Two baked recipes in one week!

This one is a little more decadent than Tuesday’s Lemon Lover’s recipe. As much as I love the occasional oatmeal with chocolate chips, I definitely have to be careful with how often I do it. I have quite a sensitive stomach, which is what led me to veganism in the first place, so eating chocolate chips in the morning can be a risk for me. Luckily, I had no issues, and even if I had, this oatmeal was so delicious that it wouldn’t have mattered.

Lemon Lover’s Baked Oatmeal

As I type this, my eyelids are drooping. I don’t often talk about my work life on here, but times like this make it difficult to contemplate anything else. I spent the weekend redecorating my classroom, and on Saturday I was at school from 10 AM to 10 PM. ON THE WEEKEND, you guys! Today, I worked a similar length, but at least I was able to spend a portion of those hours working in my favorite coffee shop.

When I made this oatmeal on Sunday morning, I struggled to stay motivated. After working 12 hours a day, 8 days in a row, baking an oatmeal seems incredibly undesirable. However, this is what I scheduled to prepare over the weekend, and I had all the ingredients to do so. I knew the results would be worth it.

Peanut Butter and Grape Baked Oatmeal

Yeah, I finally made another baked oatmeal recipe. What can I say? The stove has my heart!

However, grapes in oatmeal fascinate me, and I’ve also been interested in what happens to grapes when they’re baked. If you couldn’t guess, this oatmeal is inspired by PB&J; the grapes take the place of grape jelly. (I grew up eating grape jelly, and it wasn’t until last year that I finally accepted strawberry as another option. Still, grape is the best.)

Chocolate Zucchini Baked Oatmeal

It’s been quite a long time since I’ve shared a recipe for baked oatmeal. I devoted most of July to stove-top recipes and had little ambition for heating up the oven.

I made an exception for this recipe. I came in possession of a zucchini from the farmers’ market in my hometown before I left for New York, and I knew I had to attempt this recipe. I don’t buy zucchinis often, so it was now or never.

Strawberry Baked Oatmeal

Simple recipes thrill me. Don’t get me wrong: Neopolitan Baked Oatmeal is a beast, but sometimes I enjoy a return to simplicity. Strawberry Baked Oatmeal definitely fits that definition.

I stand by the proclamation that baked oatmeal is best with bananas, but this recipe is unadulterated strawberry heaven. If you want a marriage of the two, you could always try my Strawberry Banana Baked Oatmeal.

Berry Cream Cheese Baked Oatmeal

My roommate Allison pulled a tub of strawberries out of the fridge. It was the robin’s-egg-blue-colored, recyclable cardboard crate that they give out at farmer’s markets.

“Will you make me strawberry cheesecake oatmeal in the morning?” she asked. “My mom bought me these strawberries and I need to use them up.”

I hesitated. My mind recalled all my failed attempts at that very recipe from earlier this year. Maybe it just needs a little lemon juice. Less lemon juice. Maybe some apple cider vinegar will help. More cream cheese. More yogurt. Less yogurt. I eventually came to the conclusion it was an impossible feat, yet she was requesting me to attempt it once more. This time, however, I wouldn’t have to jump the hurdle of making everything nondairy, and that could be cure. Sorry, but Tofutti sucks.

I knew from the moment I set the ramekin in the oatmeal that I had failed to replicate an actual cheesecake, but I remained hopeful that I was providing a suitable alternative. I presented the baked creation to Allison, who was sitting eagerly on the couch in her pajamas. “Berry Cream Cheese Baked Oatmeal,” I titled it.

“Ohhhhhhhh my GOD!” Allison exclaimed after her first bite. I don’t know if I’ll ever have success at making a cheesecake oatmeal, but for the time being, I know I can make a hell of a cream cheese baked oatmeal. 🙂

Oatmeal-Raisin Cookie Baked Oatmeal

Okay, let me be upfront: Oatmeal-Raisin Cookies do not rank high on my cookie list. I’d much rather have a Snickerdoodle. Or a Peanut Butter. Or a Chocolate Chip. But not an Oatmeal-Raisin.

But I still felt like it was wrong to have an oatmeal blog without an Oatmeal-Raisin Cookie recipe, so here it is. Humble, but with the earthy comfort of cinnamon.

Irish Soda Bread Baked Oatmeal

I normally don’t get into “holiday recipes.” In fact, I can barely tolerate visiting my favorite sites (FoodGawker, TasteSpotting, and FindingVegan) during major holidays because I find them almost nauseating. I used to think Valentine’s Day was the worst, but now I’m starting to think St. Patrick’s Day might be. I mean, what’s with everything being dyed fluorescent green?

But alas, here I am, joining the club:

When I think of my time in Ireland, I think of soda bread. (Okay, and muesli…) For those of you who have never had authentic soda bread (not sweet, not cake-like, not made with white flour), soda bread is a wonderful treat for any time of the day. It’s best as a side with some SOUP (soup and soda bread made up about 50% of my diet during my time overseas), but it’s also lovely at breakfast. With jam or butter, it was a hearty start to the day, worlds better than a slice of toasted WonderBread.

This is another oatmeal idea that appears to have a double identity; it can’t decide whether it’s breakfast or dessert! I actually baked this on a Sunday afternoon, and then let it wait for me in the fridge until Monday morning. It was so painful having to wait that long!

Pecan Pie Baked Oatmeal

I have another confession to make, guys. I’ve never had pecan pie before. Just like I had never had sweet potato pie or a gingerbread latte before I made those into oatmeal recipes!

But as usual, I made sure to study “classic” recipes before I made my recipe. You will find no corn syrup or eggs in this recipe, but you WILL find a (un)healthy dose of maple syrup! Forgive me; it’s not my most nutritious recipe. 🙂 However, if this isn’t something you’re willing to try for breakfast, I think this oatmeal could make an equally appealing dessert! By dessert standards, it’s truly quite healthy!
