10 Oatmeal Recipes for Thanksgiving Leftovers
I know I haven’t posted a new recipe since Tuesday, but I decided it was vital for me to spend this week relaxing and exploring the city with my sister, who is visiting from Minnesota. Instead of posting a new porridge today, I created a round-up of all the recipes you could make using some of your potential leftovers from Thanksgiving (which, by the way, is my FAVORITE holiday…even as a herbivore!).
I have so much to be thankful for…seemingly more so than previous years! I’m thankful to have “made it” in this city. I’m thankful to finally be a teacher. I’m thankful for plant-based options popping up more and more at restaurants around the city. I’m thankful for peanut butter on a genuine NY bagel. I’m thankful for this blog and the joy it brings me every week, as well as the love and support given to me by Country Choice Organic. I’m thankful for sauteed kale (because JEE-ZUSS it’s so good). I’m thankful for warm fleece jackets, hot tea, electric blankets, and space heaters. I’m thankful for my family, friends, and everyone who reads my blog (YOU)!
Recipes for Thanksgiving Leftovers
Do you have leftover chestnuts sitting in the fridge? I don’t know about you,
but I don’t know many uses for chestnuts. Putting them into a creamy, chocolaty porridge
seems like the perfect solution to me!
Didn’t use all the pumpkin puree for the pies? Mix it into this recipe! You could use
either dried or fresh cranberries, or (my new personal favorite) cranberry sauce!
Okay, fine, so it’s not “oatmeal,” but these little baked gems are a unique
way to use up those few extra sweet potatoes.
If chocolate isn’t your thing, use your chestnuts in this flavorful recipe. The best part
is that it goes beautifully with cranberry sauce stirred in the top!
Extra sweet potatoes? No problem. Even if your potatoes are already mashed
and seasoned, they would probably work here as long as you didn’t add savory
flavors. I don’t think herbs, salt, and pepper would be a good match here. 🙂
This is such a fun way to use up cranberry sauce. Paired with pecan butter, it makes
such a delicious alternative to the already-wonderful peanut butter and jelly.

without my recent stuffing-inspired recipe. This porridge is perfect if you have a bunch
of random ingredients like fresh herbs, celery, corn, chestnuts, and cranberry sauce
to use up. You can really throw in whatever you want. Potatoes are welcome!

When I tried to think of an appropriate round-up for this month, I struggled. My mind is so autumn-themed that it’s hard to think beyond that. Pumpkin? Overdone. Apple? Boring. That’s when I thought of cranberries. Truthfully, I’ve only used dried cranberries, but I hope to change that soon. I’d like to experiment with fresh cranberries in my oats!

Oatmeal Recipes for Autumn Lovers
I can take a hint. When I asked for what ingredients you’d like to see more of in my recipes, the resounding opinion was simply everything autumn. I couldn’t agree more, which is why I’ve been pumping out all sorts of hearty, autumn goodness. Summer food is delicious, but when the temperature starts dropping slightly and everyone breaks out their best pair of boots, delving into a bowl of cozy porridge is truly perfection. This is the time of year when the “seasonal porridge lovers” join us crazies who eat it year-round. For once, everyone’s in agreement, and we can all share our love of hot, creamy, pumpkin-themed oatmeal. 🙂
Here are my favorite and/or most popular autumn-themed oatmeal recipes. Plus, since everyone lurrrrves my autumn recipes, I capped myself off at ten recipes instead of five. (And yes, there will be pumpkin.)

Oatmeal Recipes for Pie Lovers!
You know what I don’t like? Cake. I blame my mother. She’s an accountant, but she decorates cakes on the side. I’ve licked one too many frosting-covered beaters and eaten about a hundred too many leftover cupcakes. Sure, I’ll make an exception for “specialty” cakes like this Black Forest Cake, but most cakes I will scoff at out of principle.
When people don’t accept that explanation, I just say, “I’d rather have a nice slice of pie.” And then everyone’s on the same page again, because who doesn’t like pie?!
Here is a round-up of my BEST pie-inspired oatmeal recipes!

just a couple weeks afterwards and can now vouch for its authentic (and delicious) flavor!

I tried one of the savory oatmeals. I ordered Bacon Pumpkin Oatmeal, with veggie bacon. To be honest, it was more sweet than savory (due to the lackluster veggie bacon, sadly). The server tried to talk me out of it, but I didn’t listen. Regardless, I still enjoyed it! I mean, hello….pumpkin! Also, he told me that their pumpkin puree is vegan and does not contain butter. 🙂

Oatmeal Recipes for Pecan Lovers!
April 14th (Sunday) is National Pecan Day! I apologize for getting into the food holidays all of a sudden. I’ve always found food holidays to be extremely superfluous and ridiculously silly, yet here I am celebrating two in the same month (earlier this month, I celebrated PB&J day!)
I use pecans frequently to top my oatmeal, especially in Pumpkin Pie Oatmeal or Sweet Potato Pie Oatmeal. However, the following recipes feature pecans as one of the main ingredients, so if you love pecans, try these porridges!

