Dark Chocolate Espresso Brownie Baked Oatmeal with a Shortbread Crust [Guest Post]

It’s that time of the week again! Here’s another contest winner from the brownie baked oatmeal contest. This one sounds complex, but if you read the instructions, Lyndsey has actually made this a quick and easy process! Enjoy.

Hello! Shoutout to Lauren for giving me another opportunity to post on her wonderful blog. I’m always so excited to try out her new recipes, and it’s fun to be able to share one of my personal creations with all of you.

I started drinking coffee a couple of years ago to mask the flavor of my required nutrition supplements due to my health issues (you can read more about that here). Now, I enjoy a cup of warm, black coffee every morning as a way to start my day off right.

My love of black coffee is reflective of my taste for bitter flavors. Thus, I also have an obsession with dark chocolate. I add Hershey’s Dark Cocoa to my oatmeal almost every day, which I love as a healthy “indulgence.” (more…)

S’mores Oatmeal…and my blog’s 4th birthday!!

My blog is four happy years old. This occasion seemed like the perfect time to celebrate with s’mores.

Dirt Pie Overnight Oatmeal

Happy Wednesday! The sun has finally come out again in New York City, and the forecast shows sun for the next week. ☀️ ☀️ ☀️ That means I’ll finally be able to get back to blogging.

You see, because I live in a Brooklyn apartment, it’s not feasible for me to take pictures outside (much to my displeasure). I have to take all my pictures right next to my bedroom window to get some natural light, and to get enough light, I need it to be MEGA sunny. Cloudy days work great for outside pictures, but not indoors. The past two weeks have been endlessly cloudy, resulting in me running out of recipes to post. My apologies.

For those of you unfamiliar with dirt pie (and that could very well be many of you), it’s a dessert with chocolate pudding topped with crushed Oreos and gummy worms. It’s a popular dessert to serve kids, especially around Halloween. (more…)

Peanut Butter Cheesecake Swirled Brownie Baked Oatmeal [Guest Post]

This is the second recipe winner from my Brownie Baked Oatmeal contest! How beautiful are these photos? ? Enjoy!

First of all, let me thank Lauren. Two years ago I had an oat packet in the pantry and I didn’t know how to use it. In Italy most of the people think that oats are to be eaten as they are, but I found them as flavourful as paper. ?

I started to search on Google if I could find something more interesting (and healthy than granola packed with sugar ?). I discovered oatmeal, and immediately fell in love with Lauren’s blog! It was full of ideas and my breakfast was never the same! (more…)

Cherry Chili Brownie Baked Oatmeal [Guest Post]

This is recipe #1 from the brownie baked oatmeal contest!!! This winning submission comes to us courtesy of Katarzyna.

Cherry Chili Brownie Baked Oatmeal | A Guest Post by Katarzyna #oatmealartist #vegan

My Cherry Chili Brownie Baked Oatmeal was inspired by chocolate my Mom gave me. It was cherry & chili dark chocolate and I absolutely loved it. The only thing it was lacking was . . . the chili flavor. (more…)

Weekend Musings: My Hot Chocolate Recipe! + My Other Favorite Snacks

You all bombarded me with requests for my secret hot chocolate recipe. I stressed over it for days, wondering if it were good enough to share. It felt like this weird thing that I came up with, and I wasn’t sure if it were fit for public consumption (literally and figuratively).

However, I then remembered that I had made it for friends before, and they enjoyed it, so what the heck, right?

Thick, European-Style Vegan Hot Chocolate

And that felt like a great opportunity to discuss my favorite snacks in general. After all, it’s not like I eat oatmeal for every meal. (But sometimes, I come pretty close haha.) (more…)

Peppermint Fudge PB2

Shout out to my bulk-sized cocoa powder and PB2! The sad part is that I can finish both in less than a month. I buy the cocoa through the subscription program on Amazon, and it’s delivered to me monthly. I often have to supplement with a small Trader Joe’s container of cocoa powder by the end of the month. See also: my hot chocolate addiction.

I’m such a sucker for mint chocolate flavors. There’s a reason Thin Mints were always my favorite Girl Scout cookie. (Coincidentally, they are also the only vegan version. Hizzah!) If you like Thin Mints, or Andes mints, or any sort of chocolate-mint concoction, you will love this Peppermint Fudge PB2 (as well as my Thin Mints Oatmeal or Peppermint Brownie Baked Oatmeal)!

Tahini Swirl Brownie Baked Oatmeal

I probably shouldn’t be posting brownie recipes immediately after opening up a contest for brownie recipes. ? I couldn’t resist.

Is anyone else kind of obsessed with tahini? I can’t seem to get enough of it lately. I use it to make salad dressings, in smoothies, on oatmeal. All the tahini, all the time.

Cardamom Fudge Oatmeal

!!!!

After months (literally, months) of having homemade hot chocolate virtually every single day*, I finally figured out how to transfer that love to my morning oatmeal.

*It’s an addiction at this point, TBH.

You see, I have a few versions of my European-style (i.e. THICK AS PUDDING) hot chocolate. One is peppermint. Another is Mexican. Another is almond. And the final version is my personal favorite: cardamom.

Add cardamom to your hot chocolate. You won’t regret it.

Cardamom Fudge Oatmeal by the #OatmealArtist #Vegan

I have considered sharing my hot chocolate recipe many a time on here, but it seemed so irrelevant; there are no oats involved, after all. Alternatively, I tried finding a similar recipe on the internet for me to include in my “Random Recommendations” section, but that has been unsuccessful as well. It looks like my hot chocolate recipe will remain a well-kept secret. For now.

Instead, I have this oatmeal recipe for you. One day for dinner, I wasn’t in the mood to make anything interesting for dinner. I try to avoid doing this, but I decided to be lazy and make oatmeal. As always, I wanted to make my Fudgy Banana & Peanut Butter Oatmeal, but I felt dumb for making that the second time in one day. To make it more interesting, I grabbed my jar of cardamom. (more…)
