Topping: Cheesecake PB2
This recipe tastes like peanut butter (or, at least, PB2), with a creamy tang. It’s not quite like biting into a slice of cheesecake because the PB2 flavor is still pretty pronounced, but the two flavors together (with the richness of the cream cheese) is really quite pleasant. After all, peanut butter is a hugely popular ingredient in variations of cheesecake! They are a great match.
Topping: Butter Pecan PB2
There are some things that you just accept you will never have again as a vegan. However, innovative companies and restaurants are increasingly proving me wrong. In the past year or two, I have had some incredible mozzarella sticks, chicken and waffles, fried fish fillets, cheesy grits, croissants, cupcakes, snickerdoodle cookies, pepperoni pizza pockets, scrambled eggs, mac and cheese, milkshakes, caramels, and tiramisu–all vegan.
Thus, there’s no reason vegans can’t enjoy butter pecan as well! I decided this would make a better PB2 topping than an actual porridge recipe, and instead of using butter extract, I opted for Earth Balance. But then I decided a little drop of butter extract is a nice touch, too. After trying it all three ways, I decided the version using both produced the best result.

Chocolate-Covered Strawberry Oatmeal (with Chocolate PB2 Sauce)
I always liked the idea of an oatmeal dedicated to chocolate-covered strawberries, but I figured I basically already had one with my Chocolate Strawberry Oatmeal. However, I’ve recently been making a thin chocolate PB2 concoction and using it as a sauce over my banana soft serve, and that gave me inspiration for this recipe.
I don’t cook strawberries in the oatmeal often, as I love the juicy freshness they provide as a topping (uncooked). But every now and then, a recipe idea comes along in which cooked-down berries are the most fitting. Not every recipe can be fudge-based, and pink porridge is delightful. ? (more…)
Peppermint Fudge PB2
Shout out to my bulk-sized cocoa powder and PB2! The sad part is that I can finish both in less than a month. I buy the cocoa through the subscription program on Amazon, and it’s delivered to me monthly. I often have to supplement with a small Trader Joe’s container of cocoa powder by the end of the month. See also: my hot chocolate addiction.
I’m such a sucker for mint chocolate flavors. There’s a reason Thin Mints were always my favorite Girl Scout cookie. (Coincidentally, they are also the only vegan version. Hizzah!) If you like Thin Mints, or Andes mints, or any sort of chocolate-mint concoction, you will love this Peppermint Fudge PB2 (as well as my Thin Mints Oatmeal or Peppermint Brownie Baked Oatmeal)!

White Chocolate Cranberry PB2
I’ve been making many PB2 recipes lately. One day I was sitting on the L Train platform at Bedford Avenue, waiting. And waiting. And waiting.
And then I thought of a PB2 flavor. I added it to The List. I thought of another. Added it The List. Thought of another. And another. And another.
By the time the train showed up, I had almost 20 PB2 ideas on my phone.
And this one’s the best.

