Mocha Baked Oatmeal (with Almond Butter Center) + my blog’s 3rd birthday!
Happy birthday, blog.
Today, you turn three. You’re a toddler, but better because you don’t need to be potty trained. You don’t need to be watched. I never have to worry about you coloring the walls. That’s pretty cool.
To celebrate the birth of my baby, I went with a recipe that uses all my favorite ingredients: chocolate, coffee, banana (which is optional), almond butter, and happiness. Yes, happiness.*

Strawberry Shortcake Baked Oatmeal
Ahhh yes. This recipe brings me back to my childhood.
I spent so many holiday celebrations enjoying strawberry shortcake at my grandma’s house. To be honest, it wasn’t traditional strawberry shortcake. Brownie Baked Oatmeal with Mint Avocado Frosting
Happy early St. Patrick’s Day! Having studied abroad in Ireland, I have a special place in my heart for St. Patrick’s Day.
I considered utilizing my Jameson collection for my St. Patrick’s Day-themed recipe this year, but decided to keep it PG and finally make the Mint Avocado Frosting I’ve been dreaming of.
Chocolate Pecan Baked Oatmeal
Zucchinis have changed my life. Having pureed zucchini in my recipes has truly opened up another world. Is it just me, or have all of my recipes for the past month included zucchini? I apologize for that. Actually, no I don’t. Because they’re delightful.
Yellow Cake Baked Oatmeal with Chocolate PB2 Frosting
Did you know that they only real difference between yellow cake and a regular “white” cake is just the use of egg yolks? My mom is a cake decorator (in addition to her full-time job as my best friend an accountant), so I’ve seen her make many a white cake. I remember her telling me once that the recipe used only egg whites because the yolk would turn the cake yellow…so I guess it makes sense that a yellow cake uses the whole egg.
Thus, when I decided I wanted to make this recipe, it left me puzzled. How would I recreate it without eggs (not vegan) or food coloring (too many chemicals)? And how could I make it without it tasting like bananas?
The Brownie Collection
Sometimes, I post a recipe and am amazed at the amount of hits it acquires in just its first couple of days. One recipe that consistently accomplishes this is my brownie recipe. I’ve done many variations, and nearly all of them became an instant sensation, racking up more Facebook likes than other others.
It makes sense; people love brownies, but these brownies are ten times healthier than your typical fudgy dessert. It’s basically a win-win.
Although I’m certain there are more to come, here is my brownie collection for your dining pleasures, ranked in order of my favorite. 🙂
7. Cranberry Brownie Baked Oatmeal
Since one of them had to take the “least favorite” spot, I chose this one. I love experimenting with cranberries in recipes, but I must admit they’re not my favorite. Regardless, the tartness of the cranberries (which I like when I’m in the mood for it) is a unique twist to the typical brownie. (more…)
Peppermint Brownie Baked Oatmeal
This recipe is SO happy to meet you. I wanted to make it LAST December, but I dropped the ball. I wanted to make it all year, but I knew everyone would appreciate it the most if I delivered it during the holidays.
Mint + chocolate is my favorite flavor combination. Most people would guess chocolate + peanut butter, but I’m a little pickier about that. It depends on the type of chocolate, the type of peanut butter, etc. However, mint + chocolate? Yes. Always. Every time.

Cinnamon Raisin Baked Oatmeal with Raisin-Walnut Cream Cheese
This post is all about bagels. And oatmeal.
But mostly bagels.
One year ago, Allison and I set out on a challenge: to try the top bagel shops in New York City. We found a list of the top 16 bagel shops and vowed to try each of them before the year was over. (Sixteen places may not sound like a lot to do in one year, but if you’ve seen a NY-style bagel before, you’ll know that it’s a rather gluttonous experience to be enjoyed in moderation…) (more…)
White Chocolate Cranberry Baked Oatmeal
Well, here it is: my first Christmas-themed recipe of the season. I bought more vegan white chocolate chips just for this. Unfortunately, they come in packs of 4 on Amazon, which means I irresponsibly devoured two of the bags by the handful already . I vow to use the rest for oatmeal only. 🙂
I recently bought some fresh cranberries from the Union Square Greenmarket (seriously, is there anything that place doesn’t have?).
Biscuit Baked Oatmeal with Vegan Sausage Gravy
Have I talked about Happy Herbivore on here before? *searches* Yep, it looks like I have. I adore Happy Herbivore. I stopped buying cookbooks a couple years ago because I want to have a mobile lifestyle, and lugging around a library was not going to work out. Owning cookbooks when you can find a recipe for nearly everything you want online for free is also…just unnecessary, right?
However, I gladly own the first two Happy Herbivore cookbooks (and did not mind lugging them when I moved back in June). Lindsay’s recipes are so easy, quick, and functional. They are “everyday” meals…nothing that I need to motivate myself to make. I make something from one of her cookbooks at least once a week (typically the mac and cheese, haha). (more…)
