Dear school lunches,

I have a problem with you. You force dairy product on your students. You teach students that vegetables are gray and soggy. You act like pizza once a week is a normal way of life. You condone Pop Tarts as a suitable breakfast.

But occasionally, you have your perks. If it weren’t for you, I never would have had a churro. Of course, I later learned that those soggy cold churros you gave us were not even remotely close to the pure pleasure of an authentic, crisp churro, but exposure is everything. (more…)


Choco-Pumpkin Baked Oatmeal Parfait

I made this recipe weeks ago, but it took me forever to share it because I didn’t like the pictures. Once I edited them, I realized they weren’t that bad, but still nothing great.

Ever since making my Brownie Baked Oatmeal Parfait, I have wanted to do something similar. I’m a huge fan of chocolate pudding made from avocados, so instead of using yogurt (as I did in the aforementioned parfait), I decided to layer it with some clean, vegan chocolate pudding!  (more…)

5 Back-to-School Oat-tastic Solutions for Students & Teachers

Some people think students and teachers live a different world. WRONG. I became a teacher because I wanted to be a student forever, and it’s the closest I could get.

Either way, both students and teachers have some early mornings and long days. And both groups are known for skipping meals–particularly breakfast!

Here are 5 solutions for enjoying your oatmeal during that dreaded morning rush!

1. Overnight Oatmeal!

 

Easiest solution. I receive dozens of comments a week about the ease and “brilliance” of overnight oatmeal (I can’t take the credit for the invention of this meal, sadly). You could make this the night before, or you could prep several to last the week so you don’t have to think about it every night. In the morning, the oats are soft and pillowy. If you don’t have enough time to eat at home, this oatmeal travels well because it can be eaten cold or (if you have access at school) warmed up in the microwave! My recommendations: Chocolate Banana Overnight Oatmeal, Pumpkin Pie Overnight Oatmeal, and Banana Bread Overnight Oatmeal (follow the stove-top recipe but reduce the amount of liquid to 1/2 a cup).

Frosted Brownie Baked Oatmeal

You know what’s fun? Eating dessert for breakfast.

I mean, I could never literally eat dessert for breakfast–at least not what most people consider dessert. Thanks to my IBS, I have the world’s most sensitive stomach. Living in New York City, I enjoy a variety of vegan desserts frequently (shout-out to Wild Ginger and the PERFECTION that is their Peanut Butter Bomb Cake), but it never takes long for the pain to settle in! Thus, when I order desserts while eating out, it’s often a conscious choice with a careful consideration of the consequences.

Strawberry Rhubarb Breakfast Cobbler

FINALLY I got my hands on some rhubarb. I thought the entire summer was going to slip away without me finding some. Would you believe my sister had some the entire time?

Considering how much I enjoyed my Blueberry Breakfast Cobbler, I decided to try something similar with my rhubarb. As you can see, the result was gorgeous.

Apple Baked Oatmeal with Espresso Almond Butter Frosting

Double Berry Baked Oatmeal with Lemon Curd

As summer approaches (just a couple weeks away!), everyone is craving lighter and brighter recipes. One of my favorite parts of summer is all the produce, especially the berries.

I really do challenge myself to develop non-banana recipes, just to balance things out on here. This recipe uses mashed raspberries instead of my usual mashed banana, and the blueberries are delightful because they burst and bubble in the oven.

The lemon curd is optional, but it definitely adds to the summery brightness of the recipe and makes the serving a little larger.
