Apricot Cardamom Oatmeal
Remember my angst against apricots?? How they are basically just wannabe peaches? Well, I have discovered one perk they have over peaches: they have a more powerful flavor than peaches, making them more enjoyable in oatmeal. Peaches tend to “disappear” when mixed into oatmeal, but apricots are still pretty in-your-face.
As a result, I used apricots for this recipe even though I originally envisioned it with peaches. Of course, you could use either.
Hummingbird Cake Batter Oatmeal
I knew I would love this recipe. Bananas + pineapple + cinnamon + pecans. I love all of those ingredients, and I keep them on hand consistently. So why didn’t I make it earlier?
I always envisioned it as a baked oatmeal recipe. As my regular readers already know, I much prefer stovetop oatmeal. That kept me from making this sooner. Finally, last weekend I decided to do things my way and enjoy this recipe in the form I would prefer. Therefore, I give you cake batter. Cake batter is trendy now anyway, isn’t it? 😉
Roasted Apricot Oatmeal
You know how I don’t like pears because they remind me of a sad, flavorless, soggy apple? That’s kind of how I feel about apricots. 😛 They remind me of a hard, off-tasting peach. And YOU KNOW how much I love my peaches. I often grab apricot-flavored jelly or pancake syrup, thinking, “Ohhhh, this will be like peaches!!” But the whole time I’m eating it, all I can notice is that apricot taste, and how it’s not peaches.
Apricots are like decaf coffee. It’s almost what you want, but it’s mostly a disappointment.
However, when I saw the clamshell of apricots at Trader Joe’s this week (TJ’s loves its clamshells…), I felt inspired. Apricots are so cute! That golden hue with sporadic shades of blush just spoke to me. 🙂
Almond Joy Oatmeal #2
Yep, I already have an Almond Joy Oatmeal. I KNOW. This isn’t an “improved” recipe, either. The other one was already perfect. I just came up with a different way to make it.
(To be honest, I just wanted to eat more chocolate PB2.)
Mango, Pineapple, and Kiwi Oatmeal
Think of this recipe as Tropical Oatmeal Part 2. I love, love, love mango, and it’s always a delight to pair it with other tropical fruits. For convenience, I always keep a bag of frozen pineapple and frozen mango in my freezer. I don’t like most frozen fruits, but those two hold up beautifully in the freezer. (Strawberries, not so much.)
This means that the only part of this recipe that I had to buy specifically for the recipe was the kiwi (or kiwifruit, if you’re Australian ^_^ ). Everything else was already stocked in my kitchen–yippee!
Mango and Chocolate Peanut Butter Oatmeal
It’s Christmas Eve! I debated about whether or not I should post a new recipe today, considering it’s a holiday, but then I thought back to all the days in the past couple of months when I skipped posting a new recipe. That bothered me, so I thought I’d make it up to you with a recipe today.
You might not be able to make it today or tomorrow, but maybe this weekend?
I love how simple this recipe is! Mango (as well as pineapple) work so beautifully in oatmeal because they pack such a flavor punch. The other fruits need extracts and spices to pump them up, but mango can hold its own. It also happens to be one of my favorite fruits!
Banana PB&J Oatmeal
Well, this is awkward. Did you know this is the recipe I make more than any others? The other day, I was gearing up to make it (like always), and then I remembered that I didn’t have any attractive pictures of it. I decided that I would change that. I snapped the pictures, edited them, and searched for the blog post to change them.
The thing is, that post didn’t really exist. For its entire life, Banana PB&J Oatmeal has lived simply on a list of variations of Peanut Butter Oatmeal. How could I have subjected it to such a life?!
Instead of adding the pictures to that post, I decided to call it up on stage and give it the spotlight it deserves. This way, I will be able to link to the recipe every time I talk about it. Yippee!
Banana PB&J Oatmeal
What you'll need:
- 1 cup milk of choice, or water
- 1/2 cup rolled oats (I use Country Choice Organic)
- 1 ripe or overripe banana
- 1/2 tsp vanilla extract
- 1/4 tsp cinnamon
- pinch of salt
- 1-2 tbsp of peanut butter*
- 1 tbsp jam*
How to make it:
- Bring milk (I use an equal mixture of almond milk and water) to a boil, add oats, and reduce heat to medium. (If you’d like to add flax or chia seeds, do so now. I recommend flax.)
- Mash up banana and add to the oatmeal. Stir.
- Once more of the liquid has dissolved, add vanilla extract, a tiny pinch of salt, and cinnamon. Stir.
- When you’re pleased with the consistency of the oatmeal, transfer to a bowl. Swirl or stir in jam (I like to leave in globs or strips of jam instead of stirring it in completely). Top with peanut butter.
- Add another splash of your milk of choice and any other additional toppings (shredded coconut, nuts, etc.).
Just an FYI:
*I often use PB2. *I prefer grape, but any flavor will work.
Chai Coconut Zucchini Oatmeal
Zucchini is great. You can do so much with it!
You know what I love? The combination of coconut and masala chai spices.
Pumpkin Cranberry Thyme Oatmeal
Who has Thanksgiving leftovers?
Not I. 🙂 But if you do, I have a recipe for you to try!
As you know, I’m a sucker for thyme. I basically took my Pumpkin, Apple, & Cranberry Oatmeal and made it ~super classy~ by adding thyme. (This recipe does not include apples, but you could obviously add that if you want.)
Persimmon Coconut Steel-Cut Oatmeal
I HAD MY FIRST PERSIMMON.
Many readers have suggested using persimmon in oatmeal. However, I was completely overwhelmed at the idea. How would I possibly create a recipe using a fruit I had barely even heard of, and had definitely never tried?
One day, Allison brought a persimmon into work. Seeing her eat her first persimmon–the deep look of curiosity on her face as she sliced through and bit into its tangerine-colored flesh–made me want to try one as well.
