Cinnamon Raisin PB2
Does this oatmeal look familiar to you? It should! It’s actually Monday’s Cardamom Butternut Squash Oatmeal.
I wanted to top this oatmeal with cinnamon raisin peanut butter, but I had just finished my jar of it. Then I remembered I could recreate it with PB2.
German Chocolate Cake Oatmeal Bites
I’m extra excited about this recipe. These little energy bites capture the flavors of my German Chocolate Oatmeal with a quarter of the hassle and an eighth of the pecans.

Raspberry Almond Butter Oat Smoothie
Yes, I know. I’m all about raspberries right now. I guess you could say I’ve been compiling a list of raspberry ideas, and now that they’re finally affordable, I’m blazing through all of them.
Salted Rosemary Brownie Batter Oatmeal
A few months ago for my birthday, my BFF Kate gave me a box of chocolates from the vegan company Lagusta’s Luscious. One of the flavors was rosemary sea salt caramel, and considering my love of all things rosemary, this was absolutely my favorite of the bunch. Since then, I knew I had to make this flavor combo an oatmeal recipe.

Raspberry and Chocolate Tahini Oatmeal
Vibrant and fruity oatmeal topped with a fudgy scoop of tahini? Oh, yessss.
Topping: Cheesecake PB2
This recipe tastes like peanut butter (or, at least, PB2), with a creamy tang. It’s not quite like biting into a slice of cheesecake because the PB2 flavor is still pretty pronounced, but the two flavors together (with the richness of the cream cheese) is really quite pleasant. After all, peanut butter is a hugely popular ingredient in variations of cheesecake! They are a great match.
Topping: Butter Pecan PB2
There are some things that you just accept you will never have again as a vegan. However, innovative companies and restaurants are increasingly proving me wrong. In the past year or two, I have had some incredible mozzarella sticks, chicken and waffles, fried fish fillets, cheesy grits, croissants, cupcakes, snickerdoodle cookies, pepperoni pizza pockets, scrambled eggs, mac and cheese, milkshakes, caramels, and tiramisu–all vegan.
Thus, there’s no reason vegans can’t enjoy butter pecan as well! I decided this would make a better PB2 topping than an actual porridge recipe, and instead of using butter extract, I opted for Earth Balance. But then I decided a little drop of butter extract is a nice touch, too. After trying it all three ways, I decided the version using both produced the best result.

Fig and Dark Chocolate Bites
I had so many elaborate porridge plans for last week. I even bought all the ingredients for them and planned exactly which day I would make them. Then my stove stopped working, so I made these adorable, fudgy, easy, snackalicious truffles instead.

Pineapple Kiwi Oatmeal with Coconut-Peanut Butter
I used to think nut butters didn’t work with tropical fruits. I’ve recently decided that you can make nut butters work with anything if you’re determined enough. The best part about adding a nut butter to a tropical oatmeal is that it brings some earthy, hearty warmth to an otherwise bold and tangy porridge.
Chocolate-Covered Strawberry Oatmeal (with Chocolate PB2 Sauce)
I always liked the idea of an oatmeal dedicated to chocolate-covered strawberries, but I figured I basically already had one with my Chocolate Strawberry Oatmeal. However, I’ve recently been making a thin chocolate PB2 concoction and using it as a sauce over my banana soft serve, and that gave me inspiration for this recipe.
I don’t cook strawberries in the oatmeal often, as I love the juicy freshness they provide as a topping (uncooked). But every now and then, a recipe idea comes along in which cooked-down berries are the most fitting. Not every recipe can be fudge-based, and pink porridge is delightful. ? (more…)
