Pumpkin. How can I make more pumpkin recipes? What else can be done with pumpkin? These are the questions I ask myself twice a day.What spices and herbs go well with pumpkin? What fruits pair well with pumpkin? What different forms of oatmeal have I not tried with pumpkin?!

The result of this never-ending search is today’s recipe. Seeing how well apples paired with sweet potatoes, I knew they’d be smashing with pumpkin. Of course, cranberries are my go-to dried fruit for autumn recipes, so I threw those in as well. Aaaand bam, cue the world’s coziest breakfast.

Pumpkin Pie Steel-Cut Oatmeal

For over a year, I had to stomach the fact that my Salted Brownie Baked Oatmeal was my #1 most viewed recipe. I mean, that recipe was fine and dandy, but number one?? C’mon. Not even close. I could name thirty recipes that I’d pick over that one.Luckily for me, the most wonderful thing happened about a month ago. As always, August and September ushered in the yearly pumpkin craze, and my Pumpkin Pie Oatmeal received a great deal of love on Pinterest. Out of nowhere, this recipe vaulted into the #1 spot and surpassed the Salted Brownie by thousands of views. COOL. I feel like my Pumpkin Pie Oatmeal is a much better representative of my blog than the Salted Brownie.

I love my pumpkin pie recipes. Certainly, they’re not my MOST favorite, but they’re in my Top Ten. You might think that I’d be satisfied with a stove-top, baked, and overnight version, but no, I’m not finished. Now that I’ve fallen in love with steel-cut oats, it just made sense to add another variation to my pumpkin pie family.

Apple and Sweet Potato Oatmeal

I must admit that I’ve been pining to incorporate sweet potatoes into my porridge again all summer. I somehow managed to resist until the end of August (when I made my Sweet Potato & Soyrizo Oatmeal), and here I am again, writing up another sweet potato post.

What I find especially charming about sweet potatoes is its versatility. It functions beautifully in both savory and sweet recipes. Last week, I showed how to make it savory (with the soyrizo). Now, I paired it with apple and earthy apple pie spices to bring out its dessert-like qualities. (more…)


Sweet Potato and Soyrizo Oatmeal

Let’s all take a moment to acknowledge just how fantastic soyrizo (aka soy chorizo) is.

For those of you who aren’t familiar with it, it’s the vegetarian version of chorizo, a Spanish sausage. My first experience with it happened at my favorite restaurant in Newark, Elbow Room (now closed). It’s a specialty mac and cheese joint, and it’s the cutest little thing. They have this ridiculous vegan queso mac, made with a housemade vegan cheese sauce (meant to replicate queso fondido), soyrizo, avocado, cilantro, and fried tortilla strips. I was allllllll about that place last year.

Savory Butternut Squash Oatmeal

It’s been a while. I haven’t posted a savory oats recipe for months. I’ve been meaning to do it for a long time, too. Every time I update my recipe index and see that one wimpy savory oats recipe, I feel a surge of motivation to give it a companion, but alas, it would never surmount to anything.

Have you ever had butternut squash risotto? That’s what this reminded me of. It was pleasantly creamy, yet savory. The oatmeal was an excellent vehicle for the butternut squash, which is truly the star of the recipe.

Pumpkin Pie Overnight Oatmeal

My Pumpkin Pie Oatmeal was a hit. The Pumpkin Pie Baked Oatmeal was also a hit. (Confession: despite the fact that the stove-top version has more views, I highly prefer the baked version!) So why not give the people what they want?

Sweet Potato Oatmeal Muffins

What do you do when a hurricane pummels your town and cancels school for four days? Bake. Bake all afternoon. Bake multiple batches of muffins and have your roommates taste-test for you.

Here’s the result for you! These muffins are perfect for a healthy breakfast. They’re sweet enough to be delicious and satisfying, but not overly sweet like traditional muffins. They are also free of refined sugars and flours. You’re welcome!

Sweet Potato Pie Baked Oatmeal

Well, I got a new laptop. I hate to admit it, but there was nothing functionally wrong with my other one. In fact, it was probably the best-working piece of technology I’ve owned for as long as I’ve been old enough to actually use technology. 😉

Why the switch? Well, a 17-inch, 10-pound laptop is not functional for someone who carries her laptop everywhere on her back. Not only is it painfully heavy to lug around, but it barely fits in my backpack! Each day that I had to stuff it into my backpack, the edges and corners got a little more scuffed. Ugh! My mother and I were clearly NOT thinking when we ordered that model.

Coconut Pumpkin Swirl Baked Oatmeal

I apologize for the freakishly long name of this oatmeal. I normally try to avoid lengthy titles like that, but I couldn’t resist. This is what this oatmeal had to be named.

This oatmeal was inspired by a wonderful experience at Amazing Thailand in Minneapolis, MN. Thai is one of my favorite cuisines, despite the fact that I only discovered it recently! At this particular restaurant, I ordered pineapple fried rice, but my friend ordered pumpkin-coconut curry. I was shocked at how delicious the combination was, and I’ve wanted to try it in oatmeal ever since.