Every single day – and I’m not exaggerating – I stare longingly at the jar of chocolate chips in my cupboard as I’m making my oatmeal. Most mornings, I talk myself out of it. “Save them for a weekend treat,” I tell myself. “Control yourself!”
Chocolate makes everything better. I’ve loved almost every single porridge I’ve ever made with chocolate. I typically use one of two methods: mixing it cocoa powder, or topping with chocolate chips. The first option is slightly healthier and makes it feel like you’re eating brownie batter, but eating chocolate chips automatically makes me feel nostalgic for childhood treats (like chocolate chip cookies!).
No matter what kind of chocolate you’re using, here are my top five favorite oatmeal recipes when I’m craving the cocoa!

Top 5 Peanut Butter Recipes!
Last week, I happily binged on some peanut butter, licking it off a spoon to my heart’s desire. Earlier this week, I did it again. Why is peanut butter so GOOD? Creamy or crunchy – I do not care. I’ll even take the flavored varieties from Peanut Butter & Co. (Cinnamon Raisin, anyone?)

Best of 2012
I truly am proud of this blog. Why? It’s one of the few projects that I stuck with for longer than a month. I tend to have grand ideas, only to abandon them a few weeks later. This blog, however, is the exception!
It’s been a great year of blogging, and although I sometimes posted out of duty and not enthusiasm, I never felt enslaved by the blog. I want to thank all of you that have left the sweetest comments throughout the year. It’s your kind words that motivate me to keep posting!
To celebrate the end of the year, I’ve decided to compile a round-up of my favorites from the year. Instead of listing the “ten most popular” recipes or something of the sort, I’ve decided to pick one recipe per category. (If I just listed the “best of the year,” it would essentially just mirror the most popular recipes on the blog, since my blog has only been around for a year!)
I picked the following favorites by ranking my personal favorites alongside the most popular recipes (aka the most visited or commented). In other words, there is no exact science to these rankings; they’re kind of subjective!
1. Best Stove-Top Oatmeal
Almond Joy Oatmeal: There is something so sensational about this recipe. It’s fudgy and rich, yet shockingly healthy! It’s sweetened only by bananas, but thanks to the almond extract, you can’t taste it!
2. Best Baked Oatmeal
Peanut Butter Cookie Baked Oatmeal: There were certainly a few baked oatmeals that got more hits than this one, but in my opinion, they just didn’t stack up to this one!
3. Best Overnight Oatmeal
Overnight Cookie Dough Oatmeal: This one was too new to have a fair shot at racking up the most views, but it acquired so many repins so quickly that I thought it had earned the honor.
4. Best Stupid-Easy Oatmeal
Peanut Butter and Banana Baked Oatmeal: I can’t believe how popular this recipe is! Certainly, it’s one of my favorites, but it seemed like such an obvious recipe that I didn’t think my audience would celebrate it as much as they did!
5. Best Labor-Intensive Oatmeal
Neapolitan Baked Oatmeal: Without a doubt, this was worth the hours I spent making it! Wow!
6. Best Topping
The Coconut-Pecan Butter from the German Chocolate Baked Oatmeal: If you’re at all familiar with this blog, you know I have two loves: coconut and nut butters. This frosting-like topping combined those two loves and created something so out of this world that I felt compelled to hide it in the back of the fridge so my roommates wouldn’t discover it. 😉
7. Best Crazy-Healthy Oatmeal
Green Monster Oatmeal: Yep, that’s right. I put spinach in oatmeal. And you guys liked it!
8. Best “Naughty” Oatmeal
Thin Mints Oatmeal: Want to know a secret? This oatmeal seems naughty…but it isn’t at all. Just like the Almond Joy Oatmeal above, it’s sweetened by bananas.
9. Best Non-Porridge Recipe
Banana-Oat Waffles: Top these with some peanut butter (may I suggest Dark Chocolate Dreams by PB&Company?), and you’ve got yourself a treat!
10. Best Unusual Oatmeal
Baked Lemon Poppy Seed Muffin Oatmeal: Perhaps it’s not the concept that’s unusual, but the method. How on earth, you ask, did I put bananas in a lemon poppy seed muffin oatmeal, and not have it taste like a trainwreck? Even I cannot answer that. You’ll have to try it yourself to believe it.
