Banana Chocolate Chip Oatcakes for One
The poll results are in! I must say, when I created the survey, I was nervous. I feared that nobody would respond, and it would remind me to be humble and that nobody actually reads my blog. Much to my delight, I got over 100 responses (the free service caps out at 100)!
So for you guys, I made these:
Peach and Almond Butter Oatmeal
Guys, I might have a new favorite oatmeal recipe. I mean, I love the Baked Peanut Butter Cookie, and the Nutty ‘Nana Berry, and the Neapolitan, but this one has peaches! PEACHES!! And almond butter!! Two things that are amazing on their own are now brought together in this beautiful bowl of happiness.
First, let’s talk about peaches. Juicy. Sweet. Tastes like summer. And then there’s almond butter: rich, but sweeter and milder than its peanut cousin. Because of its milder flavor, it lets the peaches be the star, while still lending that rich, buttery taste.

Top 5 Peanut Butter Recipes!
Last week, I happily binged on some peanut butter, licking it off a spoon to my heart’s desire. Earlier this week, I did it again. Why is peanut butter so GOOD? Creamy or crunchy – I do not care. I’ll even take the flavored varieties from Peanut Butter & Co. (Cinnamon Raisin, anyone?)
As frequently as I create and post recipes on here that include peanut butter, it should be no surprise that it’s my favorite ingredient to use in oatmeal. Here is a round-up of my favorite recipes that feature PEANUT BUTTER!

Maple-Nut Sauce
I was so thrilled to see the feedback for my Berry-Ginger Sauce! You guys unanimously supported the idea of more topping recipes, which is really exciting for me! It’s often hard to have everything on hand to create a new oatmeal recipe, but new topping recipes are comparatively easy to produce.
This one, for example, is only two ingredients, and it goes beautifully with the French Toast Baked Oatmeal from earlier this week. It would also be delish on Zucchini Bread Baked Oatmeal or Banana / Banana Baked Oatmeal.

Maple-Nut Sauce

Prep Time: 0 min
Cook Time: 4 min
Ingredients (serves 1)
- 1 tbsp creamy peanut butter
- 2 tbsp maple syrup
Instructions
- Add both ingredients to the smallest saucepan you have and heat over low-medium heat.
- Stir until both ingredients are combined. If a spatula isn’t working for you, try a whisk.
- When the sauce begins to bubble, stir continuously as it simmers for another minute or two. Then, remove from heat.
- Add to oatmeal (or pancakes!) immediately. It will thicken up quickly (of course, if you want to use this as a “frosting,” you could intentionally let it sit for a while!).

Elvis Oatmeal
When my roommate told me that NYC was still without power below 26th Street, a few places ran through my head. What did Union Square look like? Was Trader Joe’s all right? Did Beyond Sushi weather the storm?
And what about PEANUT BUTTER AND CO.??!!
If you haven’t heard of Peanut Butter and Co., it’s a tiny little shop on Sullivan St. (off Bleecker St.) that specializes in peanut butter sandwiches. I’m serious: check out their menu. It’s one of my absolutely favorite places in the city. Not only do I love gourmet peanut butter sandwiches, but the staff there is positively delightful, and the decor is retro and fun.
Baked Banana Oatmeal & Variations
If I wanted to, I could create ten billion recipes of just baked oatmeal based on bananas. So many possibilities!
I liked that idea at first: more posts, right? However, I didn’t want to look like a cheater. Is it fair to share a recipe for baked banana oatmeal, and two days later, post a recipe for baked chai-spiced banana oatmeal?? Nope. Pumpkin Nut Butter Oatmeal
It’s so appalling to consider how I used to hate pumpkin. Why were my taste buds so worthless for twenty years?! Recently, I’ve been a fiend for anything and everything pumpkin.
I’m also a fiend of anything nut or nut butter related. I recently saw a pin for a recipe for pumpkin oatmeal topped with almond butter, and I quickly logged the idea on The List. (Unfortunately, I cannot find this recipe for the life of me. If you know what I’m talking about, please comment below so I can give inspiration credit to the original poster!)

Apple Nut Butter Baked Oatmeal
My favorite snack ever is apples and peanut butter. I don’t understand why people put caramel on apples. Gross! Peanut butter is ten times better.
So naturally, I really liked this oatmeal. Normally, I would just title this “Apple Peanut Butter Baked Oatmeal.” However, I went all out this week and bought ALMOND BUTTER for the first time! What a great combination! Still, I have absolutely no doubt that peanut butter would be magical, if not better than the almond butter. 🙂 (more…)
Peanut Butter Cookie Baked Oatmeal
I am a terrible conversationalist. When I have stories to tell, I find myself lost in conversation with someone, but when it comes to small talk, there’s no hope for me. In these types of situations, if no one says anything for a couple of minutes, I clear my throat and say:
“What are your three favorite types of cookies? Go!”
Initially, people give me an odd look. Or they ask why. Or they say, “I don’t know.” Eventually, however, they get sucked in to the infinite awesomeness of my go-to game. Within twenty minutes, I have them listing their favorite color combinations, U.S. cities to visit, car models, NFL teams, and ethnic cuisines. (more…)
PB&J Baked Oatmeal
I love peanut butter and jelly so much, it hurts. [/cliche]
During the first week of school last week, I ended up filling out a couple different get-to-know-you surveys that asked for my favorite food. I first wrote down “oatmeal,” but then I scratched it out and wrote “grilled PB&J sandwich.” As it turns out, that’s a foreign concept to a lot of people. What a shame. (more…)
