Spiced Banana Oatmeal with Java PB2
As promised, I made a banana version of the Spiced Pumpkin Oatmeal with Java PB2. I always follow through with my promises, right?
Considering I’ve already explained the influence behind this post, I’ll just do some quoting. It started in my Banana, Mango, & Cardamom Oatmeal:
I finished my PB2 and cocoa powder before the move to Brooklyn, and at my new apartment, I decided not to buy more. Why? Because it’s all I wanted to eat. Every day. My blog was begging for new recipes, but all I ever wanted to eat was Fudgy Banana & Peanut Butter Oatmeal or Berry Blackout Oatmeal or Mocha Brownie Batter Oatmeal with Almond Butter.
. . . So I’m challenging myself to not keep those two ingredients in the apartment for a couple weeks to see what I can create in the morning without them calling my name.
The idea for this recipe actually came from my banana soft serve. I usually flavor my banana soft serve with cocoa powder and top it with PB2 (shocking, right?). Since I couldn’t do that, I had to get creative.
Spiced Pumpkin Oatmeal with Java PB2
Hello, friends. Meet the newest take on Pumpkin Spice Latte Oatmeal.
That’s right. As I am always eager to find a way to add nut butter to every recipe, I developed a different way to enjoy the most famous Starbucks drink in oatmeal form. The oatmeal is a simple pumpkin spice, made exactly like my Pumpkin Pie Oatmeal. Then, it is topped with a wonderful flavor twist on nut butter: PB2 laced with coffee!
I polled you all on Instagram several weeks ago, asking how early is too early for a PSL recipe. Nobody seemed to mind that it was early August, but I managed to hold out until mid-September. Go me.
Chocolate Hazelnut PB2
PB2 is magical! You can do so much with it. I finally bought hazelnut extract (primarily because I bought a second spice rack and I needed to fill it out haha), and I was so excited to try out this Nutella-hack.
As much as I frequently eat PB2 as is, I also enjoy making fun “spins” of it (see: Faux-reo Cookie PB2). Truthfully, I’ve only had Nutella a couple times (pre-vegan days), and I was always assaulted by how cloyingly sweet it was. I much preferred PB&Co’s Dark Chocolate Dreams, as I’ve mentioned before.

Elvis Oatmeal
When my roommate told me that NYC was still without power below 26th Street, a few places ran through my head. What did Union Square look like? Was Trader Joe’s all right? Did Beyond Sushi weather the storm?
And what about PEANUT BUTTER AND CO.??!!
If you haven’t heard of Peanut Butter and Co., it’s a tiny little shop on Sullivan St. (off Bleecker St.) that specializes in peanut butter sandwiches. I’m serious: check out their menu. It’s one of my absolutely favorite places in the city. Not only do I love gourmet peanut butter sandwiches, but the staff there is positively delightful, and the decor is retro and fun.

The idea behind this recipe began a while ago, but I’ll take you back even further: I highly admire several food activists fighting Big Food these days. One of my idols right now is Andy Bellatti, a registered dietitian from Seattle. He’s one of the best tweeters, constantly posting clever, educational, and witty updates. He’s also friendly and helpful, and he always answers any questions I ask him.
One of these questions popped up about a month and a half ago. I saw that bizarre PB2 product at the store; it’s basically a jar of dried peanut butter, in the form of powder. I rolled my eyes the first time I saw it, but then I couldn’t stop thinking about it later. Think of the possibilities! And what would it be like in my oatmeal? Wouldn’t it be like using cocoa powder instead of chocolate syrup (not to suggest chocolate syrup is in any way nutritionally similar to peanut butter!)?
