Cantaloupe Date Oatmeal with Mint-Melon Relish
These oats are ~classy AF~
This relish is like a dessert pico de gallo, with cantaloupe instead of tomato and mint instead of cilantro. The purpose of a relish is to add a strong flavor to a dish, and this does just that. It can guarantee maximum flavor and freshness, and it’s a fun way to spruce up a simpler oatmeal.
Watermelon Coconut Overnight Oatmeal
Watermelon + oatmeal has been an equation that I’ve been trying to solve for quite some time. I tried this Melon Berry Overnight Oatmeal last summer. Truthfully, it was okay. But it most definitely wasn’t my favorite. I’ve been dying to give watermelon another try, but I just couldn’t crack the code. How do you make a watermelon oatmeal that is 1) not too runny, and 2) sweet without being heavily sweetened?
I found two answers to this question. One: use coconut milk. Coconut milk (from the can) is so thick and creamy that it would compensate for watermelon’s . . . well, watery-ness. Melon Berry Overnight Oatmeal
So, um . . . . watermelon is not the most photogenic fruit. Forgive me.
Okay, so the idea behind this recipe is that you can endlessly combine various berries and melons together. Here you see blueberry + watermelon, but how about raspberry + cantaloupe? Blackberry + honeydew? Strawberry + cool exotic melon from the farmer’s market (have you ever had a lemon drop melon?!).

Fruit Salad Oatmeal
I must admit that I enjoy being a vegetarian. In the beginning, I struggled with feeling misplaced or left out, but once it fused into part of my identity, I embraced all of its challenges. Limited options on menus means I’ll be less overwhelmed (I’m very indecisive) and more likely to try something new (like eggplant!). Potlucks become a scavenger hunt and careful investigation to discover the meatless dishes on a long table of bacon and ground beef. Thanksgiving and Easter turn into challenging games I like to call “How to Make a Meal Out of Side Dishes.”
Potlucks, especially in Small Town, South Dakota, generally offer less than three vegetarian options (one of which is a basket of dinner rolls). The scalloped potatoes will always include diced ham. The quiche will always have bacon.
But there will always be fruit. Sometimes these fruits are in their raw form: a giant bowl of cubed watermelon or clusters of purple grapes. Other times, they’re mixed together in one bowl: berries and melons and grapes! Sometimes, they’re mixed together in a tasting “dressing,” like honey mint or lemon poppy seed or coconut lime.

Honeydew Overnight Oatmeal
For the most part, I have transitioned beautifully to urban life. I love public transportation, bustling sidewalks, diverse eateries, and city parks surrounded by cement and skyscrapers. The one thing that continues to challenge me is grocery shopping.
I do not own a car in New Jersey, so I either walk or take public transit. I have several different grocery options, but all of which are at least a mile away. This is not a terrible walk, but it can get uncomfortable when I’m lugging heavy grocery bags. Thus, items like melons, squash, and big cartons of almond milk can be a pain.
