Oatmeal Recipes for 4th of July

Earlier this week, I confessed my true feelings for the 4th of July. However, j’adore berries, and it seems like the cool thing to do on July 4th is to eat foods made out of berries. I can get on board with that!

Here are FOUR recipes for the FOURTH of July (ha…). Have you tried any of these yet? Which is your favorite?

This was originally a non-vegan recipe that I made for my roommate, but if
you’re dairy-free, fear not! You can sub in your favorite brand of alternative cream cheese.

Benjamin Franklin wants you to eat your daily dose of antioxidants.

Despite the fact that these pictures are taken with blueberries, I actually
use strawberries most of the time, or I’ll use a mix of blueberries and strawberries.
That combo (and/or with raspberries) would make a stunningly patriotic breakfast!

I work in a data-based school, which means we are constantly collecting and analyzing data about our students’ progress to guide our decisions to further their growth. Although I am not a fan of over-testing kids, the past two years have definitely converted me to a believer in the value of data.

Five Recipes for National Gingerbread Day!

Happy National Gingerbread Day!

You know what’s odd? Celebrating gingerbread in June. I don’t know about you, but I associate it with winter and Christmas. This seems like some sort of bizarre conspiracy.

Nevertheless, I was delighted to see that I actually do have several gingerbread recipes to share on this occasion, so without further ado, here are five gingerbread recipes to celebrate this (strangely scheduled) holiday!

When it comes to gingerbread recipes, this one is hands down my
favorite. The gingerbread flavors are a little toned down, so the sweet potato
flavor is present, and the two complement each other beautifully.
If you think gingerbread is too “spicy” for you, this is a pleasant way to mellow it
out. The sweet white chocolate chips add a surprising twist that makes the ginger
calm the eff down! 
Dear, Starbucks: we don’t need you. We can enjoy gingerbread lattes
year-round, sans five pumps of artificial sweetener. But thanks anyway!
If you’re not looking for any twists and surprises, this recipe
celebrates gingerbread in its classic form. It also serves four, is sweetened
naturally, and involves chewy and filling STEEL CUT oats!
Looking for something a little more out of the box? Skip the porridge
and take out your muffin tin. These are excellent for packing in lunches, road
trip snacks, or a to-go breakfast.

Getting Fit #3, Plus 3 Recipes for Mother’s Day!

This is the third segment of my Getting Fit series. This series features my friend Crystal, a rockstar figure skater and fellow oatmeal lover. You can her blog, Confessions of Crystal, and check out her Instagram,@crystalchilcott.

TOAHey Crystal! How was your week?

CrystalHi Lauren! It is the week before finals, so my week has been stressful! Luckily, exercising helps me relieve stress and I find cooking relaxing…except for when I melted a plastic spoon yesterday! How was your week?

TOAYikes! My week was pretty eventful. I only exercised twice…which is actually fantastic when you consider that I was out of commission for three days with a kidney stone!! Yes, you read that correctly. A kidney stone.

CrystalA kidney stone!? That sounds awful. Are you feeling better?

TOAYes. I passed it in record time and recovered pretty quickly. On Tuesday, I was finally able to enjoy a run. And when I say “enjoy,” I mean I actually enjoyed it! I jogged two miles, and I felt so strong and invigorated the entire time, until the last tenth of a mile or so. The strength exercises afterwards went beautifully, too. However, the next day, I worked out again and it didn’t go as well. I had a side ache immediately, and my strength exercises felt like torture. Why does this happen? How come some days I feel so much more energetic than others?

CrystalI’m glad you’re feeling better! It’s frustrating to follow a great day with one that feels like a struggle. Do you have different sleeping or eating habits on the days when you feel less energetic?

TOANot that I can think of. Is it not a great idea to do my routine two days in a row?

CrystalIt depends on your body and how fast you can recover, but it wouldn’t be a bad idea to have a rest day between each run, especially as you adjust to your new routine. Would you like to try that this week and see how it goes?

TOAYes. Maybe this time the weather AND my kidneys will cooperate! How about the routine itself?

CrystalLet’s keep it the same for one more week. If it goes well this week, we’ll tweak it for the following one.

TOAGreat! I’m really going to shoot for three days this time. Talk to you next week!

    Getting Fit #2, Plus Crystal’s Recommended Recipes

    TOA: Hey Crystal. How has skating been going for you this week?

