Grapefruit Avocado Oatmeal

Don’t freak out. I know it looks and sounds strange, but…just give it a chance!

015

It’s verging on a savory oatmeal, but it’s definitely still sweet. It’s inspired by one of my favorite salads, grapefruit segments and avocado slices piled on a heap of spinach. Mmmm. If you’re hankering to try savory oats, but are still too scared to make the jump, this might be a good transition recipe for you. The grapefruit is flavorful, but the avocado is rich and creamy. As long as you like avocado (and I really, really do), you’ll enjoy this.

Grapefruit Overnight Oatmeal

I’m still disappointed that my Grapefruit-Coconut Oatmeal recipe isn’t more popular. How many glittering reviews do I have to give it before people try it out? What I love about it most is that the oatmeal and coconut milk mellow out the bite of the grapefruit, leaving you with just the sweet, citrusy flavor of the grapefruit. No bitterness! The only thing I don’t like about it is the prep work; segmenting grapefruits is such a bother.

Well, here’s a way to save some time. You can do the prep work the night before, and you’ll be able to wake up to delicious grapefruit oatmeal in the morning without dirtying a knife!

Orange, Maple, and Pecan Oatmeal

I promised you a recipe with oranges, right? Well, here we go!

Now, I’ve told you about the list – the lengthy checklist on my iPod of all the oatmeal ideas that I’ve yet to make and post about. The weird thing is, only about half of my recipes actually originate from that list. The rest are born on mornings when I walk in the kitchen, analyze my limited ingredients, and throw something together (exhibit A). This is one of those recipes.

Tip: Segmenting Citrus

I haven’t done a how-to post in a while, and it occurred to me this morning that I could show you how I segment oranges. It’s something I’ve given instructions on, but never elaborated or shown pictures of, so VOILA, here it is! It’s so easy that I narrowed it down to five steps.

And coming later (next week), I’ll provide you another (really delicious!!!) recipe to use these orange segments. ๐Ÿ™‚

1. Cut the orange in half (through its waist, if you will).

2. Run a small paring knife along both edges of each segment.

3. Run the knife along the parts of the segments that attach to the white pith (the skin).

4. Dig out the segment with your knife or with a small spoon.

5. Place directly into saucepan for cooking or set in a bowl for later!

    Nectarine-Lime Oatmeal

Last week, I found myself in possession of a ginormous, juicy nectarine. I always thought I didn’t like them (because they were like an inferior version of peaches), but this one proved me wrong. I mean, they essentially taste the same, but peaches don the fuzzy skin. Other than that, they’re nearly twins!

So what would I do with the nectarine? Obviously, my first thought was to use it in oatmeal. I did some hardcore research and studied all sorts of flavor combinations. I saw a few sources listing nectarine/peaches and lime as a good combination, so I thought I’d try it out.

    Overnight Tea-Steeped Oatmeal

    Coffee or tea?

    tea-steeped-oatmeal-3-

Six years ago, I would have responded, “Neither.” I started drinking tea toward the final months of my senior year of high school as a way to calm my ever-tormented digestive system. I wasn’t crazy about it at first, but I learned to tolerate it. Now, I drink a glass of tea almost every day. (I’ve also learned to like coffee, too, but that’s beside the point.)

    Grapefruit Mint Oatmeal

Happy fifth day of Christmas! ๐Ÿ™‚ Oddly enough, this recipe feels a little more summery than a typical December post, but the weather here has been unseasonably warm, so it seems fitting. I even wore a skirt yesterday! What’s the weather like in your area?

    grapefruit-mint-2-

This oatmeal reminded me of a grapefruit mojito I had back in August. In all honesty, anything with fresh mint is delightful, and anything with grapefruit is magical, so the combination is perfect. This is actually a really simple recipe that you can throw together with less than five ingredients; however, I’d also recommend adding nondairy yogurt. That gives it the wonderfully creamy texture that most porridges offer.

    Orange Dreamsicle Overnight Oatmeal

When I was younger, my family and I could eat through a gallon of ice cream within a few days. My dad and I would eat bowl after bowl in one sitting. The favorite in our household was plain old vanilla (usually topped with chocolate syrup). However, sometimes my mom got “fancy” and bought us Orange Blossom.

If you don’t know what that is, it’s vanilla ice cream swirled with orange sherbet. Mmmmm. It’s the ice cream version of orange “dreamsicle,” which I believe is one of the world’s best flavors. ๐Ÿ™‚

    Dark Chocolate and Grapefruit Oatmeal

This recipe is only for those who love bitter. Sweet tooths need not read on.

    dark-choc-and-grapefruit-2-

First, you take a bitter grapefruit. Then, you stir in some bitter dark cocoa powder. Then, you top it with some more bitter grapefruit. If you’re wrinkling your nose, then save yourself some time and just click hereย instead. If you’re salivating like I was, read on.

    Grapefruit Blueberry Oatmeal

I’ve posted a lot of blueberry recipes lately, and I’m not apologizing for it!

    blueberry-grapefruit-005

But before I get into that…do you know what today is? It’s September 1st. Today is the one-year anniversary of my first day of vegetarianism. As I explained in my “About Me” page, I originally just planned to try one month without meat. About halfway through the month of September, I already knew (at least subconsciously) that I would not be going back. I was in love with it.
