Banana Split Oatmeal
Yep. I’m insane. Or genius. Not sure which.
This porridge contains ALL the flavors of the classic banana split. However, unlike the typical massive dessert found in diners, THIS banana split is healthy AND vegan! Don’t act like you’re not impressed. 😉
Pumpkin and Chocolate Chip Oatmeal
This wasn’t the recipe I intended to post today, but I’d say it makes a pretty good back-up, don’t you think?
I was poking around my sister’s kitchen when I discovered the most glorious thing: a jar of pumpkin butter. Half of me was overjoyed, yet the other half of me was peeved. I knew exactly when and where she got that jar. . . because I bought one, too. We were at a glorious souvenir shop in Estes Park, Colorado. It was a little over a YEAR ago. I finished mine within a couple of months.
. . . Hers is still nearly full.
I was appalled! However, I opened it up, stirred it a little, and sniffed it. It seemed perfectly fine still, despite being over a year old. It needed some love, though (after being ignored for so long), so I made the recipe that I used to make last summer when I had my own jar. . . but I made it even better by adding some chocolate chips. 🙂
The awesome thing about pumpkin butter is that it’s already seasoned and very flavorful. It tastes like pumpkin pie in a jar! That makes it a great candidate for “5 ingredients or less” recipes. However, if you can’t get a hand on any pumpkin butter, you could recreate it by using pumpkin pie filling OR regular pumpkin puree with pumpkin pie spices.
Pumpkin and Chocolate Chip Oatmeal
What you'll need:
- 1 cup milk of choice, or water
- 1/2 cup rolled oats (I use Country Choice Organic)
- 2 tbsp. pumpkin butter
- pinch of salt
- handful of chocolate chips
How to make it:
- Bring milk (I use 1/2 c original almond milk and 1/2 c water water) to a boil, add oats, and reduce heat to medium. I also add a spoonful of milled flax at the same time as my oats.
- Once more of the liquid has absorbed, add the pumpkin butter and salt. Stir.
- If you'd like to add any extra ingredients (coconut oil, raisins, sunflower seeds), do so now.
- When you're pleased with the consistency of the oatmeal, transfer to a bowl. Serve with another splash of your milk of choice and chocolate chips. I also topped with sliced banana.
Mocha Oatmeal (with Variations)
Wednesday morning, I had great plans for a Peppermint Mocha Oatmeal. I planned it while falling asleep the night before, and I woke up eager to try it out.
My dreams came crashing down when I opened my mother’s bottle of mint extract, only to get an awful whiff of spearmint. SPEARMINT!! Ugh. It was a combination of spearmint and peppermint. Unacceptable!
I was not about to have spearmint mocha–gross. Instead, I just went with a simple mocha oatmeal, along with a little bit of vanilla extract to enhance the chocolate flavor. (more…)
Banana-Berry and White Chocolate Oatmeal
Have you ever looked at the ingredients list for white chocolate?
Like most of my recipes, this particular one was sitting in my mind for a while. I didn’t want to actually buy white chocolate chips, though; it’s not an ingredient I would use a lot, and I knew my mom had a bag. Thus, my plan was to wait until I was visiting my parents to try this out. So that’s what I did. (more…)
Fudgy Banana and Peanut Butter Oatmeal

Which oatmeal do I run home to after a tough day at work? Which oatmeal is good enough to be my breakfast on my 23rd birthday? Which oatmeal do I turn to when my produce drawer is looking empty? Which oatmeal contains the best flavor trio (chocolate, banana, and peanut butter) EVER?
This recipe was originally included as an option in my Variations on Peanut Butter Oatmeal post, but a porridge this good deserves special treatment. We’re talking about my favorite recipe, you guys.
After all…it’s pretty much heaven in a bowl. Sweet and creamy bananas…salty peanut butter….fudgy chocolate…ahhhh. But it’s so simple, too! I always have cocoa powder. I always have peanut butter. I always have bananas. If I don’t have a fresh banana available, I have some frozen bananas sliced up in the freezer, waiting for me at my convenience. Cherry Garcia Oatmeal
This recipe has been on my mind for at LEAST half a year. Why, oh why, must cherries cost so much??
I once tried this with cheap cherry jam. I was at a diner for Sunday breakfast, and they had those little individual packets of jams. I immediately thought of my chocolate-cherry idea, and I snatched one and hid it in my purse. 😉 (more…)
Salted Brownie Baked Oatmeal

