Peach Cobbler Baked Oatmeal
What’s your all-time favorite dessert?
I think this is one of the hardest questions to answer. I’ve never had a bad dessert before. Pretty much every dessert I eat brings a smile to my face and makes me feel like there’s nothing else I’d rather be eating. However, if I had to choose, I think it would be peach cobbler. Peaches are my favorite fruit, and I think this dessert is one that truly lets the fruit shine.
Lemon Poppy Seed Oatmeal (2 ways)
If you can believe it, I didn’t try lemon poppy seed until I got to college. In my depression/identity crisis, I basically ate my feelings, so I made frequent trips to the on-campus eateries throughout the day. One of the treats I became addicted to was the lemon poppy seed bread. It was dense, chilled, and super sweet.
When I started eating oatmeal the following year, I initially set out to recreate dessert recipes. I tried banana bread, carrot cake, cheesecake, french toast, and chocolate chip. Basically, oatmeal was my attempt to make dieting suck less (before I discovered whole foods).
Blueberry Muffin Baked Oatmeal
I don’t bake my oatmeal very frequently. The time spent staring at the ramekin sunbathing in the oven is too much for me to bare. I prefer the faster, more intimate process of preparing my porridge on the stove top.
However, as I considered what to do with the lovely tub of blueberries I bought on Friday, I decided to replicate the flavors of a blueberry muffin. And, let’s be honest, a baked version would seem much more authentic.
Ahh, blueberry muffins–cue the nostalgia! My family rarely had “special” breakfasts. We stuck to our sugary cold cereals, even on the weekends. However, occasionally I would wake up on a Saturday morning to the smell of cinnamony french toast, scrambled eggs, or (my favorite) my mother’s incredible caramel pull-apart rolls. Yet, one of the “special” breakfasts I looked forward to the most was Betty Crocker blueberry muffins.