    Crystal: Hi Lauren! Skating is going well! I competed last weekend and was happy with my skate. How did your exercise go this week?

    TOA: As well as it could, I suppose. I hated it immensely, but I felt great once I finished! Earlier this week, I ordered some new running shoes and running clothes. The shoes showed up today, and I was able to wear them for the first time today. More importantly, I ran two whole miles!

    The first time I did the strength exercises, it was the worst and I hated you for making me do them. However, the second time (after my two-mile run) it was so much easier. I whipped through the sets, no problem.

    Crystal: Congratulations on running the full two miles! New work out clothes and running shoes are always a good motivator! I’m happy you stuck with the exercises even if I did give you a good reason to hate me. You’ll thank me later! Was there anything in particular that you struggled with?

    TOA: Not really. The first time I did the strength exercises, every squat and push-up (even a modified one!) felt impossible. I would go down barely an inch and feel like I was going to collapse. For the next three days, I was incredibly sore. (Luckily, I couldn’t do my exercises for those days anyway because it was pouring rain.) I feel like I built up an incredible amount of strength already just between the first and second time. Next week, should I follow the same routine, or are you going to make it….(I’m cringing right now)…harder?

    Crystal: Let’s keep it the same another week, though if you feel ambitious, you could try unmodified push-ups…even just one! How many days did you run this past week?

    TOA: Only twice because of the rain. Should I try for three this time?

    Crystal: Yes, try for three! Hopefully the weather will cooperate! It is supposed to be in the 80s and sunny here in Colorado.

    TOA: Lucky you! We’re experiencing the upper 60s. Now, let me ask YOU some questions! Do you have a favorite oatmeal recipe?

    Crystal: Picking just one is hard! I made your new bananas foster recipe today and that was fantastic! I love baked oatmeal, especially strawberry banana. My all-time favorite oatmeal recipe is your pumpkin pie baked oatmeal. I love how it makes my whole townhouse smell like Thanksgiving!

    TOA: Mmm, yes. I like how the Peanut Butter Cookie Baked Oatmeal makes my apartment smell like peanut butter cookies. What made you interested in oatmeal?

    Crystal: That’s another favorite! When I was in elementary school, I actually hated oatmeal! My sister always ate dinosaur egg instant oatmeal and it really grossed me out. When I moved to Colorado and started cooking for myself, I looked for a healthy, whole grain breakfast and gave oatmeal another try. When I discovered that there were more options than just dinosaur eggs, I grew to love it! It is filling enough to give me lots of energy to skate, but never upsets my stomach.

    TOA: That’s why I tried (and fell in love with) it, too—it was easy on my stomach.

    Oatmeal Recipes for Lemon Lovers

    Whenever spring rolls around, my porridge palette changes. My craving for peanut butter-laden recipes dwindles slightly, and I suddenly desire bright and fresh flavors. Suddenly, the bottle of lemon extract becomes my favorite ingredient and gets moved to the front of the shelf. Does anyone else experience a similar phenomenon?

    To celebrate these warmer days and sunnier afternoons, here are my five favorite lemon recipes on the blog. If you haven’t done so yet, you should really invest in some lemon extract. I found mine at Whole Foods. 🙂

    Oatmeal Recipes for Lemon Lovers

    My favorite. I think this recipe is truly what solidified my love
    for lemony recipes. There is something about the lemon-and-coconut combo
    that is just outstanding. However, this is actually just a standard lemon oatmeal
    with a coconut topping; you can play around with this using a variety
    of toppings! See also: Lemon Kiwi and Lemon Blueberry Oatmeal.

    Odd? Not really. It may seem odd in theory, but once you taste it, you’ll
    see that these flavors are meant to be together. Thyme can do magical
    things, especially when paired with fruit! (Not vegan.)
    Lemon Poppy Seed Oatmeal 
    (Baked or Stove Top)

    Who doesn’t love lemon poppy seed muffins? Well, I guess I didn’t like them
    for the first couple decades of my life…but I eventually came around. 🙂 This
    post actually contains two recipes: one for a baked version, and another for a stove top version!

    If you like your oats baked, this is a great option for you. The recipe calls for
    fresh lemons to make the oatmeal extra fresh and invigorating.

