Tres Leches Baked Oatmeal Parfait (with Cashew-Yogurt Cream)

Consider this more an homage to the real deal. Actual tres leches cake involves a ton of dairy ingredients that is elusive to us humble vegans. I know there are recipes for vegan sweetened condensed milk out there, but my motto is always simplicity. Considering I already had to soak cashews for this recipe, I’m not about to make a sweetened condensed plant-based milk as well. I HAVE MY LIMITS. 🙂

Cannoli Baked Oatmeal (with Cashew-Yogurt Cream)

Let me introduce my latest love: cashew-yogurt cream.

Why? Because yogurt has a very distinct taste. It’s excellent if you want yogurt. It’s not excellent if you just want something creamy. And when we’re talking about nondairy yogurt, that can be triple true.

And cashew cream is never what I want it to be. I can never get it creamy enough, or sweet enough, or simply without that ~raw cashew~ aftertaste.

Cue the cashew-yogurt hybrid.

Considering how long I pondered over this recipe, I was stunned at how well this turned out. Of course, it is not the beautiful deep-fried, thin, crispy pastry tube, which is half the appeal of the beloved cannoli. There is no way that baked oatmeal will ever replicate crispy, deep-fried pastry. But it’s irrelevant . . . because this is delicious. (more…)

That’s right. As I am always eager to find a way to add nut butter to every recipe, I developed a different way to enjoy the most famous Starbucks drink in oatmeal form. The oatmeal is a simple pumpkin spice, made exactly like my Pumpkin Pie Oatmeal. Then, it is topped with a wonderful flavor twist on nut butter: PB2 laced with coffee!

I polled you all on Instagram several weeks ago, asking how early is too early for a PSL recipe. Nobody seemed to mind that it was early August, but I managed to hold out until mid-September. Go me.

Chocolate Hazelnut PB2

PB2 is magical! You can do so much with it. I finally bought hazelnut extract (primarily because I bought a second spice rack and I needed to fill it out haha), and I was so excited to try out this Nutella-hack.

As much as I frequently eat PB2 as is, I also enjoy making fun “spins” of it (see: Faux-reo Cookie PB2). Truthfully, I’ve only had Nutella a couple times (pre-vegan days), and I was always assaulted by how cloyingly sweet it was. I much preferred PB&Co’s Dark Chocolate Dreams, as I’ve mentioned before.

Poached Strawberry-Rhubarb & Reduction Sauce

The idea behind this recipe surfaced as I looked for ways to enhance pre-flavored oatmeal packets. On its own, I truly hate the taste of Maple & Brown Sugar Oatmeal. Not only is it too sweet for me, but I always think it lacks depth in flavor. It’s just like, “AHHH MAPLE!!!!! BROWN SUGAR!!!!!” It has no captivating nuances. No variation of texture. No fruit, no interesting spices . . . just sugar, sugar, and sugar.

You can pump up Maple & Brown Sugar Oatmeal in numerous ways as I discussed in the aforemetioned post. I knew I was going to add a banana—because bananas are like oxygen to me—but I also wanted to add an interesting topping. Considering I was in Minnesota at the time, I “stole” some rhubarb from my sister’s front yard (I assure you she will not miss them) to make this super easy topping.

Poaching is easy. The definition of poaching is simply simmering something in a liquid. For example, you’ve probably heard of wine-poached pears, which is merely a pear simmered in wine (which is an excellent idea since pears are gross and flavorless). You can poach any fruit (or eggs, haha) in anything: from water to tea to juice to wine to some other sort of spiced concoction. (more…)


Grilled Pineapple & Dark Chocolate Oatmeal

I have been wanting to grill more fruit ever since I made my Grilled Peach Steel-Cut Oatmeal a couple summers ago. Since I spent several days with my parents in Minnesota, I took full advantage of their grill and made this recipe.

One of my biggest flaws is impatience. These pineapples should have deeper, darker, more beautiful grill marks, but I was like “OH COOL THEY HAVE SOME LINES ON THEM SO THEY ARE OBVIOUSLY DONE.” Either way, the result was delicious. If you are more patient than I am, you can probably make this even better, if that’s possible.

Alright, so I had this super idea for an oatmeal regarding my beloved Pseudo Vegan Lemon Curd. It would have been perfect, but my uncharacteristic carelessness came back to haunt me. Faux-reo Cookie PB2

Perhaps you’ve seen the cookies ‘n’ creme cookie butter at Trader Joe’s. Or the many recipes around the interwebz for a similar product. Or maybe you just eat an entire package of Oreos at once like Oreos.

It doesn’t take a genius to recognize none of these options are particularly healthy. Luckily, I have a much healthier alternative for you. I didn’t set out to make it, but I accidentally “discovered” it one morning as I prepared my daily PB2.
