Orange Dreamsicle Overnight Oatmeal

When I was younger, my family and I could eat through a gallon of ice cream within a few days. My dad and I would eat bowl after bowl in one sitting. The favorite in our household was plain old vanilla (usually topped with chocolate syrup). However, sometimes my mom got “fancy” and bought us Orange Blossom.

If you don’t know what that is, it’s vanilla ice cream swirled with orange sherbet. Mmmmm. It’s the ice cream version of orange “dreamsicle,” which I believe is one of the world’s best flavors. 🙂


Pumpkin Pie Overnight Oatmeal

My Pumpkin Pie Oatmeal was a hit. The Pumpkin Pie Baked Oatmeal was also a hit. (Confession: despite the fact that the stove-top version has more views, I highly prefer the baked version!) So why not give the people what they want?

Now you can enjoy silky pumpkin pie that practically prepared itself overnight. You’re welcome. 🙂

Funny story: the second time I made this, I accidentally dumped in a spoonful of TACO SEASONING instead of pie spices. Ugh.

Chocolate Chip Cookie Baked Oatmeal

What are your thoughts on sugar?

Personally, I go out of my way to avoid sugar, especially when it’s unnecessary or in large amounts (or both). I find that sugar not only rips my stomach apart, but makes my teeth feel gross and my tastebuds overwhelmed. I’ve learned to appreciate subtle sweetness (like the caramelization of roasted broccoli, for example) far more than the teeth-rotting sweetness of Mountain Dew (yuck).

Sweet Potato Pie Baked Oatmeal

Well, I got a new laptop. I hate to admit it, but there was nothing functionally wrong with my other one. In fact, it was probably the best-working piece of technology I’ve owned for as long as I’ve been old enough to actually use technology. 😉

Why the switch? Well, a 17-inch, 10-pound laptop is not functional for someone who carries her laptop everywhere on her back. Not only is it painfully heavy to lug around, but it barely fits in my backpack! Each day that I had to stuff it into my backpack, the edges and corners got a little more scuffed. Ugh! My mother and I were clearly NOT thinking when we ordered that model.

German Chocolate Baked Oatmeal

I did it! I did it! I’ve been pondering this recipe for months, and it’s finally a reality! Last week, I referenced my list of oatmeal recipes and how many of them were more ambitious, and I was too lazy to attempt them. This was one of those recipes.

Neapolitan Baked Oatmeal

As I typed out this recipe, I couldn’t help but feel depressed. That is because I may be peaking as an oatmeal blogger. I’m not sure if I can ever top this one:

This recipe, you see, is so elaborate, well thought-out, and mouth-wateringly delicious that I’m not even going to bother posting the instructions for a single serving. It’s way too much work for one serving, and it’s way too delicious to not share (or, if you’re like me, eat every morning for a week).

Pumpkin Pie Oatmeal

Yep. My Pumpkin Pie Baked Oatmeal was a hit, so I decided to try it out on the stove as well. 🙂 Everything’s better on the stove, right? Right??

This recipe is perfect because autumn is definitely setting in. I know this because each day when my alarm goes off at 5:35, it’s a little darker outside. 🙁 And each morning, it’s a little chillier on our walk to work. Autumn is admittedly my favorite season, but I’m not a huge fan of those two particular characteristics.

Peanut Butter Cookie Baked Oatmeal

I am a terrible conversationalist. When I have stories to tell, I find myself lost in conversation with someone, but when it comes to small talk, there’s no hope for me. In these types of situations, if no one says anything for a couple of minutes, I clear my throat and say:

“What are your three favorite types of cookies? Go!”

Initially, people give me an odd look. Or they ask why. Or they say, “I don’t know.” Eventually, however, they get sucked in to the infinite awesomeness of my go-to game. Within twenty minutes, I have them listing their favorite color combinations, U.S. cities to visit, car models, NFL teams, and ethnic cuisines. (more…)


Pumpkin Pie Baked Oatmeal

As a planner, I’m always thinking ahead. Far ahead. I’ve already started looking at my options for Thanksgiving, my absolute favorite holiday. My roommate offered to let me spend it with her and her family. My very first question was, “Will there be pumpkin pie?”
