Red Velvet Brownie Baked Oatmeal [Guest Post]
Here’s winner #4 from the brownie baked oatmeal contest! I had a really hard time narrowing down my favorite submissions. š Ā Special apology to Chandler, who sent me these lovely materials weeks ago, and I was supposed to publish it on Monday, but I forgot! Doh. Forgive me, Chandler!
Hello fellow oatmeal lovers! My name is Chandler, I am 20 years old, and I am a recent graduate with a B.A. in Spanish as well as Teaching English as a Second Language. At this point in my life, I am looking forward to grad school in the fall, working a ton, cooking as much as I can, and eating up several boxes of oatmeal a month.
My love for oatmeal has evolved a lot over the years from the early days of Quaker dinosaur egg oatmeal. I, an aspiring paleontologist, would lick all the oatmeal off the dinosaur eggs and then refuse to actually eat the eggs. (They were pretty nasty!) Now I put oatmeal into just about everything and eat it with just about every topping imaginable- cheese, fruits, hummus, nuts, eggs, and even chicken. When I saw Laurenās brownie baked oatmeal challenge, I instantly knew what recipe I would submit. I have been reading her blog since the very beginning when I was looking for inspiration for my own blog (www.harpandchanscrafts.blogspot.com), which I have unfortunately neglected for a couple of months.
Anyway, I had made Red Velvet Baked Oatmeal for my blog several years back, and I decided to tinker with the recipe and make it even better. I am visiting my family this weekend, and two of my picky little sisters loved the recipe. What they didnāt know is that it has a hidden vegetable- beets!- that contribute to the āred velvetā color. Canāt picture beets in a sweet oatmeal recipe? Try it for yourself and see. The pickiest of my sisters said the oatmeal tasted like no bake Christmas cookies! (more…)

Peanut Butter Cheesecake Swirled Brownie Baked Oatmeal [Guest Post]
This is the second recipe winner from my Brownie Baked Oatmeal contest! How beautiful are these photos?Ā ? Enjoy!
First of all, let me thank Lauren. Two years ago I had an oat packet in the pantry and I didnāt know how to use it. In Italy most of the people think that oats are to be eaten as they are, but I found them as flavourful as paper.Ā ?
I started to search on Google if I could find something more interesting (and healthy than granola packed with sugarĀ ?). I discovered oatmeal, and immediately fell in love with Laurenās blog! It was full of ideas and my breakfast was never the same! (more…)

Cherry Chili Brownie Baked Oatmeal [Guest Post]
This is recipe #1 from the brownie baked oatmeal contest!!! This winning submission comes to us courtesy of Katarzyna.Ā
My Cherry Chili Brownie Baked Oatmeal was inspired by chocolate my Mom gave me. It was cherry & chili dark chocolate and I absolutely loved it. The only thing it was lacking was . . . the chili flavor. (more…)

Tahini Swirl Brownie Baked Oatmeal
I probably shouldn’t be posting brownie recipes immediately after opening up a contest for brownie recipes.Ā ?Ā I couldn’t resist.
Is anyone else kind of obsessed with tahini? I can’t seem to get enough of it lately. I use it to make salad dressings, in smoothies, on oatmeal. All the tahini, all the time.

Sweet Potato Chocolate Chip Baked Oatmeal
Confession: when I buy a bag of chocolate chips, they’re usually gone within a week or two. That’s why I will go such long stretches without chocolate chip recipes. If I had a bag in my kitchen all the time, I would go through about six a month. I just can’t keep my hands out of them!
So you can imagine my surprise the other day when I was digging for something in my cupboard and found the final few tablespoons of chocolate chips in a forgotten bag stuffed in the back. Since I had some mashed sweet potato prepared for oatmeal meal prep left in the fridge, I set to work on this recipe. (more…)
Rosemary Chocolate Chip Baked Oatmeal
HOLD YOUR JUDGMENT. Hear me out.
Before you scrunch up your nose, you should know thatĀ I did not come up with this concept.Ā It’s already a thing. Just ask Pinterest. In other words, many people have alreadyĀ given this baby the stamp of approval, so you have no reason not to try it.
Here’s how I discovered it. My favorite coffee shop, which I have visited over 140 times because espresso is a fundamental human need, recently began selling salted rosemary chocolate chip cookies. There are several aspects of this that grabbed my attention:
- Salted cookies are fabulous.
- Chocolate is wonderful.
- Rosemary is my Herb of the Moment.
- Mmm,Ā cookies.
Carrot Cake Baked Oatmeal with Cream Cheese
I’m not going to sugar-coat this: I hate these pictures. I planned to post this recipe ages ago, but I hated the pictures too much. However, I’m also too lazy to retake them.
Ugly pictures it is, then.
This recipe is honestly just my Carrot Cake Baked Oatmeal with Tofutti* cream cheese swirled in. Ground-breaking, I know. But is there any better compliment to carrot cake than cream cheese? (Don’t you dare say raisins.)

Turtle Cheesecake Baked Oatmeal
Welp, if this isn’t a dessert oatmeal, I don’t know what is.
I told you I was going to make several variations on my Cheesecake Baked Oatmeal, did I not? Here is the first of many. I’m not sure why I decided to start with the fanciest, but I have to start somewhere, n’est-ce pas? I would argue, however, that turtle cheesecakeĀ is one of the more popular variations on the popular dessert.

Gingerbread Cream Cheese Baked Oatmeal
It’s December! That means it’s time to start rolling out the Christmas-inspired recipes. Yippee!
Gingerbread cookies are interesting. What really is the difference between gingerbread cookies and ginger molasses cookies? Can anyone answer this for me? They taste the same to me. Is it just the fact that gingerbread cookies are flat and snappy, while ginger molasses cookies tend to be puffier and softer? Yes? No? Maybe? And where do gingersnaps fit in this category? They all taste the same, am I right?!
Anyway, I feel like “gingersnaps” and “ginger molasses” cookies are enjoyed year round, but gingerbread cookies (particularly gingerbreadĀ manĀ cookies) are specifically associated with the holiday season. I think it has to do with the hearty earthiness of the gingerbread flavor. We seem to like those flavors more during the winter months than the summer months.
Am I crazy? Does all of this sound made up? I just don’t know.
