I know I’m being incredibly overdramatic, but my confession must capture the scale of my new infatuation. This past weekend (thanks to my mother’s birthday present), I tried pepitas for the first time. I’ve had “roasted pumpkin seeds” before, but they were nothing like “pepitas.” You would think they would be equally wonderful (considering pepitas are pumpkin seeds), but there is definitely a difference, the first being that pepitas are as glorious to this night as is a winged messenger of heaven, and “roasted pumpkin seeds” are just a big pile of “meh.”

Black Forest Cake Overnight Oatmeal

You all said to me that you wanted more overnight oatmeal recipes, and this is one that will start your day right. I mean, what could be better than waking up to a BLACK FOREST CAKE!?

This recipe was a tough cookie to crack. Much to my disappointment, cherries are not the most flavorful ingredient, especially in its whole form. Their flavor is locked in within that fragile skin.

The first time I made it, I dropped the berries in whole. In the morning, the oatmeal was very flavorless and did not taste at all like a Black Forest Cake. Then, I tried something a little different:  I blended the cherries first, so the oatmeal soaked up “cherry juice,” which gave it much more flavor.

Cream Cheese Oatmeal with Dried Fruit

This past weekend, I found myself in the unfortunate situation of being out of fresh fruit. I imagine this is a pretty common problem for some people, so I try to make sure I have a wide variety of oatmeal recipes that can appease the most vacant of pantries!

My mom recently sent me a box full of “fancy” dried fruits. By “fancy,” I mean that they are not raisins and bananas. They are the pricier stuff that I can never afford:  pineapple, cherries, and blueberries.

Using what I had, I threw together this recipe. I thought it sounded unimpressive in my head, but I was shocked at how tasty it was! I had to share it.

Black Forest Cake Oatmeal

This morning, a screeching fire alarm woke me up at 4:26 AM. I do not remember being woken up by it, nor do I remember my first thoughts. My first memory today was standing in the middle of my bedroom, thinking, “I should put pants on.”

This morning, I walked down fifteen flights of stairs in a creepy, side stairwell. I sat in the apartment lobby in my pajamas while waiting for the flashing firetruck to give us the okay. I had no idea what my hair looked like, until I spotted that frizzy lion’s mane in the reflection of a window I passed.

This morning, I stood in a crowd of tired, angry residents slouching and moping in front of the elevators, which were frantically shuffling everyone back up to their apartments. One minute passed. Two minutes passed. People started leaning against walls. Three minutes passed. People sat down. Four minutes passed. We lost hope. We took a deep breath. We took the stairs, each step reminding me that it was 5 AM and our lives officially sucked. (more…)


Cranberry Almond Oatmeal

It’s been a little quiet this week, for which I will not apologize! I enjoyed the break. I came down with the flu last weekend, and it set me back quite a bit. I had recipes to post, but I felt pretty tired, busy, and lethargic the rest of my week. It took me heap-loads of ambition to drag myself out of my funk this morning, but I’m finally back.

I recently received an Amazon gift card for Christmas. Being a very strange person, I decided to buy groceries with it. Like anyone who eats freakishly strange but healthy food, some products (e.g. chia seeds!) can be expensive and/or hard to find, and Amazon is a beautiful place to find these things. What did I buy with my earnings? KIND bars.

Blueberry Oat Muffins

I am extraordinarily fond of my Blueberry Muffin Baked Oatmeal recipe. It was my very first baked oatmeal attempt, and it ended up being one of the most popular recipes on my blog. It was actually #1 for several months, until the Salted Brownie came along. 🙂

If that recipe hadn’t turned out as well as it had, I might have been turned off baked oatmeal forever. Instead, it sparked my curiosity. Yes, it was more time-consuming and finicky, but it had its pay-offs. Now, of course, I’m almost as obsessed with baked oatmeal as I am with stove-top.

But I’m getting off-track. I realized today that if I loved that recipe so much, why not convert it to mimic actual blueberry muffins?

Cran-Apple Oatmeal

Growing up, my elementary school was across from my grandmother’s apartment. On days when it was too cold to walk home, I would go to her apartment until my mom could pick me up after work. She’d always make me a snack, but it’d be something simple like peanut butter spread on saltine crackers. It sounds dull, but I loved it.

Along with the snack, she’d also have juice for me. I always thought her juice selections were strange and “grandma-ish,” like cranberry or cran-apple. For some reason, though, drinking it at my grandma’s house while I watched Arthur on PBS made it seem special, even if it wasn’t my favorite.

Cranberry Sauce

Because of Thanksgiving weekend, I knew I wouldn’t have a chance to create a new recipe (I was in Philadelphia with my roommate). I considered doing a “round-up” of recipes with a Thanksgiving theme, or even a list of ways to use Thanksgiving leftovers in your oatmeal. I still think the second idea would be awesome, but I don’t actually have any leftovers except for stuffing, which would NOT go well in oatmeal. 🙂

But one thing I did have was cranberry sauce. Got extra cranberry sauce? Use it in your oatmeal! Either stir it in, or drizzle it on top . . .

You may have to wait until next year for more ideas of how to use leftovers in your oatmeal. 😉

It’s so nice to have a Saturday morning at home again. I returned to my usual weekend morning routine of simultaneously making oatmeal and cleaning the kitchen. Why is cleaning the kitchen so cathartic to me?
