Cherry Chili Brownie Baked Oatmeal | A Guest Post by Katarzyna #oatmealartist #vegan

My Cherry Chili Brownie Baked Oatmeal was inspired by chocolate my Mom gave me. It was cherry & chili dark chocolate and I absolutely loved it. The only thing it was lacking was . . . the chili flavor. (more…)

Irish Tricolor Oatmeal Smoothie Bowl

As I said last week, Ireland has a special place in my heart. During my time in Ireland, I fell in love with the Irish flag, which is called the Irish Tricolor, according to Wikipedia. How original. ???

Shamrock Oatmeal Smoothie

St. Patrick’s Day is eight days away! Regular readers of the blog will know that Ireland has a special place in my heart. I have only left North America once, and that was a study abroad program in Ireland. You could say it was love at first sight. Green HeartFour Leaf CloverGreen HeartFour Leaf Clover

Thus, every year on St. Patrick’s Day, nostalgia kicks in and I swoon over all the Irish love.

This recipe is, obviously, a spin off McDonald’s shamrock milkshake. But better–there is no added sugar! Just bananas. I adore the use of oats in my smoothies because the soluble fiber slows down the digestion, so it’s not just one quick, massive hit of sugar. I find oat smoothies to be much easier on my sensitive stomach.

But in addition to being nutritious, it’s minty and delicious! It tastes a bit like mint ice cream, which is what inspired me to add the chocolate chips on top. Smiling Face With Heart-Shaped Eyes No regrets.

Lemon Berry Rosemary Oatmeal + Product Review: BetterOats

It has been a while since I put out a lemon recipe. Then I saw this recipe for Lemon Rosemary Shortbread cookies, and considering my recent love for rosemary, I knew this needed to happen.

Lemon Berry Rosemary Oatmeal by the #oatmealartist #betteroats

Lemon pairs well with almost any herb. I’ve already paired it with thyme, but rosemary is my jam right now. This recipe uses the hidden banana trick, and it was adapted closely from my Lemon Blueberry Oatmeal, so if you’re (inexplicably) not into rosemary, you can always just make it sans herb. Gingerbread Persimmon Oatmeal + Product Review: BetterOats

Lately, I have been on the constant prowl for recipes that would work well with persimmon. My philosophy is this: persimmon has a muted but pleasant flavor, and pairs best with bold flavors. That is why I used this delightful fruit atop my Chai-Spiced Pumpkin Oatmeal; it contributed a calm sweetness to an otherwise “loud” oatmeal base.

Next up? Gingerbread.

I have made gingerbread oatmeal a variety of ways: with banana, with sweet potato, and with pumpkin. Truthfully, they all work beautifully, and it all depends on what “background flavor” you want in your life (i.e. just pick your favorite). Alternatively, you could use grated zucchini or yellow squash for a nutritional filler that adds no flavor. (more…)

Banana Eggnog Oatmeal

I have been overthinking eggnog recipes way too much. I think I’ve been so intent on replicating the eggnog experience that I never considered just using eggnog as a flavor enhancer in place of regular almond or soy milk. Once I thought it like that, BAM–I thought of a whole new variety of “5 ingredients or less” recipes.

Why not combine eggnog and banana oatmeal? Is there anything that doesn’t combine well with banana oatmeal? So far, I say no. I dare you to challenge me. 😀

This oatmeal is great on its own, but can be topped in a variety of ways. Pomegranate, anyone?

8 Simple Tricks to Spruce Up Pre-Flavored Oatmeal

Several pictures below originally appeared in my post 10 Tips for Eating Oatmeal While Traveling.

I think we’ve all been in that spot before: maybe you’re stuck with the limited options of a hotel continental breakfast, you’re a guest trying to make your daily porridge in a home without plain oats, a well-intentioned friend has given you a box of Maple & Brown Sugar Oatmeal, you’re “making it work” in a campus dining hall, or perhaps you’re simply trying to use up an old supply of oatmeal from before your transition to homemade porridge.

At one time or another, we’ve all held a packet of Apple Spice or Peaches ’N’ Cream or Maple & Brown Sugar instant oatmeal and thought, “How can I possibly enjoy this?”

Maybe I’m being too presumptuous. Some of you may still like those famous flavored packets. However, judging by the sentiments repeatedly expressed by my Oatmeal Enthusiasts, many of you share my dissatisfaction of the old packets. Once you go homemade, the pre-flavored stuff just doesn’t do it anymore.

Certainly, it may not reach the same level of enjoyment as your usual Sweet Potato Fudge Oatmeal or Peach Cherry Almond Oatmeal at home, but you can hack a flavored packet to make it more tasty!

Here are some tricks to make a flavored packet more enjoyable to your new, sophisticated palette. 😉

Triple Chocolate Baked Oatmeal

“Lauren!” you might have gasped. “Triple chocolate? For breakfast? What happened to your nutrition concerns?”

No fear. It sounds much unhealthier than it actually is. In fact, I was so curious, that I entered the ingredients list into a nutritional calculator to see how this stacked up. Considering how I rarely do this, I was stunned at how great the results were. Despite all the chocolate, it gives you nearly 30 grams of fiber (what?!), 18 grams of protein, and a laundry list of vitamins and minerals, all for under 500 calories. Unbelievable.

Of course, the one hit you will take is in the sugar department, but I think that’s the choice you make when you decide to put chocolate chips in your oatmeal. 🙂

Of course, it does contain chocolate chips, so it is a bit indulgent for breakfast, but that’s all relative, right?

If you make this with a banana like I did, this baked oatmeal is naturally sweetened, packed with nutrients, and filling. If you’re not a fan of banana-flavored chocolate, you could sub hearty sweet potatoes, rich avocado, or neutral-flavored zucchini. (more…)

Black-Bottom Banana Cream Pie Overnight Oatmeal

Is it just me, or does nobody else appreciate pie like I do? Everybody is all about cake, and I’m just like, no, gimme dat pie.

Can any cake actually beat the perfection of a flaky pie crust? Is that sickeningly rich frosting actually better than a cinnamon-sugar crumb topping? Give me peach blueberry pie over red velvet ANY DAY.

Black-Bottom Banana Cream Pie Overnight Oatmeal

For most people I know, if they do like pie, they prefer the cream ones. I find these inferior because they often use cookie-based crusts instead of a flaky, buttery one, but alas, my favorite pie during my childhood was banana cream, admittedly. Since going plant-based, I’ve yet to experience a good one. Sigh. (more…)
