Unlike the linked recipe above, which blends the red bean paste into the oats, this recipe layers the paste into a parfait with Matcha Yogurt Overnight Zoats. This combination seemed obvious, given how often these two flavors (matcha + red bean paste) are combined in various desserts. (more…)


Matcha Yogurt and Fudgy Overnight Oats Parfait

While I prefer unsweetened yogurt for my usual snacking (on the rare occasion that I do snack on yogurt), I went for vanilla-flavored yogurt for this recipe. Instead of mixing it up in the morning when the overnight oats layer was ready, I made it at the same time as the overnight oats, thus allowing the matcha flavor to “rest” with the yogurt. I don’t know the science behind it, but I think this improves the matcha flavor.

Tres Leches Baked Oatmeal Parfait (with Cashew-Yogurt Cream)

Consider this more an homage to the real deal. Actual tres leches cake involves a ton of dairy ingredients that is elusive to us humble vegans. I know there are recipes for vegan sweetened condensed milk out there, but my motto is always simplicity. Considering I already had to soak cashews for this recipe, I’m not about to make a sweetened condensed plant-based milk as well. I HAVE MY LIMITS. 🙂

Alright, so I had this super idea for an oatmeal regarding my beloved Pseudo Vegan Lemon Curd. It would have been perfect, but my uncharacteristic carelessness came back to haunt me. Choco-Pumpkin Baked Oatmeal Parfait

I made this recipe weeks ago, but it took me forever to share it because I didn’t like the pictures. Once I edited them, I realized they weren’t that bad, but still nothing great.

Caramel Apple Oatmeal Parfait

For my readers who have been around since the beginning: can you tell I’m not as into apples as I used to be?

I used to love them so much. They were the first “health food” I hooked myself on when I started weaning myself off processed foods. I would honestly eat two or three apples a day to keep myself from eating crap like Doritos or ice cream. When I started buying organic food, apples and bananas were pretty much the only produce I could afford. When I fell in love with peanut butter, I would eat sliced apple with peanut butter every afternoon when I came home from my last class of the day during my junior and senior year in college.

You can see that obsession in my early recipes. So. Many. Apples. I’m not sure when it happened, but during my year in Newark, the love affair ended. I started having stomach issues (mainly bloating) after eating apples, and I found bananas and oranges to be less abrasive. The apple recipes faded away.  (more…)

I’m growing pretty tired of the term basic and its association with pumpkin. I could rant about the word basic as a yet another derogatory label for women, but I don’t think that has a place on my blog, so I’ll just stick to the pumpkin part.

Strawberry Pretzel Overnight Oatmeal

Strawberry pretzel bars are a bake sale, potluck, and picnic favorite. They are a lovely blend of sweet and salty. They begin with a bottom “crust” of crushed pretzels. Above that is a thick layer of cream cheese. Finally, the top layer is jello-fied strawberries.

‘Murica Overnight Oatmeal Parfait

The irony of this post is that I’m actually one of the least patriotic people you will ever meet. It’s not that I’m not happy to be in America; I just don’t care to celebrate it with some of the most annoying songs ever and the most obnoxious outfits of all time. Like seriously, calm down, Toby Keith.

(I should clarify that I by no means take my liberties for granted or do not respect those who protect our country; I just think that our flaunting of patriotism is what gets us so much flack from the rest of the world! Why do you think nobody likes Gretchen Weiners?)

Brownie Baked Oatmeal Parfait

I feel like I picked the right time to go herbivore. It’s so exciting to watch new vegan products pop up on mainstream grocery shelves all the time. It seems like every time I go to the store, I find a new vegan product. Now, I try not to fill my diet with mock meats and fake dairy, but it is amusing to experiment with them from time to time.My local produce market, which understandably has a tiny dairy section, just added Almond Dream yogurt to its selection. They only carry two flavors–coconut and strawberry–but I am completely fine with that. The coconut flavor is one of my favorites anyway.

To celebrate, I made this parfait. I typically eat one of my banana/peanut butter recipes on weekends, so I actually had to FORCE myself to make this. I think I pouted the entire time until I was finally spooning the results into my mouth. Then the sacrifice seemed worth it.
