Strawberry Pineapple Oatmeal

Over the month of August, I spent hours (at least 30) plugging in all my recipes (all 200+ of them!) to a professional formatter. You’ve probably noticed that my blog displays recipes differently than they used to (and you can Pin and Tweet directly from the recipe), but the other intention was to have a more attractive recipe index. So click on “Recipe Index” above and “oooh” and “ahhhh” at all the prettiness!
Once you do that, come back and try this new recipe. It’s less than five ingredients, which I think is always a plus. I really appreciate a recipe that stars fruit and only fruit. . .no expensive extracts or nuts necessary!
Tiger Stripes Oatmeal
Confession: it took me less than a week to polish off this jar of Dark Chocolate Dreams peanut butter. I have no regrets. I’m not ashamed.
I got to make all the recipes I was hoping to make, so that expensive jar served its purpose. It served its purpose well, in fact. For example, it really made this particular recipe a treat. Oranges in oatmeal tend to be somewhat lackluster on their own. I worried about this porridge being too “plain.” If you look at the ingredients list, after all, the orange basically has to hold its own.
However, a little bit of Dark Chocolate Dreams was all it took to make this extraordinary.
Raspberry Fudge Oatmeal
I must say, I’m an avid supporter of these creamy, fudgy porridges. Seriously, what could be better than a bowl of whole grain oatmeal with no added sugar that tastes exactly like the batter of a chocolate dessert?! I love the decadent base of my Fudgy Banana and Peanut Butter Oatmeal; the Brownie Batter Oatmeal is to-die for; and now I have Raspberry Fudge to add to my list.
This oatmeal is perfect for those of you who want the creamy fudginess of my chocolate recipes, but without the banana. As much as I worship bananas in my oatmeal, I totally understand those of you who are averse. I myself went through an anti-banana phase. If you like raspberries, here is your solution.
Strawberry Kiwi Oatmeal
I don’t remember much from elementary school—especially anything of importance. However, I easily recall the Ocean Spray vending machine outside the cafeteria. At a certain point in the day (after afternoon recess, I think?), we were allowed to walk by ourselves to the vending machine and put in 50 cents to get a can of Ocean Spray juice.
There were the standard options, like orange, apple, and grape, but my favorite was strawberry kiwi. Now, I shudder at the thought of all this juice and its effect on my beautiful teeth, but I definitely enjoyed it back then.

Sweet Potato and Soyrizo Oatmeal
Let’s all take a moment to acknowledge just how fantastic soyrizo (aka soy chorizo) is.
For those of you who aren’t familiar with it, it’s the vegetarian version of chorizo, a Spanish sausage. My first experience with it happened at my favorite restaurant in Newark, Elbow Room (now closed). It’s a specialty mac and cheese joint, and it’s the cutest little thing. They have this ridiculous vegan queso mac, made with a housemade vegan cheese sauce (meant to replicate queso fondido), soyrizo, avocado, cilantro, and fried tortilla strips. I was allllllll about that place last year.

Pineapple Jalapeno Oatmeal
I have discovered an imperfection in Trader Joe’s. It has taken me a year, but I finally found it. Trader Joe’s does not sell individual jalapeño peppers. If you wish to purchase one, you must buy a container of them that holds SEVEN PEPPERS.
Because who doesn’t need seven jalapeño peppers at one time?!
Feeling clever, I purchased one of their “guacamole kits” instead. It contains ONE jalapeño, two avocados, some garlic, a lime, and two tomatoes. I can use the avocados without a sweat, and I can easily find an excuse to use a lime. The garlic will remain usable for weeks and will definitely serve its purpose eventually. The tomatoes, however, will be a struggle. I might try and make tomato sauce or something (I have garlic, after all!).
Fig and Banana Muesli
I know hundreds of people in my own neighborhood live without a roof over their head or food to eat. They can barely afford a loaf of bread, let alone figs. Still, I have to say that not having gas really sucks. Cold showers suck. Not having a functional stove sucks. Not having an oven that heats up sucks.
Luckily, I’ve had dozens of recipes from July to post, but those are running out. I’m eager to “stay ahead” of the posts. I don’t like feeling pressure to slap a post together just for the sake of staying on schedule. Moreover, I just have to admit that eating overnight oatmeal cold is just not my thing.
Oh yeah, did I mention I don’t have a microwave either?!

Applesauce Overnight Oatmeal
If you’ve tried (and enjoyed) my Applesauce Oatmeal, you will likely appreciate today’s recipe. It’s truly one of my easiest recipes in the history of EVER.
Also, it tastes wonderful. I kid you not, this oatmeal tastes like straight-up apple pie. It’s one of the few recipes that I eat cold (I have a bias for hot porridge), but only because I am so desperate to shovel it in my mouth as fast as I can.

Orange Strawberry Oatmeal
I know it’s still mid-summer, but I always experience such mixed emotions regarding the changing seasons. Earlier this morning, I was fantasizing about Sweet Potato and Cranberry Oatmeal and Pumpkin Pie Baked Oatmeal. I was drooling over the idea of autumn and imagining myself strutting the sidewalks of Manhattan with my light trench coat and some hot tea. Only a couple hours later, I noticed it was already the end of July, and my throat dried up a little bit. Where has my summer gone? I panicked.
What does this have to do with today’s recipe? This oatmeal just strikes me as a refreshing summer recipe, so that’s what led me to look at the calendar and notice how late in July it is.
Lemon Blueberry Oatmeal
Today marks the start of my final week in the Midwest. I must say I’m eager to return to the East Coast and ride subways to my heart’s desire. And eat brunch in the Upper West Side. And shop at Trader Joe’s. And read in Central Park. And all that good stuff.
I enjoyed an excellent morning in Minnesota today, though. I visited the farmer’s market, which is small but mighty. Only four vendors had set up under the picnic shelter of the lakeside park. However, I was pleasantly surprised by the selection this week. Despite only having four vendors, the variety was impressive: fresh breads and baked goods, maple syrup and goodies made with it (maple butter!), and two “typical” produce vendors.
