Brownie Batter Oatmeal

Cocoa powder is just the best. It’s really one of the few ingredients that can turn anything into a decadent treat without harming its nutritional profile. I think I’ve put cocoa powder in all my breakfasts for the last week and a half. I used to save that only for weekends (so it felt special), but now I’m just throwing it in everything with reckless abandon.

This is a porridge that’s been ruling my mornings (and a couple dinners…) lately. It actually began when I was making my favorite Fudgy Banana and Peanut Butter Oatmeal, but I used Country Choice Organic quick-cooking steel-cut oats instead. I noticed the consistency and flavor was highly reminiscent of brownie batter. Thus, the idea was born.

Mocha Sauce

The hardest part about moving is the whole grocery situation. Have you experienced this? You’re leaving soon, so you want to be finished with all your produce and have as little grocery items to move/toss as possible. However, you also don’t want to starve to death or survive entirely off restaurant food for the final few days.

This issue is further complicated if you are a food blogger. I’m trying to maintain a blog while my pantry and refrigerator become more barren by the second. For this reason, today I’m sharing a recipe for a topping. I will not apologize for this (even though I know you’d much rather have a new oatmeal recipe) because this glaze is ballin’ and you should try it whether or not you’re kitchen is better stocked than mine at the moment.

This sauce took five ingredients and a pinch of salt. It came together in less than a minute. It can be easily adjusted for preferences in sweetness and coffee flavor.

Thin Mints Oat Muffins

Happy Sunday, everyone!

What’s the weather like in your neck of the woods? It’s crazy hot here. I was in Philadelphia all week chaperoning a school field trip, and the students and I just trudged around, sweating and fanning ourselves the whole time. Gross!

My roommate and I had planned to spend Saturday afternoon at Central Park, but it was just too darn hot. Sweltering. Blistering. Stroke-inducing. So instead, I stayed inside in the air conditioning and made some muffins for YOU!

Yep. They are, in fact, as delicious as they look. 🙂

Orange, Cherry, and Chocolate Oatmeal

Success! I finally got three posts in a week again. I’ve been in a two-post slump for a while. It’s probably because I’ve been going through a major Lemon Coconut phase, and that’s all I’ve been making! Today, I finally pulled myself together and made a new recipe.

I know I’ve told you this before already, but these dried cherries my mom sent me were a game-changer. I find them so much more flavorful and appealing than frozen cherries…or even fresh ones. I love using them in my oatmeal because they actually provide a cherry taste! The frozen cherries I bought from Whole Foods are just not cutting it for me.

Blood Orange and Chocolate Chip Oatmeal

You know those moments in life when you’ve wanted to try something for months, or even years, and you’ve formulated an idea of what it will be like and the sensations it will give you?

(Okay, that question could get misconstrued quickly. We’re talking about food here!)

That is how I felt about blood oranges. I had never seen one before, so I definitely hadn’t tasted one. I imagined them bursting with deep, red, juicy flavor, more “berry” in flavor than “citrus.”

To be honest, when I finally tried it about a year ago, it let me down. I was disturbed by its bitterness, and turned off by the harsh nuances in its citrusy flavor.

Of course, with some more exposures, I came to appreciate its unique taste. Plus, similar to grapefruit, blood oranges mellow out once cooked into porridge. It almost does have a berry taste! Win!

Chocolate Banana Overnight Oatmeal

I took one of my laziest recipes and made it even lazier! Dirtying a saucepan can be just so tedious. Now you can carelessly toss the ingredients in a jar, shake it up, and wake up to chocolaty oatmeal at 5:30!

Except you probably don’t have to get up that early. Good for you.

I intentionally designed this recipe to be flexible. If you want, you can create this with four ingredients: oats, chocolate milk, banana, and a pinch of salt. However, it doesn’t have to stop there.

Berry Chocolate Crunch Oatmeal

Did my heart love till now? Forswear it, taste buds!
For I ne’er tasted true beauty till this week.

Sweetest pepitas…

berry-choc-crunch-1-

If I profane with my unworthiest hand
This holy shrine, the gentle sin is this:
My lips, two blushing pilgrims, ready stand

To EAT YOU.

I know I’m being incredibly overdramatic, but my confession must capture the scale of my new infatuation. This past weekend (thanks to my mother’s birthday present), I tried pepitas for the first time. I’ve had “roasted pumpkin seeds” before, but they were nothing like “pepitas.” You would think they would be equally wonderful (considering pepitas are pumpkin seeds), but there is definitely a difference, the first being that pepitas are as glorious to this night as is a winged messenger of heaven, and “roasted pumpkin seeds” are just a big pile of “meh.”

Black Forest Cake Overnight Oatmeal

You all said to me that you wanted more overnight oatmeal recipes, and this is one that will start your day right. I mean, what could be better than waking up to a BLACK FOREST CAKE!?

overnight black forest (2)

This recipe was a tough cookie to crack. Much to my disappointment, cherries are not the most flavorful ingredient, especially in its whole form. Their flavor is locked in within that fragile skin.

The first time I made it, I dropped the berries in whole. In the morning, the oatmeal was very flavorless and did not taste at all like a Black Forest Cake. Then, I tried something a little different:  I blended the cherries first, so the oatmeal soaked up “cherry juice,” which gave it much more flavor.

Banana Chocolate Chip Oatcakes for One

The poll results are in! I must say, when I created the survey, I was nervous. I feared that nobody would respond, and it would remind me to be humble and that nobody actually reads my blog. Much to my delight, I got over 100 responses (the free service caps out at 100)!

So for you guys, I made these:
