Coconut Sweet Potato Oatmeal
Taking a tip from my Coconut Kiwi Oatmeal, I decided to go for another round of coconut butter. This time, I paired it with sweet potato.
If you haven’t noticed, I’m a major fan of sweet potato in oatmeal. I might even like it more than pumpkin. The only reason I don’t use it more often is because…well…I’m lazy. Sweet potatoes need to be cooked, and that’s annoying. It’s always worth it, though.

Coconut Kiwi Oatmeal
Coconut butter is THE most luxurious ingredient in the entire world. More luxurious than pomegranates. More luxurious than pistachios. More luxurious than dark chocolate.
(Let me get one thing straight: coconut butter is NOT better than peanut butter. However, because coconut butter is a rarity for me, it is more exciting and special. But in the end…peanut butter FTW!)

Berry, Almond, and Coconut Oatmeal
Whenever I make a recipe with coconut, I become angry with myself for not doing so more often. Coconut is so…perfect in every way. Buttery, rich, flavorful. So great.
This oatmeal combines the lovely combination of almonds and coconut, like my Almond Joy Oatmeal. It also contains a hidden banana, so I guess you could say they’re close cousins. The difference is this one tastes a little healthier (without the chocolate, and the addition of fresh berries)! However, these cousins are equally tasty. 🙂

Coconut Mocha Muesli
I’ve been wanting to make this for so long, but I was hesitant to give myself access to the chocolate-covered espresso beans. Self-control is not my strength. I have excellent self-control about items that I know I can’t have (all mainstream junk food, i.e. Doritos) and non-herbie items (a buttery cinnamon roll), but when it comes to “okay” foods (peanut butter, dark chocolate), I have a hard time putting on the brakes!
Alas, I threw those espresso beans in my cart and prepared to make this muesli. I struggled to keep them around long enough and reserve them for this muesli! I think I gained ten pounds from the entire container.
This recipe can be made with three items: oats, espresso beans, and shredded coconut. However, feel free to add extra ingredients like sunflower seeds, walnuts, macadamia nuts, or whatever pleases you. I added walnuts.
Coconut Mocha Muesli
What you'll need:
- 1/2 cup rolled oats (I use Country Choice Organic)
- handful of dark chocolate-covered espresso beans
- 1/8 cup shredded coconut
How to make it:
- Combine all ingredients.
- Serve with milk of choice or yogurt.
Coconut, Honey, and Fig Oatmeal
Last Monday marked my first day of school at NYC. Thanks to my lovely 40-minute commute, this entails me waking up at 4:45 for the next ten months. Thankfully, I love my job. I feel like you have to love your job in order to drag yourself from underneath your electric blanket at 4:45 (yeah, I sleep with an electric blanket in August; don’t judge me!).
Luckily for me and my exhausted self, I’ve enjoyed some fantastic porridges every morning. Feeling particularly ambitious on Monday afternoon, I whipped up FOUR different oatmeal recipes. Yeah. Four. My roommates kept filtering in and out of the apartment, shooting me odd looks as I ran around the kitchen, pulling out seemingly unrelated ingredients and dirtying every bowl and spoon and fork in the cupboards.

Most people associate coconut with summer. It’s tropical, and many pina colada lovers celebrate the hot summer months. I have no shame in admitting that I devour coconut year-round. Honeydew Overnight Oatmeal
For the most part, I have transitioned beautifully to urban life. I love public transportation, bustling sidewalks, diverse eateries, and city parks surrounded by cement and skyscrapers. The one thing that continues to challenge me is grocery shopping.
I do not own a car in New Jersey, so I either walk or take public transit. I have several different grocery options, but all of which are at least a mile away. This is not a terrible walk, but it can get uncomfortable when I’m lugging heavy grocery bags. Thus, items like melons, squash, and big cartons of almond milk can be a pain.

Lemon Coconut Oatmeal
(Hello from the Minneapolis – St. Paul Airport!)
I still can’t believe I hated coconut my entire life. Now, I worship it! Coconut milk, coconut yogurt, coconut butter, coconut shreds…give me any or all and I’ll be a happy lady!
Friday morning, I paired it with lemon. The wonderful thing about being at my parents’ house is having access to all my mom’s extracts. She decorates cakes, so her cupboard hosts nearly a dozen different flavors, from mint to cherry. Normally, I use lemon juice for my oatmeal, but for this recipe, I was able to experiment with lemon extract. OH MY GOSH, I loved the result. It has such a bright flavor, like lemon zest instead of just the juice. In fact, I liked it so much that I had it again this morning. Encore, encore!

Grapefruit Overnight Oatmeal
I’m still disappointed that my Grapefruit-Coconut Oatmeal recipe isn’t more popular. How many glittering reviews do I have to give it before people try it out? What I love about it most is that the oatmeal and coconut milk mellow out the bite of the grapefruit, leaving you with just the sweet, citrusy flavor of the grapefruit. No bitterness! The only thing I don’t like about it is the prep work; segmenting grapefruits is such a bother.
Well, here’s a way to save some time. You can do the prep work the night before, and you’ll be able to wake up to delicious grapefruit oatmeal in the morning without dirtying a knife!

Black Forest Cake Overnight Oatmeal
You all said to me that you wanted more overnight oatmeal recipes, and this is one that will start your day right. I mean, what could be better than waking up to a BLACK FOREST CAKE!?
This recipe was a tough cookie to crack. Much to my disappointment, cherries are not the most flavorful ingredient, especially in its whole form. Their flavor is locked in within that fragile skin.
The first time I made it, I dropped the berries in whole. In the morning, the oatmeal was very flavorless and did not taste at all like a Black Forest Cake. Then, I tried something a little different: Â I blended the cherries first, so the oatmeal soaked up “cherry juice,” which gave it much more flavor.
