Savory BBQ Sweet Potato Oatmeal

Hello, everyone! I am so excited that I was invited to share this delicious fall recipe with you. My name is Lyndsey, and I am sixteen years old. My hobbies include musical theatre, running, watching Grey’s Anatomy, and cooking up tasty recipes. I have a passion for nutrition and fitness, and aspire to become an endocrinologist in the future. I love the fall. Digging out my boots from the back of my closet and seeing the pumpkin spice recipes gradually appear on my Pinterest feed fills me with an immense amount of glee. My favorite fall flavor would have to be the stereotypical pumpkin, which is closely followed by apple spice. However, when I am craving something a bit fancier than pumpkin, a tasty sweet potato is the perfect substitution.
For my entire life, I have never, EVER enjoyed ketchup. I much prefer the slightly sweet and spicy taste of barbecue sauce, which pairs great with homemade baked sweet potato fries 🙂 The other day, I was brainstorming a new savory oatmeal recipe. I knew I wanted to use up a sweet potato I had on hand, and I was having a major craving for barbecue sauce. So this recipe was born! It contains a creamy sweet potato and barbecue sauce base, and is topped with some more barbecue and some green onions. For some spice, an optional pinch of cayenne pepper is delicious! (more…)

Sweet Potato Green Oatmeal Smoothie
When I made homemade oat milk the other week, I mentioned that it works well in smoothies. I didn’t want to leave you hanging, so I made this smoothie to prove it.
I had half a sweet potato left over from my Sweet Potato, Almond Butter, & Raisin Oatmeal, so I used that as the star of my smoothie. With banana, some spices, and a handful of greens, this smoothie is like a nutritious sweet potato pie. Then I added my secret ingredient: raw oats!
I love how oats cut the sweetness of a smoothie. I actually stopped eating smoothies because I hated how sweet they were, but with oats, I find the experience much more enjoyable. You could add quick oats, rolled oats, or even the pulp of oats leftover from making oat milk. (more…)
Sweet Potato, Almond Butter, and Raisin Oatmeal
When I first started publishing oatmeal recipes, I used raisins in almost everything. They were cheap and predictable, making them an easy addition to nearly everything I tried: Apple Cinnamon Oatmeal, Banana Bread Oatmeal, Pumpkin Pie Oatmeal, Zucchini Bread Oatmeal, Pumpkin Banana Oatmeal, etc. Raisins all around!
I realized recently that I had kind of forgotten about them. My carton of them had been pushed to the back of my cupboard, and I rarely dragged them out. Something about today’s recipe made me recall these good ol’ raisin days, and I decided to bring them back into my life. 🙂

Sweet Potato Curry Oatmeal
As with many non-city folk, my experience with foreign cuisines was limited to Italian and Mexican food. Give me lasagna or a taco (Americanized, of course), but sushi? No. Tapas? What’s that? French? Yuck. Russian? Nah. And there were definitely no curries.
My first time eating beyond the Italian/Mexican standards was during my trip to San Diego after college graduation, which was the first time I had sushi. Surprisingly, it was love at first sight. Shortly after, I experienced Thai. Once I was living on the East Coast, sushi and Thai became frequent eats, and pretty soon I was trying French, Indian, Greek, Ethiopian, Ukranian, Spanish tapas, and more. (more…)
Sweet Potato and Chocolate PB2 Oatmeal
Okay, so I might be a little out of season with this one. The truth is, I love sweet potato. 365 days a year. My heart knows no boundaries with food. Sure, I may crave certain foods a little more during certain seasons, but sometimes I want peaches in February or sweet potatoes in April.
Spiced Brownie Baked Oatmeal
It may look like a calm, traditional brownie (or at least the baked oatmeal version of one), but this brownie is feisty. He’s maybe even a little vicious.
Of course, you have control over his viciousness. You could just give him a little bit of bite. OR you could be like me and drop three generous pinches of cayenne pepper into the batter. It’s up to you.

Nutty Pumpkin Berry Oatmeal, + Other Hacks for Banana Haters
Dear Banana Haters,This post is for you. Although it may seem like we play for opposite teams (I’m all like, “BRING ON THE ‘NANAS,” and you’re all, “UGH, I GAG!”), we’re not all that different.
You see, as much as I love (and NEED) my daily banana(s), I also know what it’s like to loathe an ingredient. Even before my transition to a herbivore lifestyle, I have never appreciated the taste of sour cream. I think it’s pretty vile, in fact. If my favorite blog kept making oatmeal topped with sour cream, I would be pretty ticked.
Therefore, I have a solution. You have probably noticed by now that most of my favorite recipes contain banana. Not wanting you to miss out, I have compiled a list of hacks for all you banana haters…including one new recipe (pictured below–scroll to the bottom of this post for the recipe)!

Coconut Sweet Potato Oatmeal
Taking a tip from my Coconut Kiwi Oatmeal, I decided to go for another round of coconut butter. This time, I paired it with sweet potato.
If you haven’t noticed, I’m a major fan of sweet potato in oatmeal. I might even like it more than pumpkin. The only reason I don’t use it more often is because…well…I’m lazy. Sweet potatoes need to be cooked, and that’s annoying. It’s always worth it, though.

Sweet Potato Fudge Oatmeal
If you like Brownie Batter Oatmeal (and it appears that most of you do), then you will love this. Bonus: NO BANANA. To me, that’s a downer, but to some of you, it will seal the deal.
Now let’s be real. Have I ever steered you wrong with any recipe that contained the word “fudge”? Let’s look at the evidence: Raspberry Fudge Oatmeal. Fudgy Banana and Peanut Butter Oatmeal. Ummm, CASE CLOSED.
