Overnight Choco-Raspberry Oatmeal
It’s amazing (or perhaps just frustrating) how being away for a weekend can throw off my blog schedule so much. It’s been six days since my last post! You’d think after a break like this, I’d have some elaborate concoction to share, but alas, this one is pretty simple (but nevertheless delicious!).
My roommies and I went to Boston over the weekend. Considering it’s one of the top three U.S. cities I’ve ever wanted to visit (along with San Francisco and New Orleans!), I was so grateful to have that opportunity. I love my life right now!

Berry-Ginger Sauce
To be honest, I’d be happy eating “boring” oatmeal forever. A simple peanut butter and banana oatmeal makes me absolutely giddy. However, because I own an oatmeal blog where people come to see new and creative ideas, I have to get fancy sometimes. For those of you who like getting fancy, this one’s for you.
Toppings make things special. Just throwing chocolate chips on my oatmeal gets me all excited, so imagine how I felt drizzling on spoonfuls of BRIGHT RED DELICIOUSNESS.

Coconut Oatmeal with Strawberries and Chocolate Chips
How do you feel about chocolate chips for breakfast?
Like me, many of my followers are health-conscious. Therefore, I’m extremely curious about the general consensus on chocolate chips for breakfast. Most chips involve a myriad of unwelcome ingredients (ex: milk, sugar, hydrogenated oils). I’ve also seen a variety of brands make their chips vegan and/or “healthier” by using cocoa liquor instead of actual cocoa to flavor the chips. My current stock (from Trader Joe’s) falls into that category, and although it doesn’t necessarily impress me, I prefer it over some other sketchy brands I’ve seen.

Neapolitan Baked Oatmeal
As I typed out this recipe, I couldn’t help but feel depressed. That is because I may be peaking as an oatmeal blogger. I’m not sure if I can ever top this one:
This recipe, you see, is so elaborate, well thought-out, and mouth-wateringly delicious that I’m not even going to bother posting the instructions for a single serving. It’s way too much work for one serving, and it’s way too delicious to not share (or, if you’re like me, eat every morning for a week).

Blueberry Trail Mix Baked Oatmeal
I dislike only posting twice a week. I was pretty happy with those few weeks back in August and early September when I was able to pump out three recipes each week. Now, I seem to be in a tiny rut.
One problem is that I eat the same baked oatmeal every morning. I have come to really enjoy this system as it allows me to sleep in a little later than I would if I had to cook my oatmeal on the stove every single day. Plus, it gives me a nice weekend project to look forward to. My roommates are always interested in what my “oatmeal of the week” will be, so that’s motivating as well. Unfortunately, that means I’m not trying out a new recipe every single morning. (more…)
Grapefruit Blueberry Oatmeal
I’ve posted a lot of blueberry recipes lately, and I’m not apologizing for it!
But before I get into that…do you know what today is? It’s September 1st. Today is the one-year anniversary of my first day of vegetarianism. As I explained in my “About Me” page, I originally just planned to try one month without meat. About halfway through the month of September, I already knew (at least subconsciously) that I would not be going back. I was in love with it.
Peach Blueberry Oatmeal
Strawberry and bananas, cherry and lime, rhubarb and strawberry… None of those classic fruit combinations appeal to me as much as peach and blueberry. As much as I love a traditional peach cobbler, I’m all for adding blueberries to the equation sometimes.
As I’m writing this post, it just occurred to me that I used to not like blueberries. I liked blueberry-flavored things, like the fake blueberries in Betty Crocker muffin mixes, but the real thing grossed me out entirely. To be honest, I can’t remember really enjoying a blueberry until I made my Baked Blueberry Muffin Oatmeal…and that was not that long ago! Now, a quick click on the “blueberries” label at the bottom of this post shows just how enamored I am with them!
Berry Kiwi Oatmeal
My two weeks of professional development training are over! Next time I return to the school, it will be with actual students. Hurray!
This also means summer is coming to an end, and I’m on a frantic mission to enjoy all the summer fruits while they’re still around. With a bowl of oatmeal, naturally. 🙂
Sweet Potato and Cranberry Oatmeal
Having this job means packing lunches again. My entire first week, I stuck to two meals. The first was a PB&J sandwich. Shocking? No, not at all. 🙂
The second was a baked sweet potato. With Earth Balance. And cinnamon. And a little salt. And dried cranberries. GOOD GRACIOUS.
Raspberry Lemonade Overnight Oatmeal
Have you tried overnight refrigerator oatmeal yet?
It’s a pretty great concept, especially in the summertime. Most days–thanks to the fabulous invention of the air conditioner–I wake up eager for a warm bowl of oatmeal, regardless of the temperature outside. Some days, however, are quite the opposite, and a cold, ready-to-go jar of delicious, silky oatmeal is the perfect compromise.
Actually, compromise seems like a poor word choice. It implies settling for something less than the original. I would say that overnight oatmeal isn’t less than the stove top; it’s just different. Equally awesome for different reasons.
