Fudgy Beet Oatmeal with Pomegranate

Beets and oatmeal? Beets and chocolate? Fudgy beets? Yes. Yes, I did.

This isn’t the first time I’ve done this. I also combined beets and chocolate to make my Black Forest Oatcakes two years ago. Listen: it works. Trust me.

Fudgy Beet Oatmeal with Pomegranate #vegan #oatmealartist

The other time I put beets in oatmeal, I just diced it because I was feeling lazy. This was a mistake. Diced beets have no place in oatmeal. Every mistake I’ve made on this blog can be blamed on laziness. ? My bad. (more…)

Brownie Baked Oatmeal with Matcha Cashew Frosting

Another brownie recipe, Lauren? Really?

On second thought, I doubt you guys mind. 🙂

Brownie Baked Oatmeal with Matcha Cashew Frosting #OatmealArtist #vegan

Half a year ago, I finally bought some matcha powder online. Truthfully, I’m not the world’s biggest fan of matcha. I think it needs a lot of sweetener to taste good, and as you know, my digestive system can’t handle sweets. However, after spending all that money on it, and then seeing it camp out in the back of my cupboard for months, I felt guilty. I needed to make another recipe with it, or it was going to keep haunting me.

But what would I make?!

Cannoli Baked Oatmeal (with Cashew-Yogurt Cream)

Let me introduce my latest love: cashew-yogurt cream.

Why? Because yogurt has a very distinct taste. It’s excellent if you want yogurt. It’s not excellent if you just want something creamy. And when we’re talking about nondairy yogurt, that can be triple true.

And cashew cream is never what I want it to be. I can never get it creamy enough, or sweet enough, or simply without that ~raw cashew~ aftertaste.

Cue the cashew-yogurt hybrid.

Considering how long I pondered over this recipe, I was stunned at how well this turned out. Of course, it is not the beautiful deep-fried, thin, crispy pastry tube, which is half the appeal of the beloved cannoli. There is no way that baked oatmeal will ever replicate crispy, deep-fried pastry. But it’s irrelevant . . . because this is delicious. (more…)

Scotcheroo Oatmeal

TOMORROW is my 2-year vegan anniversary (aka my vegan-versary!). To celebrate, I made this beautiful baby that I’ve been trying/failing/trying/failing/trying/failing for quite some time now. But here it is, the most successful version.

Scotcheroo Oatmeal

Not sure what Scotcheroos are? No worries—you’re not alone. I myself had much confusion regarding this title, but now I can confidently give you the low-down.

Growing up, I was familiar with two similar bars: Rice Krispy bars and Special K bars. I had never heard of a Scotcheroo. However, I eventually learned that what I was calling a “Special K” bar was actually a Scotcheroo. To be a Special K bar, it has to be made with Special K cereal . . . duh. (more…)

Cherry-Berry Oatmeal with Chocolate PB2 and Toasted Coconut

I used to have a strong aversion to cooking my fruits in my oatmeal. What was the point of having fresh fruit if I were just going to boil it to oblivion in my oatmeal? However, I’ve recently come around.

First of all, the flavor is astounding. Second of all, it’s a perfect solution if you’re working with frozen fruits (as I often am when it comes to cherries). And third of all, you can still include fresh chopped berries that you add in later, so it’s the best of both worlds.

Cherry-Berry Oatmeal with Chocolate PB and Toasted Coconut

This recipe reminds me of my Black Forest Oatmeal, and I almost called it Black Forest Oatmeal 3.0 (since I’ve made so many versions of this particular flavor). However, I decided against it.

I used chocolate PB2 (obviously), but you can sub in any chocolate nut butter (yes, including Nutella), or you can take regular peanut butter and mix in cocoa powder–and maybe some sweetener if you think it’s necessary.

