Apple and Cherry Jam Baked Oatmeal

After several recommendations from multiple readers, I finally tried grating an apple instead of dicing it. I originally disregarded it because I thought about how much I loathe grating carrots. Luckily, apples are softer than carrots and grate much more easily. I actually found it easier–and possibly even faster–to grate the apple than dice it!

Because apple is so juicy, grating it results in a sauce-like (but wonderful) glop. That may sound unappealing, but it’s perfect when you consider that you’ll have apple flavor in every single bite. It also means you won’t have big mushy apple chunks, which is my least favorite part of baked apple oatmeal. (more…)


Blackberry Lime Cheesecake Oatmeal

There are two aspects of this recipe that I’m proud of:
  1. It includes blackberries. The last time I had blackberries, I thought I didn’t actually like them that much.
  2. It includes nondairy cream cheese. The last time I had nondairy cream cheese, I thought I didn’t actually like it that much. 😉

As it turns out, blackberries are delicious. Before, I found them annoyingly seedy. I didn’t have that problem at all this time! There were only a couple seeds, and they were smaller and less obtrusive. As for the nondairy cream cheese, I thought it tasted almost exactly like dairy cream cheese–which simply tells you how long it’s been since I’ve had dairy haha.

Strawberry Almond Oatmeal

Inspired by my recent Berry, Almond, & Coconut Oatmeal, I realized I haven’t done enough with almond extract. So many possibilities!

My favorite aspect of almond extract (besides its taste) is the intensity of its flavor. This allows me to (drum roll please) . . .use the hidden banana trick! Oatmeal without banana is like a cookie without chocolate chips (a poor analogy, considering my favorite cookie is a snickerdoodle).

Anyway, strawberries have been–inexplicably–on sale and in great quality at my local produce market, so I’ve been enjoying them in my oatmeal and salads. Combined with the nutty almond extract, this oatmeal is a fresh and fruity delight.

Strawberry Vanilla Bean Oatmeal

Confession: I did not buy vanilla beans for this recipe.  *gasp*

Truthfully, I found something better: vanilla bean paste (Christmas present from my sister! Thanks, Amy!).

Now, I’m sure the quality of an actual vanilla bean is higher than that of my paste, but the difference is that I have the next best thing up in my cupboard, easily accessible, whenever I need it, for a fraction of the cost. Look at the pictures! You can see the little vanilla dots if you look closely!

Berry, Almond, and Coconut Oatmeal

Whenever I make a recipe with coconut, I become angry with myself for not doing so more often. Coconut is so…perfect in every way. Buttery, rich, flavorful. So great.

This oatmeal combines the lovely combination of almonds and coconut, like my Almond Joy Oatmeal. It also contains a hidden banana, so I guess you could say they’re close cousins. The difference is this one tastes a little healthier (without the chocolate, and the addition of fresh berries)! However, these cousins are equally tasty. 🙂

Apple and Chestnut Oatmeal

When I posted my Berry and Fig Oatmeal and asked readers what ingredient they’d like to see me experiment with, Irene (a frequent commentor) requested chestnuts. My initially reaction was “GTFO.” My only experience (truly, the only one) with chestnuts was last Thanksgiving. I spent that holiday with Allison and her family, and together we prepared a phenomenal Chestnut, Leek, and Apple Stuffing.

Obviously, I loved this dish, but I still couldn’t see myself using chestnuts in oatmeal. However, as I wear out all my pumpkin and sweet potato possibilities, I’m starting to open my mind to different ingredients. Cue the chestnuts.

Strawberry Chocolate Chip Baked Oatmeal

Two baked recipes in one week!

This one is a little more decadent than Tuesday’s Lemon Lover’s recipe. As much as I love the occasional oatmeal with chocolate chips, I definitely have to be careful with how often I do it. I have quite a sensitive stomach, which is what led me to veganism in the first place, so eating chocolate chips in the morning can be a risk for me. Luckily, I had no issues, and even if I had, this oatmeal was so delicious that it wouldn’t have mattered.

Berry Pistachio Oatmeal

A few weeks ago, I splurged on pistachios. It felt irresponsible at the time, but then I tasted one.

It’s not like I had never had a pistachio before. However, I think I’ve only ever had it in mixes of nuts, and the individual varieties kind of lose their distinct flavors.

It’s been difficult for me to save these pistachios for oatmeal only (I often crave just snacking on them), but this recipe received the prestigious honor.

Raspberry Plum Oatmeal

I love plums. I didn’t realize it until fairly recently. They’re such a pleasant size, easy to eat, not messy, and silky-soft on the inside. They are like a beautiful marriage between peaches and apples.

Unfortunately, I haven’t had great luck with them in oatmeal. In my experience, they just don’t give off much flavor. Pairing them with raspberries was quite successful, though! The raspberries provided the much-needed pow of flavor, and the cubes of soft plums could simply add a little variety to each spoonful.
