It’s an incredibly basic recipe that you could adapt to your liking. You could even swap in real cream, if your lifestyle allows it. I’ll stick to my almond milk. 🙂

Key Lime Pie Overnight Oatmeal
Question: how necessary are key limes for a key lime pie? Would anyone be offended if I used, say, your average lime? Because that’s what I did, and I’m not apologizing for it.
Since my Strawberry Limeade Oatmeal turned out so well, I thought I’d stick with the lime theme and test this Key Lime Pie Oatmeal. It’s citrusy, vibrant, and ever so creamy, thanks to the addition of coconut yogurt.

Fruit-on-the-Bottom Oatmeal
I’ll be honest right from the start: I have never had (nor do I have the desire to try) fruit-on-the-bottom yogurt. First of all, it’s not available in nondairy varieties, so that’s an obvious deterrent. Moreso, the “fruit” on the bottom has been heavily processed and coated with sickeningly sweet high fructose corn syrup. Um, no.
Like most of my recipes, I’ve been eager to try this one for a while. It required me to have yogurt on hand, which I usually lack. Whenever I have it, I end up demolishing it before I can even attempt this or the other yogurt-demanding recipes.

Lemon Drop Overnight Oatmeal
My goodness. Ever since I made that Lemon Coconut Oatmeal over spring break, I just CAN’T. STOP. I came back to the Jerz, went to Whole Foods, and somewhat begrudgingly (I’m cheap) passed over the ~$5 for a bottle of lemon extract. But now I can have wonderfully lemony oatmeal ALL THE TIME!
You could obviously top this with coconut and make it Overnight Lemon Coconut Oatmeal, but as is, this recipe is just a straight-up celebration of lemon. Don’t skip the banana; I promise it’s necessary! The yogurt will make it creamy but is not essential to the recipe.

Spiced Plum Overnight Oatmeal
My pear obsession has officially moved on to a plum obsession. Plums are great. They’re smaller than pears and apples, which makes them perfect for snacking. I despise when I eat an apple for a mid-morning snack and it stuffs me so much that I can’t enjoy my lunch! Switching to the humble plum has cured this dilemma.
In oatmeal, plums taste quite similar to apples. However, plums don’t brown like apples do, so they are much better suited for overnight recipes! To continue the resemblance to apples, I used classic apple pie spices to complement the plums. As you can see from the picture, I topped the final product with granola!

Lemon Coconut Oatmeal
(Hello from the Minneapolis – St. Paul Airport!)
I still can’t believe I hated coconut my entire life. Now, I worship it! Coconut milk, coconut yogurt, coconut butter, coconut shreds…give me any or all and I’ll be a happy lady!
Friday morning, I paired it with lemon. The wonderful thing about being at my parents’ house is having access to all my mom’s extracts. She decorates cakes, so her cupboard hosts nearly a dozen different flavors, from mint to cherry. Normally, I use lemon juice for my oatmeal, but for this recipe, I was able to experiment with lemon extract. OH MY GOSH, I loved the result. It has such a bright flavor, like lemon zest instead of just the juice. In fact, I liked it so much that I had it again this morning. Encore, encore!

Creamy Berry Oatmeal
Hello from South Dakota! I was hoping to throw up tons of new recipes while I was home, but every morning I was just dying to make some of my favorites, like Banana Bread and Grapefruit and Chocolate Banana. I wasn’t in the mood to experiment!
But here’s a new one for you!
Take your favorite berry (or berries), blend them with some almond milk, and use that fruity puree to cook your oats! Num!
