Topping: Butter Pecan PB2
There are some things that you just accept you will never have again as a vegan. However, innovative companies and restaurants are increasingly proving me wrong. In the past year or two, I have had some incredible mozzarella sticks, chicken and waffles, fried fish fillets, cheesy grits, croissants, cupcakes, snickerdoodle cookies, pepperoni pizza pockets, scrambled eggs, mac and cheese, milkshakes, caramels, and tiramisu–all vegan.
Thus, there’s no reason vegans can’t enjoy butter pecan as well! I decided this would make a better PB2 topping than an actual porridge recipe, and instead of using butter extract, I opted for Earth Balance. But then I decided a little drop of butter extract is a nice touch, too. After trying it all three ways, I decided the version using both produced the best result.

S’mores Oatmeal…and my blog’s 4th birthday!!
My blog is four happy years old. This occasion seemed like the perfect time to celebrate with s’mores.
Dirt Pie Overnight Oatmeal
Happy Wednesday! The sun has finally come out again in New York City, and the forecast shows sun for the next week. ☀️ ☀️ ☀️ That means I’ll finally be able to get back to blogging.
You see, because I live in a Brooklyn apartment, it’s not feasible for me to take pictures outside (much to my displeasure). I have to take all my pictures right next to my bedroom window to get some natural light, and to get enough light, I need it to be MEGA sunny. Cloudy days work great for outside pictures, but not indoors. The past two weeks have been endlessly cloudy, resulting in me running out of recipes to post. My apologies.
For those of you unfamiliar with dirt pie (and that could very well be many of you), it’s a dessert with chocolate pudding topped with crushed Oreos and gummy worms. It’s a popular dessert to serve kids, especially around Halloween. (more…)

Peppermint Fudge PB2
Shout out to my bulk-sized cocoa powder and PB2! The sad part is that I can finish both in less than a month. I buy the cocoa through the subscription program on Amazon, and it’s delivered to me monthly. I often have to supplement with a small Trader Joe’s container of cocoa powder by the end of the month. I’m such a sucker for mint chocolate flavors. There’s a reason Thin Mints were always my favorite Girl Scout cookie. (Coincidentally, they are also the only vegan version. Hizzah!) If you like Thin Mints, or Andes mints, or any sort of chocolate-mint concoction, you will love this Peppermint Fudge PB2 (as well as my Thin Mints Oatmeal or Peppermint Brownie Baked Oatmeal)!

Salted Fudge PB2
Continuing yesterday’s sweet-and-salty trend, and last week’s flavored PB2 trend, let me introduce you to my newest creation:
Salted Fudge PB2!
This recipe is admittedly fussy when it comes to pairing it with the right oatmeal base (not every recipe enjoys being paired with salt!). I had this on Sweet Potato Fudge Oatmeal, but I could see it working in a few others, too. One that immediately comes to mind is Chocolate Chip Cookie Baked Oatmeal. I love salted chocolate chip cookies. It would be nice as the frosting on top of Brownie Baked Oatmeal as well! (more…)
Salted Pretzel PB2
Assembling that peanut butter post last month really made me crave some fancy nut butters. But daaaaang, they’re so expensive! I’ve found some jars for nearly $20. No thanks. Especially not on my measly student loans.
I’ve recently started consoling myself by making my own fancy flavors. Technically, you can do this with any nut butter, especially a brand that stirs easily. However, PB2 is easy to work with because you can make it as thin or thick as you’d like, so it’s super easy to mix in other ingredients. Or, you can do what I like to do: use half-PB2 and half-traditional peanut butter. Boom. (more…)
Topping: Quest Bars! [Guest Post]
The first time I saw Kia use Quest Bars atop her oatmeal on Instagram, I immediately wanted to try it myself. Unfortunately, I quickly learned that they contain milk, so I would have to settle for just enjoying them vicariously through Kia. Still, I wanted to share with you the creative way that Kia is using them in case some of you would like to try it!
The world of oatmeal is truly delightful, a food that can have various flavours and combinations that satisfy any hungry mouth. I love my oatmeal and many multiple flavours but to take my oatmeal to the next level, I needed to add topping. My staple toppings are banana, more fruit, and nut butter!! However, as I am an athlete, I needed some extra and also to take my oatmeal to a tasty extreme. To do this I added a Quest Nutrition Quest Bar to my bowl of oatmeal . . . Words can’t describe how my tastebuds felt. The delicious protein bar combines so well with the oats, slightly melting into a gooey deliciousness.
My three favourite Quest Bar flavours are Chocolate Chip Cookie Dough , Cookies and Cream and either White Chocolate Raspberry or Double Chocolate Chunk. I just love those beautiful chocolate chunks !! (more…)
Eggnog Oatmeal with Apple-Cranberry-Chestnut Compote
This is actually two recipes in one. The Eggnog Oatmeal could be eaten alone or topped with anything, and the Apple-Cranberry-Chestnut Compote could be added to any oatmeal you want! I just chose to pair them together.
Although I have made an oatmeal with eggnog before (in overnight form), I wanted to try it again in a new way. In particular, I wanted to try it with zucchini. 🙂
You could use any eggnog for this, storebought or homemade. I used SoDelicious coconut eggnog (this is not a sponsored post). I like to use coconut-based eggnog because coconut is the richest of the plant-based milks. I can’t imagine drinking eggnog made from rice milk or almond milk since eggnog is supposed to be thick and rich and creamy. But to be fair, I have never even tried rice- or almond-based eggnogs. Maybe they’re amazing. I don’t know and I probably never will. 🙂 (more…)
Cheesecake Baked Oatmeal
I gave up on this recipe ages ago. As I mentioned in my Berry Cream Cheese Baked Oatmeal, I have been trying to master a cheesecake oatmeal since 2013! Now that I like the taste of Tofutti, and I’ve discovered the trick of adding zucchini, I figured it was time to try it again.
I think one thing hindering my progress was that my mom makes amazing cheesecake. Even though I haven’t had it since my vegetarian days, I still recall the creamy, tangy, sweet, rich flavor of those perfect cakes. Mommy, I miss your cheesecake!!! (more…)

10 Tips to Come Up with Your Own Oatmeal Recipes
Many people comment, “I cannot believe all the things you can do with oatmeal!” or “And I thought I was being inventive by putting peanut butter on my oatmeal!”
The thing is, we can all be oatmeal artists (as cliché as it sounds). I became more innovative the more I played around with oatmeal. I may have an absurd amount of recipes here, but we all have our own personal tastes, so it’s worth taking the risk and trying your own artistry, even if that means just tweaking my recipes (or another blogger’s).
