Orange Turmeric Tahini Overnight Oatmeal
I love the combination of tahini with citrus and turmeric. This bright yellow spice is commonly paired with lemon, especially in salad dressings, but I decided to go with orange to achieve a sweeter (and less tangy) final product. After all, zest and tang and pucker is great for a salad dressing, but not so much oatmeal. š
Red Bean Paste and Matcha Overnight Oatmeal Parfait
I bought a huge can of red bean paste, so of course I have multiple red bean paste recipes for you now! If you’re unfamiliar with this ingredient native to Japan, I recommend reading this post for more info.
Unlike the linked recipe above, which blends the red bean paste into the oats, this recipe layers the paste into a parfait with Matcha Yogurt Overnight Zoats. This combination seemed obvious, given how often these two flavors (matcha + red bean paste) are combined in various desserts. (more…)
Tahini Banana Overnight Oatmeal
Isn’t this the best mess you’ve ever seen? Don’t you want to just lick it all up?? When I dumped this recipe into this bowl and saw it was going to overflow, I just kind of shrugged and let it happen. Then I dumped tahini all over it and let that overflow, too. It’s a cascade of tahini delight.
Matcha, Banana, and Coconut Overnight Oatmeal [Guest Post]
Hi friends. My name is Kelsey, if we havenāt met before. I hang out on Instagram as @amindfulvegan,Ā and today Iām here to share with you a recipe that I posted a photo of on four separate occasions before I realized that I probably needed to cool it.
Iām a little bit embarrassed to be sharing this recipe with you. It features two things that Iāve given my mother an incredible amount of grief for liking: green tea and coconut. I spent 22 holiday seasons complaining about the presence of coconut pie (and one saying āno thank you, thatās got eggsā) and I canāt tell you how many times Iāve turned my nose up at the Diet Arizona green tea in my parentsā fridge. (Seriously though, diet green tea is pretty gross.)
You know whatās also gross? Matcha tea. I had never tried it, so I made some before I wrote this recipe up and that stuff is nasty. Itās grassy and bitter, but not in a good way. My recommendations for eating matcha are the same as the ones Lauren made in a recent post. Thatās what a whole banana, and the coconut water, is for–cutting the bitterness. It tones the matcha flavor down to make a pleasant, fresh tasting bowl of oats that I promise isnāt grassy in the slightest. (more…)
Matcha Yogurt and Fudgy Overnight Oats Parfait
While I prefer unsweetened yogurt for my usual snacking (on the rare occasion that I do snack on yogurt), I went for vanilla-flavored yogurt for this recipe. Instead of mixing it up in the morning when the overnight oats layer was ready, I made it at the same time as the overnight oats, thus allowing the matcha flavor to “rest” with the yogurt. I don’t know the science behind it, but I think this improves the matcha flavor.
Matcha-Lime Overnight Oatmeal with Strawberries
I’ve recently realized that matcha tastes better in overnight recipes. I don’t know what it is about sitting in the fridge for a few hours, but it does wonders to the unusual flavor of matcha. It subdues the bitterness and leaves you with a sweet oatmeal with a pleasant matcha flavor.

Lychee Coconut Overnight Oatmeal
Lychees and coconut milk. That’s it. I wanted to add mango so badly, but I knew if I did, I wouldn’t be able to taste the lychee as well. Considering how rare and special it is for me to possessĀ fresh freakin’ lychees, I wasn’t about to cover it up with the (admittedly delicious) flavor of mango. In my opinion, when there’s a fruit you rarely have around, you let that fruit be the goddamn star.
Matcha Yogurt Overnight Zoats
In my never-ending quest to acquire a taste for matcha, I came up with this recipe. By pairing the green powder with some sweet and creamy nondairy yogurt, I managed to replicate the qualities of a matcha tea latte.
My other goal with this recipe was to make a larger portion size. Yes, friends, I have heard you: my overnight recipes tend to be small portions. While I stuck with the 1/4 cup oats (which is one serving when using quick cook steel-cut oats, as I did), I bulked up the recipe using both yogurt and zucchini. In the past, I have never used a full serving of yogurt in an overnight recipe, but this time I did. This gave better flavor and creaminess with the matcha powder, eliminated the need to add additional liquid, and created a more filling portion of overnight oats.

Apricot Pineapple Overnight Oatmeal
Happy Friday! Here’s my final recipe for this random pineapple series.Ā ?Ā Pineapple is shockingly versatile, pleasantly sweet, and wonderfully flavorful, but I’m all pineappled out for a while.
Next obsession, please!
Once again, I used the Kite Hill yogurt (I made this at the same time as I made the Blueberry Pineapple Overnight Oatmeal, to be honest). Unlike the blueberry version, I added a pinch of cinnamon to this recipe, and it worked surprisingly well with the yogurt. I think almond milk yogurt (especially this brand) is a little less tangy than you would generally think of yogurt, so the cinnamon works with it and not against it.
