Lemon Berry Rosemary Oatmeal + Product Review: BetterOats
It has been a while since I put out a lemon recipe. Then I saw this recipe for Lemon Rosemary Shortbread cookies, and considering my recent love for rosemary, I knew this needed to happen.
Lemon pairs well with almost any herb. I’ve already paired it with thyme, but rosemary is my jam right now. This recipe uses the hidden banana trick, and it was adapted closely from my Lemon Blueberry Oatmeal, so if you’re (inexplicably) not into rosemary, you can always just make it sans herb. (more…)
Mojito Overnight Oatmeal
Once upon a time, in my blog’s infancy, I made Strawberry Mojito Oatmeal. Not many are brave enough to try it. After all, it includes a little banana, yet I try to convince you it’s undetectable beneath the lime and mint flavor. I stand by that claim, but this time I took a different approach.
First of all, this is an overnight recipe, so you enjoy it cold, like you would an actual mojito. Second of all, I went with grated zucchini instead of banana . . . because you guys LOVE zucchini in your oatmeal. Yes, I hear you. You love your #zoats.

Papaya Lime & Coconut Overnight Oatmeal
Well, I owe you all a huge thanks for this one. I seriously couldn’t have done it without you.
I have minimal experience with papaya. Since I love mango and pineapple, I just assumed papaya would be like that. One day back in my Newark life, my roommate and I bought a tub of pre-cut papaya. We were so stoked to bring it home and try it.
Ugh, what a disappointment. Maybe it was because it was pre-cut (and thus not “fresh”). Maybe it was because I expected it to taste like mango. Maybe it wasn’t totally ripe when it was cut. Or perhaps I just had really picky tastebuds at the time. (The last option is a definite possibility.)
But now, back to 2015, I made this:
And it was spectacular. (more…)
Lemon Baked Oatmeal with Raspberry Filling
As I announced on Wednesday’s guest post, Monica from MyPinkRecipeBook.com and I are currently engaging in a recipe swap as we embark on our individual summer traveling. Make sure you check out those Four-Ingredient Fudgy Oat Bars! They’re no-bake!
For my contribution to our recipe swap, I made this baked oatmeal inspired by layer cakes. The baked oatmeal is lemon-flavored, and it’s brought together in the center by sweet and simple raspberry jam. As always, this recipe is vegan, sweetened by fruit (except for the jam), and uses simple pantry ingredients. (more…)
Coconut-Kiwi Overnight Oatmeal Parfait with Lemon Curd
Alright, so I had this super idea for an oatmeal regarding my beloved Pseudo Vegan Lemon Curd. It would have been perfect, but my uncharacteristic carelessness came back to haunt me. See, to make a solid pseudo curd, you need Greek-style yogurt. The store I was in didn’t have that, so I said, “F*** it,” and bought regular SoDelicious coconut yogurt. (more…)
Broiled Grapefruit & Banana Oatmeal
What’s that? You’re complaining because there’s another recipe with banana?
You’re on the wrong blog, You know I love me some banana. 😉 (more…)
Lemon Blueberry Oatcakes
First, thanks to everyone for your outpouring of support on Monday’s post. I decided back in November (three months into the school year) that it would be my last year teaching, and let me tell you, those next seven months were the longest of my life. That last day of school made me cry the happiest of tears.
So…pancakes, anyone?
These were super….but I’ve decided that I simply don’t like pancakes that much. 😛 Even the healthier oatmeal version gives me a bit of a stomach ache and just doesn’t soothe my soul the way a bowl of stovetop oats do. I may still post an oatcake recipe every now and then, but probably like once a year. haha.

Lemon White Chocolate Lava Baked Oatmeal
When people hear “lava cake,” they immediately picture a brownie-esque dessert that oozes molten fudge. I’m hear to shake things up.
What better way to enjoy a springtime lava cake than with citrus and white chocolate?
Lemon Asparagus Steel-Cut Ris-OAT-to
Once upon a time, I hated asparagus. My mom would make cream of asparagus (from the can) and my dad would eat it on toast. It made the house smell like vomit, and I simply couldn’t understand why anyone would eat it. They look like green beans, and I hated those, too, so asparagus really didn’t stand a chance.
That eventually changed, and now I consider it one of my favorite vegetables. Recently, I was at a risotto shop in Greenwich Village with some friends. I ordered the lemon and pine nut risotto and added asparagus, and each bite was diviiiiiiiiine. I immediately decided to make it in oatmeal form. (more…)
Blood Orange & Toasted Coconut Oatmeal
If you cannot tell from my intermittent posting this month, my hours have been pretty tied up lately. I began my grad school classes two weeks ago, and the workload that accompanied them has stolen all my free time. Although the classes themselves recharge me during the week, the readings and assignments just burn me out more.
I’m like black toast. Charred broccoli. The crusty black layer of oatmeal that sticks to the bottom of the pan.
The easiest thing to give up would by my blog, considering it’s the one with the lowest stakes. I’m not paying thousands of dollars for it (unlike my grad school classes), and no children are relying on it for the quality of their future (unlike teaching). However, I refuse to do that because it also happens to be the thing that brings me the most joy.
