Peach Melba Oatmeal

It’s June 9th. That means we have 2.5 weeks of school left. In 2.5 weeks, I’ll be bidding farewell to students who I likely will never see again. I’ll be embracing the three kids I’ve tutored daily for over nine months. Let’s be honest:  I’ll probably cry.

But on the other hand, I’m very eager for summer vacation. Like most inhabitants of this world, I look forward to the summer season and all it represents. Certainly, summer is not my favorite season (I prefer autumn, especially here on the east coast!), but how can one not love summer? Vacations, sundresses, lazy Saturdays in Central Park, cookouts, afternoons at the pool or the beach….and summer produce.

Oh mercy, I do love summer produce…the watermelon, berries, and peaches. It’s a little early for true peach season right now, but they’ve started popping up at Trader Joe’s. When I saw they were selling small crates of them for $3.49, I couldn’t resist.

Lemon Poppy Seed Oat Muffins

Muffins again? I know, but I’m not sorry. I had an urge to make muffins, so I decided to make the most out of the urge and experiment with multiple recipes. Hence, I give you experiment #2 . . . . lemon poppy seed!

These muffins are slightly more traditional than the Thin Mints Muffins (although not quite as decadent!). They are perfect for an easy breakfast or on-the-go snack. If you want to use them for dessert, you could top them with a glaze!

Savory Pizza Porridge

I always thought this recipe was “pretty good,” but I became quite fond of it over the summer of 2014 when I moved into my new apartment and did not have a working stove (ugh). I was also only there for a few days before flying to Minnesota, so I didn’t want to invest in many groceries. Thus, my go-to meal twice a day was a very plain pizza porridge made in the microwave.

It was pretty much just oatmeal, marinara, two florets of broccoli (I was trying to make the crown last for the entire week), and some Daiya. You would think a week of that would be sickening, but instead, it strengthened my love for it. I now make this fairly regularly!

Thin Mints Oat Muffins

Happy Sunday, everyone!

What’s the weather like in your neck of the woods? It’s crazy hot here. I was in Philadelphia all week chaperoning a school field trip, and the students and I just trudged around, sweating and fanning ourselves the whole time. Gross!

My roommate and I had planned to spend Saturday afternoon at Central Park, but it was just too darn hot. Sweltering. Blistering. Stroke-inducing. So instead, I stayed inside in the air conditioning and made some muffins for YOU!

Hidden Banana Oatmeal Recipes

I may be an organic-loving food elitist that sticks her nose up at fast food joints, but the truth is, I can be super cheap. When I do my grocery shopping, I stock up on bananas, apples, and oranges. This girl can’t afford mangoes and grapefruit on a regular basis!

The bad part about always having bananas on hand is that sometimes I just really don’t want bananas in my oatmeal that day! Luckily, I’ve found ways of masking the banana flavor while still enjoying its creamy and nutritious properties. Here are my favorite recipes that utilize banana without actually letting you taste it. (I tried to narrow it down to five, but I just couldn’t knock it down from six!) The great news is that many of these also happen to be some of my favorites!

At one time, this recipe was one of the top three recipes on the blog. I wish it
were still that popular! People are clearly forgetting how wonderful this one is. It
tastes straight-up like a Girl Scout cookie. If you haven’t tried this yet,
you are missing out!
I know, this is a strange one. But it works, I promise. I wouldn’t post the recipe
if it didn’t work! A touch of mint and a splash of lime help conceal the banana, which
helps give this oatmeal its creaminess and sweet flavor.
This one’s for all the coffee lovers out there…myself included! If you’re a fan of
espresso, you could also try looking at the “Coffee” tag in the “What are you looking for?”
section on the right-hand column. Almost all of those recipes use the hidden banana trick!
I have a whole host of lemon-themed recipes that feature a hidden banana
to sweeten and make creamy. This is just one! There’s also Lemon Coconut,
Overnight Lemon Drop, and Lemon Poppy Seed (link below below). These four
recipes together make up a collection of recipes that I’m crazy about during these
warmer spring and summer months. They are unbelievably refreshing!
No round-up of recipes is complete without Almond Joy Oatmeal, it seems. It
fits nearly every category! It’s one of my favorites, but it’s one of yours, too! It has
been featured in the “Popular Porridges” list since its premiere! The best part about this
decadent oatmeal is that it’s freakishly healthy:  no added sugar or “bad” ingredients!
This is “clean eating” at its finest.
Like I said above, the lemon-themed recipes rock my world. Thanks to a hidden
banana, this recipe takes a traditionally sugar-infested muffin or quick bread and transforms
it into a surprisingly healthy breakfast! And if you’re a fan
 of the oatmeal, you can also try them in pancake form.