Mmkay. How could anyone see the name of this recipe and NOT be tempted?!
I suppose I owe you that much. It’s been over a WEEK since I’ve posted a recipe. First, I didn’t have any of the right ingredients to make a new recipe. Then, I spent the weekend camping with my parents at my grandmother’s farm. Then, I was so stressed out with work that I didn’t have time to take pictures in the morning. Finally, yesterday I planned to make this recipe and blog it before work…only to wake up an hour late and have to settle for TOAST. 🙁
Blood Orange, Cranberry, and Pistachio Oatmeal
Have you ever been in a moment so perfect–when everything you appreciate most in life is happening all at once–that you are rendered speechless and can only look around in awe?
These moments seem to pop up when I least expect them. For example, last night I barely knew the people I was hanging out with (the exception being the girl that invited me). However, halfway through the night as we were sitting around laughing and having stimulating, intellectual conversation (a rare find at my age), I could do nothing but smile and take a mental photograph of that moment.
Yes, intellectual conversation is all it takes to make me happy. 🙂 I am an English major, after all.
Anyway, I almost made Strawberry Banana Oatmeal this morning, but then I decided I wanted to give you a new recipe. This one, in all its “bloody” glory (not funny?), is one I’ve been tweaking for a while. I bought a bag of these oranges (which are rarely, if ever, available in South Dakota) from a farmer’s market in San Diego, and I knew right away they’d end up in a bowl of oatmeal. Surprisingly, as strong of a taste as blood oranges have, the flavor gets diluted or something in oatmeal, so I had to find a way to enhance it and give it the spotlight. It was being a little shy. 🙂

But alas, this one is finally ready to make its debut. Oh, and I’ll let you in a little secret: this one is also good with chocolate chips on top. 😉
Blood Orange, Cranberry, and Pistachio Oatmeal

Ingredients (serves 1)
- 2 small blood oranges, or 1 bigger one
- 1 cup milk of choice, or water
- 1/2 cup rolled oats (I use Country Choice Organic)
- 1/8 tsp ground ginger
- 1/8 tsp cinnamon
- pinch of salt
- handful of dried cranberries
- small handful of pistachios
Instructions
- Begin by prepping your blood oranges. Cut one in half across its mid-section, like you would for a grapefruit. Then, I take a paring knife and slide it down each side of every segment. That will make them easier to spoon out. Once your have one prepped, repeat with the other orange.
- Bring milk (do NOT use all water for this recipe; I use an equal mixture of almond milk and water) to a boil, add oats, and reduce heat to medium.
- Spoon out the segments from your blood orange halves and add to the oatmeal. Stir.
- Once more of the liquid has absorbed, add ginger, cinnamon, and a pinch of salt.
- Add cranberries. If you’d like to add any extra ingredients (coconut oil, raisins, sunflower seeds), do so now.
- When you’re pleased with the consistency of the oatmeal, transfer to a bowl. Serve with another splash of your milk of choice pistachios, and any other toppings you’d like (shredded coconut, chocolate chips, etc.).

Loaded Banana Oatmeal
Do you ever have trouble deciding which kind of oatmeal to make in the morning because you kind of just want everything??
If so, this one’s for YOU. It’s like an Everything Bagel, without the garlic.
Normally, when we hear the word “loaded,” we think of heart attacks like loaded chili or loaded baked potatoes, which usually feature bacon, sour cream, and junk food like “Funyuns.” No, thanks.
THIS loaded concoction can be as healthy (or unhealthy) as you like. For a healthier route, look for toppings like fresh fruit, dried fruit, peanut butter, puffed rice, any type of yogurt, nuts, raw chia or hemp seed, banana butter, sunflower or pumpkin seeds, shredded coconut, granola, or more sliced banana. You could also add maple syrup or honey on top.

Variations on PB Oatmeal
Considering my love for peanut butter, it’s no surprise that it frequently finds its way into my oatmeal! I was editing my 3 Basic Oatmeal Recipes post this morning, and I was baffled at how to display all the possibilities for peanut butter oatmeal without it being cluttered and confusing. Finally, I realized it deserved its own page. Think of all the variations I’ve created!
Here is a list of possible variations for my basic peanut butter oatmeal:
Chunky vs. Creamy:
The most obvious variation is to experiment with both chunky and creamy nut butters. I normally buy creamy PB, but chunky PB is exceptional in oatmeal! Give it a shot!
Peanut Butter & Banana:
Add a mashed banana (or half of one) after adding the oats, OR add banana butter when serving.
PB&J:
Stir in jam or jelly while the oatmeal is cooking OR drizzle/whirl it into the top of the oatmeal when serving. You could also make it with banana or apple.
PB2:
Whisk in 2 tbsp of PB2 before your liquid begins to boil for an extra flavor boost.
Honey-Nut:
Drizzle honey generously when serving. You could also add apples!
Not Peanut Butter:
Try using almond, cashew, or any other nut butter in place of the peanut butter.
Chocolate Peanut Butter:
Use a chocolate PB (like this one, or even something like Nutella), OR add 1-2 tbsp cocoa powder in place of the cinnamon.