    And finally, I’ll end with a recipe for my overnight fans (I know there are
    many of you!). Although it’s more difficult to hide the banana flavor in
    an overnight recipe, this oatmeal is still delightfully refreshing and lemony.
    Psst…if you add poppy seeds to this recipe, you’ll have an easy
    and lovely overnight jar of Lemon Poppy Seed Oats!

      Oatmeal Recipes for St. Patrick’s Day!

      As I said earlier this week, I’m slightly offended by the American celebration of St. Patrick’s Day. It’s like a giant caricature of Irish culture.

      That being said, there is a legitimate history behind the color green for St. Patrick’s Day. I turned to Wikipedia, holder of all truth and authenticity, to explain:

      Originally, the colour associated with Saint Patrick was blue. Over the years the colour green and its association with Saint Patrick’s Day grew.[13] Green ribbons and shamrocks were worn in celebration of St Patrick’s Day as early as the 17th century.[14] Saint Patrick is said to have used the shamrock, a three-leaved plant, to explain the Holy Trinity to the pagan Irish, and the ubiquitous wearing and display of shamrocks and shamrock-inspired designs has become a feature of the day.[15][16] In the 1798 rebellion, to make a political statement, Irish soldiers wore full green uniforms on 17 March in hopes of catching public attention.[13] The phrase “the wearing of the green”, meaning to wear a shamrock on one’s clothing, derives from a song of the same name.

      Oatmeal Recipes for Salty-Sweet Lovers

      Almost an entire three months ago, someone asked me on the train if I preferred salty or sweet (we had been discussing food for several stops). I paused, and then said salty. My roommate/friend/coworker responded, “Really? You seem like you’re more of a sweet person. All your oatmeal recipes are sweet.” I considered that, and the question has been haunting me since November.

      I finally realized that I like both equally. In fact, I’m one of those people that adore salty-sweet combinations. Pretzels dipped in chocolate? YES. Pineapple on my (cheeseless) pizza? YES. Cranberries in my sauteed brussels sprouts? Absolutely. Salt on my oatmeal?

      YESSSSS.

      If you’re a fan of the salty-sweet combos like me, here are five of my favorite salted oatmeal recipes! Have you tried them all yet?

      Oatmeal Recipes for Salty-Sweet Lovers

      This will sound dramatic, but I do believe this recipe is the Holy Grail of
      my blog. Even if it is no longer the most popular post, I still think it was one of
      the first ideas I had that took my creations from “basic” to “trendy and creative.”
      You must try this if you haven’t. Just make sure you try the updated version; it’s
      been vastly improved!

      I love, love, love this recipe and wish I bought apples more often just
      so I could make it. I’ve learned that almost whenever you combine maple syrup with salt,
      you’re bound to end up with a masterpiece. This is Exhibit A.

      This recipe was not originally intended to be salty. I was initially just planning
      on making a chocolate pear porridge, but if you follow this blog, you know that I simply
      despise pears, so this recipe was doomed from the start (at least by my taste buds).
      Unsurprisingly, I was disappointed in the results. Unwilling to settle for an unsatisfactory oatmeal
      experience, I sprinkled some salt on top. BAM. Problem solved. That minuscule pinch of salt
      took this recipe from a C- to a solid A.

      During the holiday season, I experimented with chestnuts in oatmeal. After
      discovering that they lacked in any sort of groundbreaking flavor, I gave it the pear
      treatment (AKA mixing it with chocolate and topping it with salt–duh!). Once again,
      problem solved.

      This recipe sticks out a bit on this post due to the fact that it’s the only one
      not topped with salt. Instead, it incorporates a savory ingredient–(veggie) sausage–that
      truly makes it a stellar dish. Whenever I make this, I make a billion servings’ worth
      so I can eat it for breakfast AND lunch for an entire week (I’m only slightly exaggerating).

        Best of 2013

        One more year has passed, which means my blog is just over a year and a half old now. Like I said a year ago, I can’t believe I was able to stick with something for this long! Can you believe I’ve been pumping two to three original oatmeal recipes every week for a year and a half? How is that even possible? How is it possible that I still have ideas left?

        Much to my great pleasure and gratitude, 2013 was a great year for me. I began my partnership with Country Choice Organic, started my Facebook fan page, introduced the Oatmeal Enthusiasts series, was featured on the Huffington Post and Buzzfeed, celebrated my first FoodGawker acceptance, and–last but not least–this happened.

