Red Velvet Brownie Baked Oatmeal [Guest Post]
Here’s winner #4 from the brownie baked oatmeal contest! I had a really hard time narrowing down my favorite submissions. đ Â Special apology to Chandler, who sent me these lovely materials weeks ago, and I was supposed to publish it on Monday, but I forgot! Doh. Forgive me, Chandler!
Hello fellow oatmeal lovers! My name is Chandler, I am 20 years old, and I am a recent graduate with a B.A. in Spanish as well as Teaching English as a Second Language. At this point in my life, I am looking forward to grad school in the fall, working a ton, cooking as much as I can, and eating up several boxes of oatmeal a month.
My love for oatmeal has evolved a lot over the years from the early days of Quaker dinosaur egg oatmeal. I, an aspiring paleontologist, would lick all the oatmeal off the dinosaur eggs and then refuse to actually eat the eggs. (They were pretty nasty!) Now I put oatmeal into just about everything and eat it with just about every topping imaginable- cheese, fruits, hummus, nuts, eggs, and even chicken. When I saw Laurenâs brownie baked oatmeal challenge, I instantly knew what recipe I would submit. I have been reading her blog since the very beginning when I was looking for inspiration for my own blog (www.harpandchanscrafts.blogspot.com), which I have unfortunately neglected for a couple of months.
Anyway, I had made Red Velvet Baked Oatmeal for my blog several years back, and I decided to tinker with the recipe and make it even better. I am visiting my family this weekend, and two of my picky little sisters loved the recipe. What they didnât know is that it has a hidden vegetable- beets!- that contribute to the âred velvetâ color. Canât picture beets in a sweet oatmeal recipe? Try it for yourself and see. The pickiest of my sisters said the oatmeal tasted like no bake Christmas cookies! (more…)

Fudgy Beet Oatmeal with Pomegranate
Beets and oatmeal? Beets and chocolate? Fudgy beets? Yes. Yes, I did.
This isn’t the first time I’ve done this. I also combined beets and chocolate to make my Black Forest Oatcakes two years ago. Listen: it works. Trust me.
The other time I put beets in oatmeal, I just diced it because I was feeling lazy. This was a mistake. Diced beets have no place in oatmeal. Every mistake I’ve made on this blog can be blamed on laziness. ? My bad. (more…)
Black Forest Oatcakes…and my blog’s 2nd birthday!
Two years. TWO YEARS! Considering I’ve been running this blog during the two most challenging years of my life (student teaching/senior year, my year of service in Newark, and my first year of teaching in NYC), it’s a pretty big deal that I’ve managed to maintain this blog through it all. To celebrate, I made oatcakes:
But first, let me indulge in my nostalgia. Three fantastic things have happened since the Oatmeal Artist’s first birthday.
- I began my partnership with Country Choice Organic, which has completely changed my life.
- I began the Oatmeal Enthusiast series, which showed me that there are SO MANY PEOPLE that eat oatmeal every single morning, just like me.
- The #oatmealartist hashtag began on Instagram, which always gives me a nice ego boost whenever I’m feeling down. As of right now, there’s over 2,000 pictures on Instagram with the #oatmealartist tag. So cool!

Apple Beet Oatmeal
One of my favorite parts of meeting new people is how they influence my food preferences. Before I met my former roommate Christin, I never sauteed my vegetables (I always steamed or roasted). Before my current roommate Chilee, I avoided mushrooms at all costs. And of course, there was my former boyfriend from my junior year of college, who inadvertently converted me to a vegetarian (and eventually fully herbie).
Then, there’s Allison. She’s taught me you can never use enough cinnamon. She showed me (before going vegan) that “runny eggs” are nothing to be feared. She introduced me to dozens of foods I had ever tried before, like goat cheese and Indian food and RAMEN (the real stuff). Last but not least, with months of effort, she trained me to appreciate her favorite vegetable: beets.
I tried them once. I tried them twice. I tried them several times. Each time, I found them tolerable at best, but why did they taste like dirt? Why were they always cold and gelatinous?
But then this recipe happened. I had thought of the concept ages ago, but making it would force me to confront my wariness of beets. I’m pleased to report that I’m so glad I finally did it!