Cherry-Berry Oatmeal with Chocolate PB2 and Toasted Coconut

Prep Time: 5 minutes

Cook Time: 5 minutes

Yield: serves 1

What you'll need:

  • 3/4 cup milk of choice
  • 1/4 cup quick cook steel cut oats
  • 5 frozen or fresh cherries, pitted and halved
  • 5-10 fresh strawberries (frozen not recommended)
  • 1/4 tsp vanilla extract
  • pinch of salt
  • For topping
  • serving of chocolate PB2 or nut butter* (OR Faux-reo Cookie PB2)
  • unsweetened coconut flakes or chips
  • optional: chocolate chips, chunks, or chopped dark chocolate; almonds; strawberries for garnish

How to make it:

  1. Add liquid to a saucepan over medium heat. Bring it to a low boil and add oats. Reduce heat to medium low (it should be at a simmer).
  2. Add halved frozen cherries.
  3. Dice strawberries (the smaller, the better, in my opinion) and add HALF of them to the oatmeal along with the vanilla extract and salt.
  4. While you wait, toast your coconut. In a small skillet over medium low heat, add a handful of coconut. Shake the skillet occasionally so the coconut toasts evenly. When coconut starts to show tooasty golden goodness, remove from heat and set aside.
  5. When you're pleased with the consistency of the oatmeal, stir in the remaining strawberries, and then transfer to a bowl. Add a splash of milk, chocolate PB2, and toasted coconut, and any other optional toppings.

Just an FYI:

* You can make your own chocolate nut butter or PB2 by mixing in a teaspoon of cocoa powder. If desired, you could also add sweetener.

Basil Chocolate Zucchini Oatmeal

Say whaaaat?

Yeah. Basil + chocolate. I went there.

Basil Chocolate Zucchini Oatmeal

Okay, sure. This isn’t for everyone. But I love basil. I have a passionate love for all fresh herbs, but basil is easily my favorite. It’s been proven by the food blog community that basil pairs perfectly with sweet fruits, so why not chocolate?

Mocha Poached Pear Oatmeal with Tahini

As most of my readers know. . .

I. Hate. Pears. So. Much.

Mocha Poached Pear Oatmeal with Tahini #vegan

Thus, many of my pear recipes are desperate, elaborate concoctions to attempt to make them palatable to me. Today’s strategy: poaching. In chocolate. Mocha chocolate, to be exact.

And then dousing it all in tahini.

Chocolate Hazelnut PB2

PB2 is magical! You can do so much with it. I finally bought hazelnut extract (primarily because I bought a second spice rack and I needed to fill it out haha), and I was so excited to try out this Nutella-hack.

Chocolate Hazelnut PB2 by the Oatmeal Artist

As much as I frequently eat PB2 as is, I also enjoy making fun “spins” of it (see: Faux-reo Cookie PB2). Truthfully, I’ve only had Nutella a couple times (pre-vegan days), and I was always assaulted by how cloyingly sweet it was. I much preferred PB&Co’s Dark Chocolate Dreams, as I’ve mentioned before.

Raspberry Oatmeal with Tahini & Dark Chocolate Chunks

My first tahini experience! Ta-da!

Raspberry Oatmeal with Tahini and Dark Chocolate Chunks by The Oatmeal Artist

For years, I’ve been buying the “tahini sauce” from Trader Joe’s and using it for salad dressing. It is not the same as plain ol’ tahini. Tahini sauce contains add-ins like lemon juice and garlic. In fact, it kind of tastes like hummus, without the chickpeas! Thus, when I observed multiple #oatmealartist posts on Instagram include tahini, I was appalled. “YOU ARE TOPPING YOUR FRUITY OATMEAL WITH GARLICKY TAHINI?! (more…)

Vanilla Cappuccino Zoats [Guest Post]

Good morning, oatmeal lovers! Today marks my first day back home in NYC (it’s great to be back!), and I have been so appreciative of everyone who has helped me keep the blog active with fantastic recipes while I’ve been traveling. This recipe comes to us from Taigen, the Oatmeal Enthusiast from July. The moment I saw it, I knew I wanted to see the recipe for myself and to share it with my readers. Luckily for all of us, she said yes!

Hi guys! I am so happy to be back! And thank you to Lauren for asking me to share one of my zoat recipes with you – I hope you all like it!

So, I have never been a massive coffee drinker. When I use to have it, it was for that earthy fresh smell, the sweet flavours (vanilla or hazelnut every time) and the sensation of holding warmth. I love the taste of coffee, but that hasn’t ever translated to loving it as a drink.

One morning I woke up craving coffee and a bit of a ‘kick’ to start the day. It then occurred to me that I could put coffee in my daily oats and just eat it instead. So that’s exactly what I did.

This has been one of my favourite coffee-oat creations to date. The use of vanilla protein powder gives it a sweetened edge that I love. (more…)
