My Irish Soda Bread Baked Oatmeal is the St. Patrick’s Day-themed recipe that I am most proud of. The other minty creations (like the Shamrock Oatmeal Smoothie) are certainly fun and fit the essence of St. Patrick’s Day, but I love how this baked oatmeal is based on a real Irish dish.
Cheater Funfetti Baked Oatmeal [Product Review: You Fresh Naturals]
Funfetti baked oatmeal with four ingredients + salt?? Yeah, you read that correctly. Four ingredients. Do you know how rare it is to have a baked oatmeal meet the sole criterion for the “5 ingredients or less” tag? Very. Very rare.
This rarity is made possible through the use of a nut butter. I made this recipe with You Fresh Naturals “Birthday Cake” Cashew-Coconut Butter. Because the nut butter is already sweetened and flavored to the max, it lends itself quite easily to a “5 ingredients or less” recipe. It pretty much does all the work.

Brownie Baked Oatmeal – Big Batch!
The benefit of an entire 8×8 pan of Brownie Baked Oatmeal is that it is a definite crowd-pleaser. Who wouldn’t want to eat oatmeal if it tasted like a brownie? If you find yourself needing to make breakfast for a group of friends or your family, this one is a safe bet.

If you’re stuck in a frozen veggie burger stage, Oh She Glows Every Day has several enticing recipes that may convince you to swap your ketchup and frozen fries with some green onion and roasted chickpeas. I can’t wait to try The Best Shredded Kale Salad, Mocha Empower Glo Bars, Roasted Breakfast Hash, Roasted Brussels Sprouts and Coconut “Bacon,” and the Sweet Potato Casserole. And that’s just the beginning!
Five Recipes for Nat’l Cheesecake Day!
Tomorrow is National Cheesecake Day! These days are, of course, completely arbitrary most of the time. (Seriously, why is every day designated to a specific food? It’s the strangest thing we humans have ever come up with. Besides this.)
Still, I can’t help but celebrate them. As soon as I see a holiday coming up, I think, “Hey, I love [insert food here]!” and “Wow, I have a lot of oatmeal recipes like [insert food here]!” Cheesecake is no exception.