        With all of that peppered throughout my exhausting first and second school year in urban education, my life seems pretty satisfying right now. Being tired and stress most of the time, it’s not until moments like this that I actually have time to reflect on how great my year has been–with many thanks to this site and all of you for supporting it!

        Here are my most popular OR personal favorites from 2013. I had to change the categories a bit from last year (because “Best Stove-Top Oatmeal” is way too overwhelming of a competitive field!). I also added categories (because I’m the boss and I can do that). Feel free to comment with recipes you think are missing from the list. 🙂 I love hearing your thoughts on this!

        1. Fan Favorite Recipe
        Brownie Batter Oatmeal: I love this oatmeal (although I tend to make the peanut butter version), and–by making it the most-viewed recipe posted in 2013–you all demonstrated that you share this love! Not only did it receive tons of views, but it also gathered double the amount of comments of my other popular recipes.

        2. Pinterest Queen
        Chocolate Banana Overnight Oatmeal: I was originally horrified when this recipe became a hit because I hated the photos for it. I was mortified every single time I saw it repinned. Luckily, I found the time to redo them, and now I love sharing this recipe with others! This oatmeal received the most “repins” than any other recipe born in 2013 (although it may never catch up with Peanut Butter and Banana Baked Oatmeal, which currently has over 500 repins!).



        3. Best Steel-Cut Oatmeal
        Pumpkin Pie Steel-Cut Oatmeal: Of course a pumpkin pie recipe made it on the list–you all proved this year with the mega hits my other recipes received from you that you love pumpkin pie oatmeal! I always loved all of the pumpkin pie recipes, but something was truly special about the steel-cut version. I made it for my roommates, and they all moaned in appreciation as they ate it. When I tried it myself, I had to agree that it was absolutely decadent–except it was sweetened entirely with dates!






        4. Best Baked Oatmeal
        Pecan Pie Baked Oatmeal: This oatmeal received more page views and repins than any other baked oatmeal recipe in 2013. I can understand why; it’s fabulous. However, I’ll be the first to admit that it’s more of a dessert than a breakfast, but hey, there are oats, so…fiber? 🙂




        5. Best Savory Oatmeal

        Sweet Potato & Soyrizo Oatmeal: This combination is incredible. It’s one of the few savory recipes that I’ve made multiple times. I didn’t even look up how many views, comments, or pins my savory recipes received this year; I simply made the executive decision that this one is the best. Deal with it. 🙂

        6. Best Stupid-Easy Oatmeal
        Applesauce Oatmeal: I scared some readers off when I said the words “homemade applesauce,” but seriously…I made it in the microwave. I sliced the apples, added some cinnamon and other spices, and steamed in a covered container. After a couple minutes, I took it out and mashed it up easily. All that was left to do was stir it into the eagerly awaiting oats. EASY.
        7. Best Labor-Intensive Oatmeal
        Grilled Peach Steel-Cut Oatmeal: I had to grill a GD peach, for Quaker’s sake!

        8. Best Non-Porridge Recipe

        Banana Chocolate Chip Oatcakes: The fact that I was able to eat these while suffering from food poisoning tells you how delicious they are. I fought through the pain for each decadent bite!

        9. Best Unusual Oatmeal

        Strawberry Basil Oatmeal: I loved seeing how many of you were brave enough to try this one (and you all agreed that the results were fabulous)! Oh yeah, and if you added the optional balsamic reduction, you are officially an honorary Oatmeal Enthusiast.



        10. Best Muesli

        Cookie Dough Muesli: Personally, I’d rather have Autumn Muesli, but my readers showed their preference loud and clear by giving Cookie Dough Muesli the most views, comments, AND repins. Additionally, I also received a slew of Tweets from readers who had tried and loved this recipe. Fine, Cookie Dough wins. 🙂

          Crowd-Pleasing Recipes for a Holiday Breakfast

          I originally planned on posting a new recipe this morning, but the pressure of posting something “holiday related” became too much. Instead, I realized some people may be hosting a Christmas breakfast tomorrow morning, and perhaps oatmeal will be involved.

          (In my perfect world, oatmeal would be served at every morning gathering and everyone would love it as much as you and I do. Sigh.)

          Nothing says Christmas more than the intense spices of gingerbread! Unlike
          the cookies, this oatmeal would make an incredibly nutritious holiday breakfast; it’s
          entirely sweetened by bananas! Not a banana fan? No worries–the cinnamon, cloves,
          and ginger make that banana entirely undetectable.
