Variations on Baked Pumpkin Oatmeal
It’s mid-October, and pumpkin recipes are everywhere. If you’re the type of person that loves this, then read ahead with glee! If you were beyond sick of the pumpkin posts on TasteSpotting and Food Gawker way back on September 1, then I apologize. Another (non-pumpkin-themed) post will be up on Saturday! 🙂

Apple Nut Butter Baked Oatmeal
My favorite snack ever is apples and peanut butter. I don’t understand why people put caramel on apples. Gross! Peanut butter is ten times better.
So naturally, I really liked this oatmeal. Normally, I would just title this “Apple Peanut Butter Baked Oatmeal.” However, I went all out this week and bought ALMOND BUTTER for the first time! What a great combination! Still, I have absolutely no doubt that peanut butter would be magical, if not better than the almond butter. 🙂 (more…)
Green Apple and Walnut Oatmeal
I went apple picking for the first time today. Or the second…maybe. I grew up near an orchard, and we went there once on a class field trip, but I can’t remember if we actually got to do any picking, or if we just walked around the rest of the place. Apple Pie Baked Oatmeal
I never saw it coming, but…
I’m starting to like baked oatmeal. I stopped incessantly craving stove-top oats and started truly appreciating the baked version. I suppose that’s a good thing since that’s what I’m stuck with right now.
Apple Pie Oatmeal
As with the Banana Bread Oatmeal, it’s a little shocking that it took me so long to post such a basic, fundamental recipe. I guess I was in no hurry to post these classic recipes because they’re already in abundance. Search “apple pie oatmeal” on Pinterest and you’ll have an overwhelming supply of options to choose from.
Despite this, it felt wrong to host a blog dedicated to oatmeal without including this simple recipe, so here’s my version. It is very similar to my Apple Cinnamon Oatmeal, but uses apple pie spice instead of just cinnamon. You can buy this in a supermarket, but I made my own blend using this recipe. If you have pumpkin pie spice on hand, you could use that as well; they’re very similar. (more…)
TIP: Dicing Apples (Quickly!)
I have many apple recipes coming your way, so I thought I’d give you this quick tutorial and other tips for working with apples!
Many of my “standard” oatmeal recipes include apples. I always, always, always add them to the oatmeal immediately after the oats. This gives them several minutes to become soft, and the oats have a chance to soak up some of the apple’s juices.
Not surprisingly, I’ve become a pro at dicing the nummy fruit in a way that is quick and wastes as little of it as possible. Here are the steps I follow to speed through this process as fast as possible:
1. Cut the apple in half, and then quarters.
2. Take one quarter. With a paring knife, cut a narrow “half moon” shape from the inside edge–just enough to get rid of the core. (I continued using my chef’s knife because I’m lazy like that. Do as I say, not as I do. 😉 I’m a professional.) I typically do this step over my sink (because I have a garbage disposal) so clean-up is easier. If you don’t have a garbage disposal, you can do this over your trash can…just don’t drop the apple! 🙂
3. Now, slice the quarter into thirds.
4. For each of the three slices, dice them quickly into the saucepan. I aim for approximately 1-inch cubes or so.
5. Repeat with the remaining quarters!*
*Note: I frequently only use 1/2 an apple to make my oatmeal. Thus, I will cut my apple in half, and then place one half in an air-tight container and place in the fridge. In my experience, you don’t need to add any juices or special chemicals to prevent it from browning. I’ve had great success with this method; I’ll use one half on one morning, and the next morning, the other half is still in great condition, waiting for me! 🙂

Coconut-Lime Oatmeal with Apples
The best thing ever happened when I was at the supermarket the other day: organic Red Delicious apples were on SALE. Granted, it was still $1.99/lb, but that’s still much better than 2.99/lb!
My soul always dies a little bit during the summer months when apples are out of season. Why can’t all produce be in season all the time? 🙂
Okay, I don’t really mean that. There is something exciting about fruits and veggies coming in and out of season. It also adds a sentimental value; squash and pumpkins and apples make me dream of autumn leaves and crisp, cool breezes; sweet corn and zucchini remind me of hot summer cookouts; asparagus and rhubarb and strawberries make me grin with the thought of spring and the promise of warmer days. Apple-Cherry Oatmeal
My family is quite accepting of my oatmeal love. In fact, when we were camping the other day, my mom made sure to have some rolled oats and almond milk packed for me. How sweet!
Even more sweet was what she bought for me: fresh cherries. I’ve wanted to use them in oatmeal for the longest time, but they’re so gosh darn expensive! I mentioned to her that I’ve always wanted some, and much to my delight, she actually bought some! (more…)
Loaded Banana Oatmeal
Do you ever have trouble deciding which kind of oatmeal to make in the morning because you kind of just want everything??
If so, this one’s for YOU. It’s like an Everything Bagel, without the garlic.
Normally, when we hear the word “loaded,” we think of heart attacks like loaded chili or loaded baked potatoes, which usually feature bacon, sour cream, and junk food like “Funyuns.” No, thanks.
THIS loaded concoction can be as healthy (or unhealthy) as you like. For a healthier route, look for toppings like fresh fruit, dried fruit, peanut butter, puffed rice, any type of yogurt, nuts, raw chia or hemp seed, banana butter, sunflower or pumpkin seeds, shredded coconut, granola, or more sliced banana. You could also add maple syrup or honey on top.

Honey Nut Oatmeal with Apples

The idea behind this recipe began a while ago, but I’ll take you back even further: I highly admire several food activists fighting Big Food these days. One of my idols right now is Andy Bellatti, a registered dietitian from Seattle. He’s one of the best tweeters, constantly posting clever, educational, and witty updates. He’s also friendly and helpful, and he always answers any questions I ask him.
One of these questions popped up about a month and a half ago. I saw that bizarre PB2 product at the store; it’s basically a jar of dried peanut butter, in the form of powder. I rolled my eyes the first time I saw it, but then I couldn’t stop thinking about it later. Think of the possibilities! And what would it be like in my oatmeal? Wouldn’t it be like using cocoa powder instead of chocolate syrup (not to suggest chocolate syrup is in any way nutritionally similar to peanut butter!)?
