Cannoli Baked Oatmeal (with Cashew-Yogurt Cream)
Let me introduce my latest love: cashew-yogurt cream.
Why? Because yogurt has a very distinct taste. It’s excellent if you want yogurt. It’s not excellent if you just want something creamy. And when we’re talking about nondairy yogurt, that can be triple true.
And cashew cream is never what I want it to be. I can never get it creamy enough, or sweet enough, or simply without that ~raw cashew~ aftertaste.
Cue the cashew-yogurt hybrid.
Considering how long I pondered over this recipe, I was stunned at how well this turned out. Of course, it is not the beautiful deep-fried, thin, crispy pastry tube, which is half the appeal of the beloved cannoli. There is no way that baked oatmeal will ever replicate crispy, deep-fried pastry. But it’s irrelevant . . . because this is delicious. (more…)

Tahini Cookie Baked Oatmeal
So tahini has been a learning experience for me. My first taste was one of . . . bewilderment. I was taken aback by its bitterness and wasn’t quite sure what to do with it. I think I made some great recipes with the mocha poached pear and raspberries and chocolate and the apple and honey. But I still wasn’t sure how I felt about tahini in general.
This baked oatmeal gave me a new appreciation for tahini. Inspired by this recipe for tahini cookies, I made a baked oatmeal similar to my Peanut Butter Cookie Baked Oatmeal, but with tahini. Would you believe that I liked it just as much? (more…)
Lemon Baked Oatmeal with Raspberry Filling
As I announced on Wednesday’s guest post, Monica from MyPinkRecipeBook.com and I are currently engaging in a recipe swap as we embark on our individual summer traveling. Make sure you check out those Four-Ingredient Fudgy Oat Bars! They’re no-bake!
For my contribution to our recipe swap, I made this baked oatmeal inspired by layer cakes. The baked oatmeal is lemon-flavored, and it’s brought together in the center by sweet and simple raspberry jam. As always, this recipe is vegan, sweetened by fruit (except for the jam), and uses simple pantry ingredients. (more…)
Snickerdoodle Cookie Baked Oatmeal
Today marks my first official day of summer vacation unemployment. It’s true: I’m no longer teaching. If you’ve been following my blog closely for more than six months, you probably don’t need an explanation. You only have to browse a few posts from the past year to infer why I’m leaving the classroom.
I’d love to say I’m full-time blogging now, but that is not (and probably never will be) the case. Boo. I have my sights set on something else, but I’ll wait until that (maybe) pans out before I discuss it on here. In the meantime, hooray for mental health! (more…)
Triple Chocolate Baked Oatmeal
“Lauren!” you might have gasped. “Triple chocolate? For breakfast? What happened to your nutrition concerns?”
No fear. It sounds much unhealthier than it actually is. In fact, I was so curious, that I entered the ingredients list into a nutritional calculator to see how this stacked up. Considering how I rarely do this, I was stunned at how great the results were. Despite all the chocolate, it gives you nearly 30 grams of fiber (what?!), 18 grams of protein, and a laundry list of vitamins and minerals, all for under 500 calories. Unbelievable.
Of course, the one hit you will take is in the sugar department, but I think that’s the choice you make when you decide to put chocolate chips in your oatmeal. 🙂
Of course, it does contain chocolate chips, so it is a bit indulgent for breakfast, but that’s all relative, right?
If you make this with a banana like I did, this baked oatmeal is naturally sweetened, packed with nutrients, and filling. If you’re not a fan of banana-flavored chocolate, you could sub hearty sweet potatoes, rich avocado, or neutral-flavored zucchini. (more…)

Lemon White Chocolate Lava Baked Oatmeal
When people hear “lava cake,” they immediately picture a brownie-esque dessert that oozes molten fudge. I’m hear to shake things up.
What better way to enjoy a springtime lava cake than with citrus and white chocolate?

I’ve had some more time here and there lately. My grad school courses finished for the semester, and I instantly felt a weight lifted. Suddenly, a had a wealth of hours that could be dedicated to whatever I wanted. At first, they were spent lying in bed watching stand-up comedy. I needed to recuperate. Badly. (more…)

Today, you turn three. You’re a toddler, but better because you don’t need to be potty trained. You don’t need to be watched. I never have to worry about you coloring the walls. That’s pretty cool.
To celebrate the birth of my baby, I went with a recipe that uses all my favorite ingredients: chocolate, coffee, banana (which is optional), almond butter, and happiness. Yes, happiness.*

Strawberry Shortcake Baked Oatmeal
Ahhh yes. This recipe brings me back to my childhood.
I spent so many holiday celebrations enjoying strawberry shortcake at my grandma’s house. To be honest, it wasn’t traditional strawberry shortcake. It used angel food cake instead of actual shortcake, store-bought Cool Whip, and the kind of syrupy strawberries that come in frozen tubs. Don’t get me wrong; I loved it. (more…)
