Chai-Spiced Pumpkin Oatmeal with Persimmon
Do you love Pumpkin Pie Oatmeal? Could you eat it every day and never get sick of it?
OR do you like it, but you’re looking for a slight change? If you fit in the latter camp, I have the recipe for you. This chai-spiced porridge tastes quite reminiscent of pumpkin pie, but the addition of cardamom gives it a distinctly different experience.
And yes, I am aware that chai literally translates to tea. But we Americans use chai to refer to a specific tea: masala chai. (more…)
Spiced Pumpkin Oatmeal with Java PB2
Hello, friends. Meet the newest take on Pumpkin Spice Latte Oatmeal.
That’s right. As I am always eager to find a way to add nut butter to every recipe, I developed a different way to enjoy the most famous Starbucks drink in oatmeal form. The oatmeal is a simple pumpkin spice, made exactly like my Pumpkin Pie Oatmeal. Then, it is topped with a wonderful flavor twist on nut butter: PB2 laced with coffee!
I polled you all on Instagram several weeks ago, asking how early is too early for a PSL recipe. Nobody seemed to mind that it was early August, but I managed to hold out until mid-September. Go me.

Sweet Potato Green Oatmeal Smoothie
When I made homemade oat milk the other week, I mentioned that it works well in smoothies. I didn’t want to leave you hanging, so I made this smoothie to prove it.
I had half a sweet potato left over from my Sweet Potato, Almond Butter, & Raisin Oatmeal, so I used that as the star of my smoothie. With banana, some spices, and a handful of greens, this smoothie is like a nutritious sweet potato pie. Then I added my secret ingredient: raw oats!
I love how oats cut the sweetness of a smoothie. I actually stopped eating smoothies because I hated how sweet they were, but with oats, I find the experience much more enjoyable. You could add quick oats, rolled oats, or even the pulp of oats leftover from making oat milk. (more…)
Sweet Potato, Almond Butter, and Raisin Oatmeal
When I first started publishing oatmeal recipes, I used raisins in almost everything. They were cheap and predictable, making them an easy addition to nearly everything I tried: Apple Cinnamon Oatmeal, Banana Bread Oatmeal, Pumpkin Pie Oatmeal, Zucchini Bread Oatmeal, Pumpkin Banana Oatmeal, etc. Raisins all around!
I realized recently that I had kind of forgotten about them. My carton of them had been pushed to the back of my cupboard, and I rarely dragged them out. Something about today’s recipe made me recall these good ol’ raisin days, and I decided to bring them back into my life. 🙂

Sweet Potato Curry Oatmeal
As with many non-city folk, my experience with foreign cuisines was limited to Italian and Mexican food. Give me lasagna or a taco (Americanized, of course), but sushi? No. Tapas? What’s that? French? Yuck. Russian? Nah. And there were definitely no curries.
My first time eating beyond the Italian/Mexican standards was during my trip to San Diego after college graduation, which was the first time I had sushi. Surprisingly, it was love at first sight. Shortly after, I experienced Thai. Once I was living on the East Coast, sushi and Thai became frequent eats, and pretty soon I was trying French, Indian, Greek, Ethiopian, Ukranian, Spanish tapas, and more. (more…)
Sweet Potato and Chocolate PB2 Oatmeal
Okay, so I might be a little out of season with this one. The truth is, I love sweet potato. 365 days a year. My heart knows no boundaries with food. Sure, I may crave certain foods a little more during certain seasons, but sometimes I want peaches in February or sweet potatoes in April.
Pumpkin Cranberry Thyme Oatmeal
Who has Thanksgiving leftovers?
Not I. 🙂 But if you do, I have a recipe for you to try!
As you know, I’m a sucker for thyme. I basically took my Pumpkin, Apple, & Cranberry Oatmeal and made it ~super classy~ by adding thyme. (This recipe does not include apples, but you could obviously add that if you want.)
Pumpkin White Chocolate Macadamia Oatcakes
Because white chocolate chip macadamia nut cookies are the best.
Because pumpkin makes everything better.
Because pancakes make the mornings feel special.
Because pancakes made with oat flour keep the tummy happy.
Because vegans deserve pancakes, too.
Because you don’t have to eat dairy to eat white chocolate. 🙂
Pumpkin White Chocolate Macadamia Oatcakes
What you'll need:
- 1/3 cup milk of choice (I used plain almond milk)
- 1/4 tsp apple cider vinegar, or lemon juice
- 2/3 cup rolled or quick oats (I use Country Choice Organic)
- 1/3 cup pumpkin puree
- 1/2 tsp vanilla extract
- rounded 1/2 tsp baking powder
- 1/2 tsp pumpkin pie spice (or cinnamon)
- pinch of salt
- optional: 1-2 tsp. maple syrup (I omitted)
- handful of vegan white chocolate chips
- handful of chopped macadamia nuts
How to make it:
- Combine milk and vinegar in a small bowl or cup and let sit for ten minutes.
- Put all pancake ingredients (including milk-vinegar mixture) except for the white chocolate chips and macadamia nuts in a blender or food processor and blend until smooth. Add extra liquid if necessary (just a tsp or so at a time). It should have the consistency of paint.
- Add in the white chocolate chips and macadamia nuts and pulse a couple times, just to incorporate them throughout the batter.
- Heat a griddle pan over medium low heat.
- When griddle pan is ready, spray with nonstick cooking spray (it only needs a little bit!), and use a large spoon or a small scoop to pour pancakes onto the griddle. I made small pancakes, so I used a large soup spoon, and it worked perfectly. Generally, don’t go any bigger than 1/4 a cup, but I find that too big still.
- When bubbles have formed at the top of the pancake, flip over and cook for another minute. Repeat until all the batter has been used!
- To serve, add your topping of choice. Maple syrup is fine, but so would a nut (or coconut) butter. If you're lucky enough to own some macadamia nut butter, that would be the obvious choice!
Pumpkin Spice Latte Oatmeal (Revisited)
Is this a new recipe? Kind of. Okay, not really.
However, it’s been so long since I’ve experienced my Pumpkin Spice Latte Oatmeal, and I wanted to celebrate it. To make this version special, I added steamed milk, which is a nice wink to the actual “latte” side of this recipe.
Unfortunately, I used almond milk for this recipe, and almond milk is not great for making steamed milk. Look how unfrothy it is. 🙁 If you want to flood your oatmeal with steamed milk, I highly recommend soy milk. It froths up so beautifully! My almond milk just formed a couple bubbles, as you can see.