    Strawberries and Cream Overnight Oatmeal

    I hope the surge of overnight oat recipes is appreciated. I’ve been shaking them up quite frequently this month! I believe they are perfect for this time of year; many mornings in New Jersey are hot and muggy, and steaming oatmeal doesn’t always appeal to me then. In those times, I really crave a refreshing, cool, creamy oatmeal.

    You can really tinker with this recipe. Add chocolate chips, use dried strawberries, slice in a banana, etc. It’s an incredibly basic recipe that you could adapt to your liking. You could even swap in real cream, if your lifestyle allows it. I’ll stick to my almond milk. 🙂

    Restaurant Review: OatMeals

    Greenwich Village is my favorite neighborhood in Manhattan. I love walking along Bleecker and Sullivan and MacDougal and fawning over the rows upon rows of sidewalk cafes, jazz clubs, coffee shops, and artisan food shops. It’s everything I adore about New York, squeezed into one beautiful neighborhood underneath Washington Square Park. Le sigh.
    One day (on one of my many walks to Peanut Butter and Co. on Sullivan Street), I passed by a tiny eatery called “OatMeals.” Honestly, I did not get nearly as excited as you might expect. It sounded too good to be true, you know? How could they have an entire restaurant dedicated to oatmeal? Clearly, it was all a trick.
    Wrong. OatMeals is indeed a restaurant dedicated entirely to the humble and beloved oat; it calls itself “the world’s first oatmeal bar.” When I walked in one Sunday morning (around 10 a.m.), the most warm and wonderful scent of cinnamon and sugar enchanted me. I was smitten.

    The restaurant is teensy tiny, with about half a dozen seats. I saw many customers (often NYU students) taking their oatmeal to go.

    As the Oatmeal Artist, trust me when I say that the menu here is delightful. The average customer visiting frequently expressed how creative it was (although not quite as creative as yours truly, if I do say so myself). One customer asked the server, “Wait, peanut butter and banana oatmeal? Is that good?” I was like, “n00b, please.”

    The menu was split into three sections: sweet, savory, and dessert. The sweet menu contained classic ideas like peanut butter and banana, Indian-spiced, and apple; the savory section featured cool combos like fig and gorgonzola or pumpkin and bacon; the dessert section had rockstar selections like Banana Cream Pie and S’mores Oatmeal.

    I selected the Indian-spiced oatmeal because it was the most unique compared to any of my own recipes. I got to choose from oats cooked in water or milk (both steel-cut). I selected the water-based ones, but it did not disappoint me. It was still flavorful. They added some dried fruits, almonds, cardamom, ginger, brown sugar, and coconut milk.

    Because this place is an “oatmeal bar,” it functions quite like a FroYo bar. In other words, the fruits and nuts and other goodies are all added as toppings. There were several signs up apologizing that they could/would not mix in ingredients, but if you wanted to be able to mix them in yourself, you could get a special bowl that makes it easier to stir the toppings in. Personally, I wasn’t bothered by the concept.

      I really loved this oatmeal, and I love the idea of introducing creative oatmeal ideas to the general public, but I must admit that I probably would not come here again for breakfast. I love my own recipes and can definitely rival their creations. However, I’m eager to return here again to try their savory and dessert recipes. How fun would it be to stop here for dessert after a light meal elsewhere?

      Almond Berry Overnight Oatmeal

      What’s the general consensus on almond extract? Sometimes, I truly love it. It’s dynamite in my Pear and Almond Baked Oatmeal and killer in Almond Joy Oatmeal. Other times, I can’t help but be a little peeved by it. I mean, it doesn’t actually taste like almonds, in my opinion.

      Anyway, the perk of almond extract is that it steals the show, meaning it’s perfect for a “hidden banana” recipe. I make this overnight recipe whenever I’m in the mood for a creamy and fruity porridge, but I’m not in the mood for the taste of bananas. (Lately, I’ve filled this need with my Lemon Drop Oatmeal, but hey, it’s good to have options!)

      Key Lime Pie Overnight Oatmeal

      Question: how necessary are key limes for a key lime pie? Would anyone be offended if I used, say, your average lime? Because that’s what I did, and I’m not apologizing for it.

      Oatmeal-Raisin Cookie Baked Oatmeal

      Okay, let me be upfront: Oatmeal-Raisin Cookies do not rank high on my cookie list. I’d much rather have a Snickerdoodle. Or a Peanut Butter. Or a Chocolate Chip. But not an Oatmeal-Raisin.
