Grilled Pineapple & Dark Chocolate Oatmeal

I have been wanting to grill more fruit ever since I made my Grilled Peach Steel-Cut Oatmeal a couple summers ago. Since I spent several days with my parents in Minnesota, I took full advantage of their grill and made this recipe.

One of my biggest flaws is impatience. These pineapples should have deeper, darker, more beautiful grill marks, but I was like “OH COOL THEY HAVE SOME LINES ON THEM SO THEY ARE OBVIOUSLY DONE.” Either way, the result was delicious. If you are more patient than I am, you can probably make this even better, if that’s possible.

Dear valued, worthy individuals,

Let’s start with the obvious. I empathize with your struggle; I have more body image issues than literally anyone I know. I am here to tell you you are super. I bet you have killer hobbies like winning ping pong leagues or jamming out on a cello. I bet you’ve taken the leap and dyed your hair fluorescent pink or something spunky like that. Coconut Latte Overnight Oatmeal + The Best Espresso in NYC

Coconut Latte Overnight Oatmeal

2014 was the year of the bagel. For 2015, Allison and I set out on a different adventure: visit the best coffee shop in 30 NYC neighborhoods according to Thrillest.

(Of course, we weren’t completely pleased with their choices, as some incredible shops were noticeably absent, and there were THREE shops in Midtown . . . but we attacked the list regardless.)

Allison likes to switch up her order–ranging from iced lattes to cortados to cold brews. I stick to the same order every time: espresso. Call me hardcore, but I love the hit of a well-done espresso. I like being able to truly taste the quality of the shop’s roasting. Some espresso is too bitter and harsh and needs a bit of simple syrup (or honey because I’m “one of those vegans”–go ahead and berate me in the comments; I can handle your lambasting), while others are strong but mellow, perfectly sippable on their own.

Spiced Peach & Dragon Fruit Oatmeal

Dragon fruit! Cross this one off my list of fruits I’ve never tried. I decided recently I wanted to buy one after seeing Dani and Sophie posting pictures of them on Instagram all the time.

I’m unfortunately going through “empty out the fridge!!!” mode again; it seems like I was doing that just a couple weeks ago. (Because I was.) Before, it was because of my move to Brooklyn. Now it’s because of my trip(s) to Minnesota, Seattle, and Vancouver. To those of you who follow me on Instagram, be prepared for excessive photos. Traveling makes me camera happy.

Anyway, I wasn’t sure what to pair the dragon fruit with. I didn’t even know what it tasted like! Not wanting to purchase more produce, I considered the options that were already available in my (UNREASONABLY SMALL) Brooklyn fridge: apples, grapefruit, banana, and peaches.