Salted Fudge PB2
Continuing yesterday’s sweet-and-salty trend, and last week’s flavored PB2 trend, let me introduce you to my newest creation:
Salted Fudge PB2!
This recipe is admittedly fussy when it comes to pairing it with the right oatmeal base (not every recipe enjoys being paired with salt!). I had this on Sweet Potato Fudge Oatmeal, but I could see it working in a few others, too. One that immediately comes to mind is Chocolate Chip Cookie Baked Oatmeal. I love salted chocolate chip cookies. It would be nice as the frosting on top of Brownie Baked Oatmeal as well! (more…)
Salted Pretzel PB2
Assembling that peanut butter post last month really made me crave some fancy nut butters. But daaaaang, they’re so expensive! I’ve found some jars for nearly $20. No thanks. Especially not on my measly student loans.
I’ve recently started consoling myself by making my own fancy flavors. Technically, you can do this with any nut butter, especially a brand that stirs easily. However, PB2 is easy to work with because you can make it as thin or thick as you’d like, so it’s super easy to mix in other ingredients. Or, you can do what I like to do: use half-PB2 and half-traditional peanut butter. Boom. (more…)
Scotcheroo Oatmeal
TOMORROW is my 2-year vegan anniversary (aka my vegan-versary!). To celebrate, I made this beautiful baby that I’ve been trying/failing/trying/failing/trying/failing for quite some time now. But here it is, the most successful version.
Not sure what Scotcheroos are? No worries—you’re not alone. I myself had much confusion regarding this title, but now I can confidently give you the low-down.
Growing up, I was familiar with two similar bars: Rice Krispy bars and Special K bars. I had never heard of a Scotcheroo. However, I eventually learned that what I was calling a “Special K” bar was actually a Scotcheroo. To be a Special K bar, it has to be made with Special K cereal . . . duh. (more…)
Cherry-Berry Oatmeal with Chocolate PB2 and Toasted Coconut
I used to have a strong aversion to cooking my fruits in my oatmeal. What was the point of having fresh fruit if I were just going to boil it to oblivion in my oatmeal? However, I’ve recently come around.
First of all, the flavor is astounding. Second of all, it’s a perfect solution if you’re working with frozen fruits (as I often am when it comes to cherries). And third of all, you can still include fresh chopped berries that you add in later, so it’s the best of both worlds.
This recipe reminds me of my Black Forest Oatmeal, and I almost called it Black Forest Oatmeal 3.0 (since I’ve made so many versions of this particular flavor). However, I decided against it.
I used chocolate PB2 (obviously), but you can sub in any chocolate nut butter (yes, including Nutella), or you can take regular peanut butter and mix in cocoa powder–and maybe some sweetener if you think it’s necessary.

Cherry-Berry Oatmeal with Chocolate PB2 and Toasted Coconut
What you'll need:
- 3/4 cup milk of choice
- 1/4 cup quick cook steel cut oats
- 5 frozen or fresh cherries, pitted and halved
- 5-10 fresh strawberries (frozen not recommended)
- 1/4 tsp vanilla extract
- pinch of salt
- serving of chocolate PB2 or nut butter* (OR Faux-reo Cookie PB2)
- unsweetened coconut flakes or chips
- optional: chocolate chips, chunks, or chopped dark chocolate; almonds; strawberries for garnish
For topping
How to make it:
- Add liquid to a saucepan over medium heat. Bring it to a low boil and add oats. Reduce heat to medium low (it should be at a simmer).
- Add halved frozen cherries.
- Dice strawberries (the smaller, the better, in my opinion) and add HALF of them to the oatmeal along with the vanilla extract and salt.
- While you wait, toast your coconut. In a small skillet over medium low heat, add a handful of coconut. Shake the skillet occasionally so the coconut toasts evenly. When coconut starts to show tooasty golden goodness, remove from heat and set aside.
- When you're pleased with the consistency of the oatmeal, stir in the remaining strawberries, and then transfer to a bowl. Add a splash of milk, chocolate PB2, and toasted coconut, and any other optional toppings.
Just an FYI:
* You can make your own chocolate nut butter or PB2 by mixing in a teaspoon of cocoa powder. If desired, you could also add sweetener.

Cookies and Cream Overnight Oats [Guest Post]
TOA: Special shout out to Kelsey! She suggested making a cookies and cream overnight oatmeal, and I said her idea sounded brilliant and she should try it out herself. Being fantastic, she went to work right away and delivered this perfect recipe. I can’t wait to try it in my kitchen!

My name is Kelsey; I’m a math grad student at the University of Virginia and a major oatmeal fanatic. Before we get to the recipe, let me just say that I am so excited to be writing this guest post. I’m a big fan of the blog, so rest assured there was some major fangirling going on when Lauren brought up the possibility of writing this post.
My story is very similar to hers (digestive issues, transition to veganism, cutting out almost all added sugar, etc.), so I’ve always really related to the content on the blog. Oatmeal is one of my main creative outlets as far as food is concerned so I really love experimenting with new ingredients and flavor combos.
The newest flavor oatmeal in my life is Cookies and Cream. It plays off of Lauren’s faux-reo PB2 recipe, which is basically oreo cookie butter, and employs overnight oats, my new go-to afternoon snack. (more…)
