Strawberry Mango Baked Oatmeal
You guys! A hurricane is coming straight at me! For someone who has lived her entire life in landlocked South Dakota, this weekend has been both exciting and nervewracking. At first, I was thrilled to experience the weak “leftovers” of the hurricane that the Northeast usually experiences (just so I could say I’ve been through a hurricane). However, the news quickly broke that we’re not getting leftovers: we’re getting the real deal.
Well, we’re still waiting for the rain to start. It’s windy and cloudy (it has been for days), but no storm yet. I was feeling kind of lazy today and didn’t feel like putting this post together, but I finally decided I should give you one last recipe before the Frankenstorm. (It’s possible you won’t see another oatmeal recipe from me this week!)
Coconut Oatmeal with Strawberries and Chocolate Chips
How do you feel about chocolate chips for breakfast?
Like me, many of my followers are health-conscious. Therefore, I’m extremely curious about the general consensus on chocolate chips for breakfast. Most chips involve a myriad of unwelcome ingredients (ex: milk, sugar, hydrogenated oils). I’ve also seen a variety of brands make their chips vegan and/or “healthier” by using cocoa liquor instead of actual cocoa to flavor the chips. My current stock (from Trader Joe’s) falls into that category, and although it doesn’t necessarily impress me, I prefer it over some other sketchy brands I’ve seen.

Strawberry Banana Baked Oatmeal
One month! I’ve officially completed one month as a full-time tutor. Yippee!
Six weeks ago (when I came for training), the idea of eating baked oatmeal every morning was so dreadful. I’m not a fan of changing routines, and stove-top oatmeal was definitely the routine! However, recipes like this (and THIS) make baked oatmeal such a delight.

Neapolitan Baked Oatmeal
As I typed out this recipe, I couldn’t help but feel depressed. That is because I may be peaking as an oatmeal blogger. I’m not sure if I can ever top this one:
This recipe, you see, is so elaborate, well thought-out, and mouth-wateringly delicious that I’m not even going to bother posting the instructions for a single serving. It’s way too much work for one serving, and it’s way too delicious to not share (or, if you’re like me, eat every morning for a week).

Berry Kiwi Oatmeal
My two weeks of professional development training are over! Next time I return to the school, it will be with actual students. Hurray!
This also means summer is coming to an end, and I’m on a frantic mission to enjoy all the summer fruits while they’re still around. With a bowl of oatmeal, naturally. 🙂
Raspberry Lemonade Overnight Oatmeal
Have you tried overnight refrigerator oatmeal yet?
It’s a pretty great concept, especially in the summertime. Most days–thanks to the fabulous invention of the air conditioner–I wake up eager for a warm bowl of oatmeal, regardless of the temperature outside. Some days, however, are quite the opposite, and a cold, ready-to-go jar of delicious, silky oatmeal is the perfect compromise.
Actually, compromise seems like a poor word choice. It implies settling for something less than the original. I would say that overnight oatmeal isn’t less than the stove top; it’s just different. Equally awesome for different reasons.

Banana Split Oatmeal
Yep. I’m insane. Or genius. Not sure which.
This porridge contains ALL the flavors of the classic banana split. However, unlike the typical massive dessert found in diners, THIS banana split is healthy AND vegan! Don’t act like you’re not impressed. 😉
Nutty ‘Nana Berry Oatmeal
I’ve been selfish with this one. Really selfish.
I’ve been making this for months. Really. Months. And it’s not that I was “perfecting the recipe” or anything like that. No, not at all. In reality, I just never had the opportunity to photograph it! I was either too lazy, it was raining, I didn’t have any good dishes to use for a picture, or I was in a hurry. (more…)
Loaded PB&J Oatmeal
Perhaps I’ve been so successful as a vegetarian because my favorite sandwich is PB&J. In fact, one of my favorite restaurants/coffee shops in town offers this divine, gourmet PB&J. It uses natural peanut butter, homemade mixed berry jam, sliced bananas, and homemade granola, all between locally made bakery bread…and then it’s grilled. (more…)

Triple Berry and Banana Oatmeal
It occurred to me last night after I posted my Fuzzy Navel Oatmeal recipe that I never actually told you guys about my summer job. Hmm…
I’m teaching at a college preparatory program for low-income and/or racial minority students. Many of them are ESL (English as a Second Language) students who have come to America from Africa (particularly Ethiopia and Eritrea). (more…)
