White Chocolate Cranberry PB2

I’ve been making many PB2 recipes lately. One day I was sitting on the L Train platform at Bedford Avenue, waiting. And waiting. And waiting.

And then I thought of a PB2 flavor. I added it to The List. I thought of another. Added it The List. Thought of another. And another. And another.

By the time the train showed up, I had almost 20 PB2 ideas on my phone.

Sweet Potato Chocolate Chip Baked Oatmeal

Confession: when I buy a bag of chocolate chips, they’re usually gone within a week or two. That’s why I will go such long stretches without chocolate chip recipes. If I had a bag in my kitchen all the time, I would go through about six a month. I just can’t keep my hands out of them!

So you can imagine my surprise the other day when I was digging for something in my cupboard and found the final few tablespoons of chocolate chips in a forgotten bag stuffed in the back. Salted Fudge PB2

Continuing yesterday’s sweet-and-salty trend, and last week’s flavored PB2 trend, let me introduce you to my newest creation:

This recipe is admittedly fussy when it comes to pairing it with the right oatmeal base (not every recipe enjoys being paired with salt!). I had this on Sweet Potato Fudge Oatmeal, but I could see it working in a few others, too. One that immediately comes to mind is Chocolate Chip Cookie Baked Oatmeal. I love salted chocolate chip cookies. It would be nice as the frosting on top of Brownie Baked Oatmeal as well! (more…)


Sweet Potato, Bacon, and White Chocolate Oatmeal

. . . BECAUSE IT’S MY BIRTHDAY.

Before making this, I thought to myself, “Bacon? Or white chocolate chips? Bacon? White chocolate chips?”

It felt a little bit wrong to celebrate my birthday without peanut butter–although I assure you I had it later in the day–but once I came up with this idea, it seemed like a worthy alternative. The sweet potato base is cozy and earthy, the white chocolate chips add sweet and gooey bliss, and the bacon is–well–BACON. ‘Nough said. The three components together create a sweet-yet-salty, creamy-yet-crunchy, healthy-yet-indulgent combo.

You can use whatever bacon you want, but I highly recommend Sweet Earth “Benevolent Bacon” if you can find it. The BEST vegan bacon on the market, if you ask me (and no piggies harmed ?). Om nom nom. (more…)


Apple Oatmeal with Chocolate Tahini and Coconut

Friends, I have two important hacks to show you today.

The first involves my never-ending search for apple perfection.

I have written before on the perfect way to cook apples in oatmeal to get a creamy porridge and not a chunky and disjointed one. Now, I have a new method.

At the end of the day, you can add your apple however you damn well please. However, here’s my new favorite: cut the apple into halves or quarters. GRATE at least half the apple (I grate three quarters), and dice the rest.* The grated apple works on two levels: 1) It is easier to digest for poor souls like me with incompetent intestines, and 2) It creates a smooth and consistently flavorful porridge. You could technically grate the entire fruit, but reserving some of the apple for dicing provides a bit of texture for extra pops of apple now and then.

*I use small apples, so I use the entire thing, but if you’re using a large apple, you may want to only use a portion of the apple and save the rest for later. Use your judgment.

Rosemary Chocolate Chip Oatmeal

Last week, I gave you my Rosemary Chocolate Chip Baked Oatmeal, inspired by one of my new favorite cookies. This should show you just how much I love it (or, perhaps, how quickly I finish a bag of chocolate chips and how quickly rosemary turns into sad, dried-up needles).

Before you scrunch up your nose, you should know that I did not come up with this concept. It’s already a thing. Just ask Pinterest. In other words, many people have already given this baby the stamp of approval, so you have no reason not to try it.

Here’s how I discovered it. My favorite coffee shop, which I have visited over 140 times because espresso is a fundamental human need, recently began selling salted rosemary chocolate chip cookies. There are several aspects of this that grabbed my attention:

  1. Salted cookies are fabulous.
  2. Chocolate is wonderful.
  3. Rosemary is my Herb of the Moment.
  4. Mmm, cookies.

Fudgy Chestnut Oatmeal

Chestnut puree strikes again! You didn’t think I would make you make (or buy) an entire jar of chestnut puree and then not give you any more recipes to use it up, did you?

Meet the newest member of the fudge family: this Fudgy Chestnut Oatmeal is most similar to Sweet Potato Fudge Oatmeal; it has a similar earthiness and thick creaminess. It also requires a generous dose of maple syrup.* Whatever you do, don’t skip the sweetness–and this is coming from someone who doesn’t have a sweet tooth.

*You could also try using chopped dates to sweeten it instead. I haven’t tried this myself because I find dates to be a tad too expensive for my grad school budget. Le sigh.

I’m not sure why I decided to start with the fanciest, but I have to start somewhere, n’est-ce pas? I would argue, however, that turtle cheesecake is one of the more popular variations on the popular dessert.

Cowboy Cookie Baked Oatmeal

I get unreasonably excited every time I put out a new cookie oatmeal. This is one I have wanted to make for quite a while. Actually, I first wanted to make a monster cookie baked oatmeal, but that would require the use of M&Ms, and then I would have to splurge on vegan M&Ms, and I just wasn’t ready to spend my money on that. Just as I feel about vegan marshmallows. Maybe someday.
