Gingerbread Oat Muffins
I never used to enjoy baking things (even baked oatmeal took me awhile to get the hang of), but I am on a muffin spree lately. Once I learned my ways with baking soda and wet to dry ratios, making oatmeal muffins became a blast.
These were originally intended to be banana-gingerbread muffins. However, after preparing the batter, I realized the banana flavor was completely hidden. To be honest, I wasn’t at all upset about that! I actually preferred a straight-up gingerbread flavor, but I knew (or thought) using bananas as a sweetener would change the flavor, so I decided to be realistic and honest and include banana in the name.

Blueberry Oat Muffins
I am extraordinarily fond of my Blueberry Muffin Baked Oatmeal recipe. It was my very first baked oatmeal attempt, and it ended up being one of the most popular recipes on my blog. It was actually #1 for several months, until the Salted Brownie came along. 🙂
If that recipe hadn’t turned out as well as it had, I might have been turned off baked oatmeal forever. Instead, it sparked my curiosity. Yes, it was more time-consuming and finicky, but it had its pay-offs. Now, of course, I’m almost as obsessed with baked oatmeal as I am with stove-top.
But I’m getting off-track. I realized today that if I loved that recipe so much, why not convert it to mimic actual blueberry muffins?

Elvis Oatmeal
When my roommate told me that NYC was still without power below 26th Street, a few places ran through my head. What did Union Square look like? Was Trader Joe’s all right? Did Beyond Sushi weather the storm?
And what about PEANUT BUTTER AND CO.??!!
If you haven’t heard of Peanut Butter and Co., it’s a tiny little shop on Sullivan St. (off Bleecker St.) that specializes in peanut butter sandwiches. I’m serious: check out their menu. It’s one of my absolutely favorite places in the city. Not only do I love gourmet peanut butter sandwiches, but the staff there is positively delightful, and the decor is retro and fun.
Baked Banana Oatmeal & Variations
If I wanted to, I could create ten billion recipes of just baked oatmeal based on bananas. So many possibilities!
I liked that idea at first: more posts, right? However, I didn’t want to look like a cheater. Is it fair to share a recipe for baked banana oatmeal, and two days later, post a recipe for baked chai-spiced banana oatmeal?? Nope. So to be fair, I’m going to consolidate it all into one fantastic post packed with fun ideas! (more…)

Variations on Baked Pumpkin Oatmeal
It’s mid-October, and pumpkin recipes are everywhere. If you’re the type of person that loves this, then read ahead with glee! If you were beyond sick of the pumpkin posts on TasteSpotting and Food Gawker way back on September 1, then I apologize. Another (non-pumpkin-themed) post will be up on Saturday! 🙂

Coconut Banana Baked Oatmeal
Today marks two months in New Jersey! It took a while, but I’ve definitely developed an affection for this interesting city. At first glance, yes, much of the area seems worn down and desolate. However, with a bit of optimism and a lot of exploring, I’ve found much to love about the area.
The hardest part about Newark, in my opinion, is that the restaurant scene is difficult to navigate. It boils down to two main problems: 1) Many of the restaurants are Spanish and Portugese places that serve nothing but meat and seafood, and 2) the restaurants that I really want to visit (coffee shops and cafes) are located in the business district, and are thus only open from 8-5. This is problematic when you consider I work from 7-6.
Neapolitan Baked Oatmeal
As I typed out this recipe, I couldn’t help but feel depressed. That is because I may be peaking as an oatmeal blogger. I’m not sure if I can ever top this one:
This recipe, you see, is so elaborate, well thought-out, and mouth-wateringly delicious that I’m not even going to bother posting the instructions for a single serving. It’s way too much work for one serving, and it’s way too delicious to not share (or, if you’re like me, eat every morning for a week).

Banana Oat-Quinoa Porridge
I’ve only made breakfast quinoa once or twice. It was delicious, but it always bothered me how one serving is only 1/4 a cup (as opposed to 1/2 cup of oats, which feels giant in comparison).
I found a solution: an oat-quinoa hybrid! I had no idea what to expect, but I really enjoyed it. The texture and taste were oddly reminiscent of rice pudding.

Peanut Butter and Banana Baked Oatmeal
Wow! I cannot believe the incredible opportunity I have received. I have never been simultaneously so tired/nervous and so happy/excited. It really feels that I was meant to be here and experience this, no matter how terrifying it all is.
In case you missed the memo, I moved to New Jersey this weekend, and I’m working for one of the many blossoming charter schools in the state. So far, I have only experienced staff training, but I can already tell it’s going to change everything about my life.
One of those things is the fact that I have to wake up around 5:45 every morning. There’s not enough sunlight at that time, so I can’t even photograph my oatmeal. Heck, I barely have time to make my oatmeal.
Thus, I decided to try something I’ve never tried before: baked oatmeal with 4-6 servings, stored in the fridge and reheated in the mornings. I must say, it will never compare to fresh stove top oatmeal, but it does provide a little comfort in the mornings. (more…)
