Strawberry Oat Crumble Bars + Oh She Glows Every Day Cookbook Review
Last month, I completed a self-imposed challenge in which I tried 20 recipes from the original Oh She Glows cookbook. Coincidentally, I’m back today for the virtual cookbook tour of Oh She Glows Every Day, Angela’s second cookbook.
Like the original, this follow-up book seeks to wow plant-based and omni eaters alike with wholesome and hearty meals. Angela’s ability to create soul-enriching and nourishing meals never ceases to amaze me, always bursting with invigorating fresh flavors. If you’re stuck in a frozen veggie burger stage, Oh She Glows Every Day has several enticing recipes that may convince you to swap your ketchup and frozen fries with some green onion and roasted chickpeas. I can’t wait to try The Best Shredded Kale Salad, Mocha Empower Glo Bars, Roasted Breakfast Hash, Roasted Brussels Sprouts and Coconut “Bacon,” and the Sweet Potato Casserole. And that’s just the beginning!
Strawberry Cardamom Oatmeal with Coconut-Cashew Butter

Cherry-Berry Breakfast Cobbler
It’s been a while since my last cobbler recipe! Over a full year, in fact. I found inspiration to return to this format when I found myself with an abundance of fresh cherries, blueberries, and strawberries, all dying (quite literally) to be consumed within 48 hours.

Matcha-Lime Overnight Oatmeal with Strawberries
I’ve recently realized that matcha tastes better in overnight recipes. I don’t know what it is about sitting in the fridge for a few hours, but it does wonders to the unusual flavor of matcha. It subdues the bitterness and leaves you with a sweet oatmeal with a pleasant matcha flavor.

Lychee Berry Oatmeal
I love lychees (and more specifically, lycheetinis), but I had never purchased one, cut into it, and eaten it fresh–until this month. I’m not sure why, but I found it incredibly intimidating. However, once I cut into that unusual peel, I was treated to that wonderful, unmatchable lychee flavor. It’s worth conquering the fear!
Savory Corn, Blueberry, and Basil Oatmeal [Guest Post]
Hi there! I’m Kelsey (@amindfulvegan on Instagram), if we haven’t met yet, and I’m thrilled to be sharing another recipe with you. This recipe is a take on Lauren’s Sweet Corn, Basil, and Blueberry Oatmeal, but where the original was sweet, this take on it is totally savory.
This recipe came to be when my roommate (Hi Kristin) brought me a gallon of blueberries from her grandmother’s house. I remembered seeing Lauren’s recipe and knew I wanted to try it, since there’s so much fresh basil around right now. I guess I hadn’t actually read it though, because I was definitely expecting a savory porridge. When I did read the recipe and found out it was more of a sweet flavor profile, I played around with the ingredients and made the savory oatmeal you see below. (more…)
